Happy hour, hot babes and humidity

While hanging out here in Florida, I feel like I’ve been quite productive. Yes, the days have consisted of napping, hanging by the pool and beach and spending time with these pups

but I feel like I’ve gotten a lot done besides that.

I found the local YMCA branch in Boca Raton and dropped in the other day to see if I could work out there. I asked my local branch if they knew the rules when visiting Y’s in other cities and they said it’s at the discretion of the specific branch. So when I went to the branch here, I was pleasantly surprised when they told me I could visit 14 times in one month! woot woot! The place may smell like old people and they don’t have the latest machines like my Y in Charlotte but it is definitely useable. I went the past two days and had some decent workouts.

And holy hot babes at the Boca YMCA batman! I don’t know what these men do for a living but they are gorgeous—kind of like a toned down version of Jersey Shore-current and in 30 years. These men are out of control hot so it’s awesome to have some eye candy while working out.

My mom really doesn’t cook that much anymore and my parents are always going out to eat. I am usually fine with dining on someone else’s dime however I do not want to be going out to eat every single meal since that just spells trouble. I told them instead of going out for every meal, let’s do one meal of lunch or dinner at home then go out to eat for the other. This has been working well except for the fact that my parents keep trying to get me drunk.

Don’t worry, they aren’t trying to take advantage of me anything. Or maybe they are trying to get me drunk so they can steal my car and my dog. Add the fact that I am unemployed to that and I’m a country song!

Ok, maybe not so much but Florida has happy hour specials whereas North Carolina doesn’t. So that means that here they do BOGO drinks from 4 to 7pm or whatever hours they do happy hour.  My parents keep pushing me to get a drink when I go out in a very ABC afterschool special kind of way. They don’t tell me that all the cool kids are having drinks but they are a step away from it. So, with that, more Blue Moons that normal have been consumed.

We went in and sat in the bar area however once I sat down and saw the sketchers sitting at the bar, I asked the parentals if we could sit outside. I’m all for people watching however these guys were giving me the heebie jeebies! One of them had an eye patch on. I’ve never met a normal person with an eye patch so there has to be a story there, one guy was taking up three seats at the bar and looked like he brought his own pillow to sleep there and the others looked like they just got their sweet freedom from the Broward County Pen.

I ordered the fish and chips with a side of two Blue Moons.

When the fish and chips came out, I was stoked. Nothing like some fish and chips, especially when you’re near the beach but to put it nicely…..it sucked. I don’t know if the cod was past it’s hey day or what but it didn’t taste fresh and squeezing a few lemons and dousing it in tartar sauce didn’t even help. If I ever go back, I will stick to their conch fritters as I have in the past.

I met up with some of my sorority sisters on Wednesday for lunch at Rocco’s Tacos. Even though I went to college in WV, a few of them moved to FL after college and have been here ever since. I love getting to visit family and friends while I drop by.

Seeing friends and eating Mexican food? Count me in! My parents told me their guacamole was out of this world and they make it tableside for you. When we sat down, I was secretly hoping that we would order it and my friends told me we had to get an order. Success!

I could have ordered a bowl of the guacamole and been happy. Seeing that it was $12, it could have been a meal itself! Instead, I went with the blackened mahi taco platter with rice and salad.

The mahi was fresh and flavorful so I was happy with the 180 degree change of fish from the other night. However, instead of little pieces of mahi, they give you one huge chunk so it’s not as messy as potentially could be. A good time had by all though, it’s crazy to think that I’ve known these girls for over 10 years.

Other random things?

*I am totally down for being a Cicada bug. I think I could sleep for 13 years!

*I have a new love and it goes by the name of Temptations by Jello Strawberry Cheesecake

Yes, it may be gone after only three bites but it’s absolutely delish!

*I’m started to develop an unhealthy habit for Dunkin Donuts.

I went to three different DD’s within a 24 hour time span.This can’t be a good thing for anyone.

*I had Cool Whip for breakfast the other day. But then the adult in me spoke out and told me not to have Cool Whip…..put some fruit under it to get my produce in!

*Ross sells Philosophy for only eight bones!

*I thought Charlotte had bad humidity. I was wrong. I forgot how bad it is here and am finally just starting to dry off after being inside for 20 minutes. Gross.

*And how is Charlotte out of eggplants when Florida is selling them for $.99? Why is the Sunshine State hogging all the eggplants?

*The Coconut Mocha frappuccino is a gift from the gods. I really didn’t need to know that something so delicious existed but oh well, at least I got it half priced.

Do your high school or college friends live in your hometown? A lot of my high school friends still live there but since I went to college 18 hours away, not too many of my college friends?

 The rest of snow day turned out to be a nice, relaxing day-just what I needed! My manager called me around noon to let me know the entire office may be shut down today since we have more snow and freezing rain coming our way so I had to call in today to see if I would have to go in or not.

The verdict?

We are on a delay but supposed to go in at 10AM but that may change.

I have to stay up (since there’s no way I am going back to bed now) and call back at 8AM to see if that still holds true. I am watching the news and they are saying how the Department of Transportation is recommending everyone stay off the road but I guess the bank wants us to risk our lives and go in. Yay.

Blah.

As for yesterday–I was starting to get a little cabin fever around lunch time. I’ve stayed in the house for that long before it’s just when I feel confined that I start to go crazy and what to do something. What better to do than a strength training session to get some blood pumping?

I haven’t used my heart rate monitor in awhile since it was acting funky on me this summer. But since I am started to track my calories again, I put it on and turns out I had a fabulous workout!

I refueled with leftover pad thai afterwards.

I could seriously eat pad thai every single day. And what is it about pad thai that makes it even better leftover?

The official plate cleaner was on hand to assist with little scraps that I didn’t get to.

Target was so kind as to send me this lovely gift card in the mail. I thought the Postal Service would’ve been shut down but they really hold up to their neither rain nor sleet nor snow creedo.

You’re so sweet Target. Even though I am in your demographic of people who should be having kids, the only way one’s popping out of me is if it’s an immaculate conception. If anyone is preggers or is planning on it in the near future -let me know, I’ll send this over to you. The mailman also brought me over the latest issue of Food Network to redeem themselves for the baby registry gift card

Then,  I baked. As many of you know, I am not a baker but felt the urge to bake with it being cold and snowy out. It just seemed right. I have a surplus of coconut on hand and went to Allrecipes.com to look up recipes. I love that they have a page that allows you to put in items you want or don’t want in your recipe and generates recipes for you! I came upon this recipe for Chewy Coconut Cookies and figured it seemed quick and easy and got to baking!

I halved the measurements since I only wanted a few cookies so I made six then froze the rest (thanks Mo for the tip!). I am sure they were supposed to look prettier but let’s be honest, I really don’t care what a cookie looks like–I only care about how they taste. These were soft, chewy and full of coconut. The only thing that would have made it better was if it was dipped in chocolate. Hooray for cookie success!

For dinner, I wanted to get my eggplant on.

When I get an eggplant, I usually make lasagne, mix in with pasta, use as a topping on pizza or eggplant parmesan but I wanted to try something different. I remembered a recipe for stuffed eggplant one of my former co-workers told me about some time ago. I didn’t write it down but made my own little creation of stuffed eggplant with mushrooms, onions, pepper and quinoa.

I gutted out the eggplant then chopped the inner into pieces

Then chopped 1/4 onion, one cup mushrooms and orange pepper, sprinkled Spike seasoning on the veggies then cooked with extra virgin olive oil until soft (had 1/2 cup quinoa cooking at the same time)

Once both were done, I mixed together then scooped into the eggplant pieces.

 I thought it looked a little lonely so I sprinkled  shredded mozzarella on top

Then placed in a casserole dish coated with extra virgin olive oil and bake for 30 minutes at 400 degrees

Chowed that sucker down! A nice veggie alternative for another round of meatless Monday.

Yesterday was absolutely nasty. But I will put down that this was the first weekend in a loooooong time that I haven’t been hungover so that’s an accomplishment for me! Wow, writing that down it sounds kinda sad but whatev….non hungover weekends don’t happen too often during football season for me.



I woke up and made scrambled eggs with peppers and avocado with a sandwich thin topped with cranberry reservesthen had a killer kettlebell session.

After that, I was still feeling ambitious and decided to walk over to Festival in The Park. I forgot that they were calling for a 50% of rain that day and thought I could get there in time since it’s only a 15 minute walk from my place but overestimated myself. About ¾ of the way, it started drizzling so I headed back and when I was somewhat close to home, it started raining cats and dogs. Which, how amusing would it be if it actually did start raining cats and dogs one day? I wouldn’t want those cute babies to get hurt but for visual sake it would be amusing. On another note, I am still waiting for it to rain men.

Damn you Weather Girls for it most definitely does not rain men in Charlotte.

So, like I was saying. Raining cats and dogs but not literally. I had to hang out on the stoop of a vacant condo for it settle down a bit and even then, it was still coming down consistently.

 And I absolutely hate when I am wearing my flips and my feet get wet. I was sliding all over the place and I think it’s just a gross feeling in general. Kind of how I imagine it would be to get a tongue foot bath. Nasty.

And then it rained and rained and rained some more. I had lunch and  watched movies and napped the rest of the day.

 It was perfect. Little Lincoln was comfy as well and was happy to partake in cuddle time.

I had an eggplant to use so I made roasted eggplant, red pepper and artichoke penne for dinner. I am not a big fan of the red sauce so I tossed with butter, grated parmesan cheese, red pepper flakes and oregano.

Yummy. Nothing beats butter and grates parm I tell you.

I brought back an oldie but goodie for breakfast but with a new twist—pumpkin oats. I’ve seen bloggers adding pumpkin to their oats and never tried it. Um, why did I wait so long? I cooked on the stovetop with almond milk and added a few dashes of apple pie spice then topped with brown sugar when done.

Hollar.

And apparently there’s been a shortage of pumpkin this past year but USA TODAY says it’s over. Go figure why I couldn’t find canned pumpkin the other night.

There was yet another bake sale going on this week but for American Heart Association instead of Breast Cancer like the other week. Goodies this time were a bit cheaper—only $1 for anything on the table. I went with a decorative rice krispie heart.

 Again, my rationale that since my money is going to charity, calories don’t count (not a good rationale to have by the way)

I didn’t make anything for lunch last night but brought a simple lunch of a sliced chicken breast sandwich with buffalo cheddar cheese and tomato on a sandwich thin with a side of apples and cucumber. Look at me being all healthy.

Then my co-worker bought over his leftover French fries from Bojangles. I can’t turn down French fries and especially can’t turn down Bojangles fries. They had a super salty Cajun seasoning on them that in turn, makes me eat them only once or twice a year. I contemplated throwing them away but there are starving kids out there so that would be wasteful, yes?

Also, it’s quarter end week which means they bring in ridiculous amounts of sugar ridden snacks in hopes that hopping us up on sugar and caffeine won’t leave us too bitter about being here.

I got to leave work a little early since I had a Doctors appointment. And not a fun doctor like the OB GYN or dentist—my laser tattoo removal session.

My tattoo is almost completely faded so this should be my last session to get rid of the color (tip—green is the hardest color to remove so if you are thinking about a tattoo with green in it —make sure you really want it)

My next session will hopefully be them scraping it down since the scar has risen a bit from all the sessions I’ve had. It’s a painless procedure for the most part but they give me seven to eight shots of Novocain to numb the area so that is the worst part. After that, I just have to wait for the area to numb up completely and then they get to work. The actual laser part only takes a few minutes and then they bandage me up and I am good to go. The longer in between sessions the better they say because of something with the pigments and the treatments being more effective.

I love their retro waiting room.

I got home pretty early despite the slow drivers on the road because people here can’t drive in the rain and hung out with Lincoln for awhile. For dinner, I made the biggest slice of pizza ever.

Weekend Recap

 On Saturday, I was up and at em at 5A. WTF is that all about? Let’s just say I was not a happy camper about the situation but couldn’t go back to bed so I laced up my shoes and got to walking. Ok, well not quite…..it still a bit dark so I watched some infomercials then walking I went. It was so peaceful out and I only saw a couple other people out running and walking, I absolutely love desert early mornings.

Not bad for almost an hour of walking. I stopped at Starbucks on the way back and got a grande coffee and then made a breakfast smoothie with blueberries, half a packet of Spiru-Tein Banana Protein Powder, Almond Milk and Xanthan Gum

 As many of you know, I am not a nut butter fan at all. I will eat it every now and then (especially when covered in chocolate) and have read many rave reviews of Peanut Butter & Co. Bloom had it on special for $3 a jar this week and I bought a jar to see if I would like it.

Success! I haven’t had oats since it was cooler outside and decided to bring it back on Sunday morning. I sliced a banana then sprinkled the slices with cinnamon, laid rolled oats over that and then topped with a dollop of the Cinnamon Raisin Swirl. Yummy. I think if I bought the White Chocolate Peanut Butter they had I would be done (thankfully they were sold out when I bought this jar)

 After seeing this recipe on Tamara’s site, I was in the mood to bake. I still have a supply of POM Wonderful on my hands and haven’t baked in a while so I bought the few ingredients I didn’t have on hand and got to baking! I don’t have a cake pan but have muffin pans on hand so I made cupcakes with this recipe and bought Fun-Fetti cake mix instead of vanilla cake mix.

 These were great but I was expecting more pomegranate flavor so I would use more next time.

After seeing the cooking demonstration on pesto at Carrabba’s on Saturday, I decided to make my own.

 

Lincoln was even eating good. I had to either use or throw away the last turkey burger I gave the other night and knew he would appreciate it

I made home-made pizza with Trader Joe’s Whole Wheat Pizza Dough topped with mushrooms, olives and fresh basil and scallions.

I met up with some girlfriends for lunch at Fox and Hound It was Sunday at noon and  hot outside. Why not have a drink? I tried the Fruit Loopy-Three Olives Grape and Cherry vodka, Triple Sec, hurricane and sour mix with a splash of Sprite.

Can I just drink this forever? Ok, maybe not forever because I would go into sugar shock but I could seriously down this in a few sips since it was so good!

I kept flip-flopping between wings, a burger, sliders or a sandwich. I love bar food so much but everything else looked good. I finally had to just close the menu and decide on something because if I didn’t I would have never made a decision. I hate that. I wish more restaur ants would have Choose Two options because sometimes I want to try something new but then what if it disappoints?

Anywho, I got the Black Forest Sandwich—grilled turkey, applewood bacon, Monterrey jack cheese, lettuce, tomatoes and honey mustard on a Bavarian pretzel roll.

I stopped at Earth Fare after that to look around and ended up getting a Magenta Magic Smoothie

It was great but this alone reminded me that I can make my own smoothies at home and save $4 or $5 a pop. Damn you smoothie cravings!

I went to Ross and got some great deals—two dresses and a Nike Fit Dry shirt (for only $5—holla!!)

I went on a two-mile walk and then did some yoga poses when I got back home. I even ran a bit on my walk and it didn’t hurt too bad and my knee isn’t hurting any more from when I don’t run so I may start incorporate more running into my program again. Well, when it gets cooler at least, I am so not a hot weather runner.

I really had no clue what to make for dinner. I have lunch for the next couple of days courtesy of Carrabba’s but then I remember my beautiful white eggplant I bought the other day

Eggplant Parmesan it was!

I cut the eggplant and dipped in eggwash then in seasoned breadcrumbs and baked for 17 mins at 400 degrees. I flipped half way through and sprinkled with marinara sauce, mozzarella and gorgonzola cheese a few minutes before it was finished then placed on noodles. I wasn’t sure how it would turn out since I wasn’t frying it but it was delicious and the texture was similar to meat.

Oh, Lincoln got pretty! I almost forgot about his day of beauty.

The eats today were as planned

First, a banana with almond milk and Kashi Go Lean with a cup of coffee

And lunch was a BIG salad with baby romaine, cucumbers, red onion, sweet pepper, carrots, gorgonzola, a turkey burger and Kraft Light Three Cheese Ranch with lemon juice.

Now that I look and think about it, there was a lot going on in the salad. A party in my mouth if you will!

It was a cooler (well cooler being low 90’s as opposed to high 90’s) and  overcast day in Charlotte. The hippies usually get spooked by the rain and don’t show but I looked out the window and there they were!

 A white eggplant! I am so excited to cook with this and see how the taste compares against a regular eggplant. Anyone try this before?

I am loving how it looks like Mother Nature’s idea of a bowling pin.

And then I got home. I was planning on having a quiet night at home with my Netflix. But I was having a craving for Mexican food in a serious way and posted something on facebook just saying that. I really wasnt looking to o get Mexican food but one of my friends texted me and said she would go. Screw dinner at home! I haven’t had full on Mexican food since I went to San Antonio’s and got sick and have been wanting to delve into it again

We went to Monterrey in Matthews and got in right away. When I got out of the car, the smell of good food hit me full on but I couldn’t decide what it was since there was an Outback, Chinese place and Monterrey all in the same strip. Add a pizza parlor into the mix and I would be in aroma heaven!

Our waiter was…..umm….interesting? I am trying to be nice. Who am I kidding??! He was senor mumbles!! He kept coming up to our table and I would smile and try to answer whatever he was saying then he would walk away and I would say to my friend “I don’t like him”. It was like he was struggling to speak the espanol but was having issues with him.   Where I would normally say he was Creeps McGee, we shall call him Creepers Rodriguez just to be festive!  Not sure if he was drunk or on something but at one he asked me something and I just handed over my stuff and smiled, I hope he was asking for my plate. Hmm, guess we’ll never know.

I got the chicken and beef flautas with guacamole salad–I found it interesting that they called it that as opposed to just guacamole, sour cream and lettuce. But now that I think about it, I guess guacamole salad makes sense. It felt so good to have a full belly full of Mexican yummy goodness again. I wish I was a person who didn’t like the Mexican food so much but I can seriously be down for it anytime of day no matter how full I am.

I went to a small resort about an hour north of Puerto Vallarta called Costa Azul two years ago for a week. They had an awesome deal throughout September with $100 a night including room, food, beer and activities. I had enough frequent flier miles to get a free first class flight roundtrip and was an enjoyable, relaxing week.

Who doesn’t love a swim up bar where they also bring you food? Immersed in water while drinking Corona, eating nachos and getting tan? I think I found out what my heaven would consist of.

 The best part was the all-inclusive part on the food so we could order whatever we wanted when we felt like it. If it was 3P and you were hungry, order up some ceviche or nachos. The coconut shrimp was always the first thing to go at dinner so you had to go early but when I got back home, I was still wanting Mexican food. It is something I will never tire of.

Did anyone watch Swingtown while it was on (or if it still is?)

 I got the first disc of the first season from Netflix today and am a bit intrigued. A show about swingers in the 70’s intrigues me enough  since it is one of my favorite decade (I only lived 18 days in the 70’s but like to think I rollerskated my fat baby body into the 80’s) and anything with Grant Show will reel me in as well-rawr!

 Even if he does have a handlebar moustache on the show 🙂

Got some interesting stuff going on tomorrow (which you all will hear about soon!) so I got to rest up. Hope everyone is enjoying their Friday!

Inspire, Perspire?

 Yesterday was a day of meh eats.  Nothing really screamed at me and I just was not feeling my meals. I shall do pictures only because meh is the only word to describe.

Ok so I shall speak about dinner because it was BFD—always a bomb ass meal in my book. I made egg white and egg scramble with cooked mushrooms and onions topped with avocado and ketchup with a side of spray buttered bread

Today started off better at least. I made a green monster that was actually green instead of brown with almond milk, 1 handful baby spinach and Spiru-Tein Strawberry Protein Powder—yum!

I felt inspired to eat something pineapple after reading Mo’s post about pineapples last night. I bought a Pineapple Chobani Greek Yogurt the other week but have been nervous to try it out. For breakfast today I mixed the pineapple greek yogurt with Kashi Crunch!, mixed berries and unsweetened coconut.

My thought on this?

Absolutely disgusting. It was too artificially sweet for me and just did not taste good. Sigh, I hate when I have bad Chobani experiences. I love the Chobani so much but when I try a flavor I don’t like (the only other one I didn’t like was the Chobani Champions Chocolate) it’s just a huge let down. Don’t worry Chobani, I won’t quit you. On another note, don’t judge by my desk, I work better in an organized chaos kind of atmosphere.

We had a temp on our team start today and she sat with me all day. She has a background in finance and is talkative so that was a nice change for me. I pretty much showed her our entire job function and what we do throughout the day and it was enjoyable. I love training people and showing them our process, how our line of business works, etc. For lunch, I had chicken stir fry with snap peas, mushrooms and zucchini

Dinner starred a new ingredient: Eggplant. The hippies have gorgeous eggplants and I always pass them by but never buy them. I decided to take a chance and buy one and make a grilled eggplant sandwich. I sliced the eggplant and grilled with extra virgin olive oil, paprika, garlic and pepper.

 While dinner was cooking, I had an appetizer of Trader Joe’s Tomato & Basil Hummus with sliced cucumbers

Verdict? I was not impressed. The flavor didn’t pop at all and I didn’t taste a hint of basil at all. Thumbs down, TJ, thumbs down. Two of my favorite things letting me down in one day is just no bueno in my world.

I had the eggplant on a kaiser roll with tomato slices and baby spinach with a sprinkle of balsamic vinegar and parmesan cheese along with roasted red potatoes

I’ve been a lazy ass as of late. I will admit that right now. I come home from work, do nothing but cook and hang out then suffer from insomnia some nights. This doesn’t make me a happy camper and definitely does not leave me wanting to work out. After I had dinner, I was sitting on the couch watching Family Guy and catching up on some blogs. I was contemplating working out and again, made the excuse that I will just do it tomorrow (as I did yesterday, the night before that and so on) and then I read this post on Kelly’s blog. That post and what she said motivated me to get off my butt and do some strength training.

Dumbbell

*Concentration Curls (15 lbs. 1 sets, 13 reps each side)

*Tricep Kickback (10 lbs 1 set, 13 reps each side)

It was only a 25 minute workout but I was happy I did something and had a nice calorie burn and average heart rate of 148 and max of 182

I had an apple post workout

Right when I was about to chomp away, I saw little Lincoln curled up on the ottoman

I hate how depressed he looks at times then to make it even worse, he will pick his head up, look at me then drop his head down with a big sigh. Yeah, we went for a nice 20 minute walk after that to lift his spirits. And wtf is up with dog owners with little dogs that are Lincolns size not wanting to be social? Lincoln will pull me over there (he is eight lbs and I am not a skinny girl) and then the owners will pull their dogs away from Lincoln and wont let them play. He just wants to sniff some butt, throw my dog a bone!
