Say hola to my little friend

For as crappy as Tuesdays usually are, today wasn’t bad at all.

I had an Earnest Eats Cran Lemon Zest bar and Dannon Greek honey yogurt for breakfast.

 I was a bit reluctant to try the Earnest bar since it’s vegan and I may have a misconception about vegan products being bland or tasteless. When I took it out of the wrapped, the small of cran and yes, zest overcame me. I bit into it and was in shock—it was scrumptious! It was moist but not too moist and bland would be the last word to describe it. My main gripe was that it was a small bar so it was gone within a few bites and a higher fat content that I would have liked. 

As for the greek yogurt, honey greek yogurt is my obsession as of late. How did I never try this flavor before? So freakin yummy.

I had the final leftovers from Sunday night. Instead of adding pasta to the stir fry like yesterday, I heated the leftovers then laid upon a pile of plain cole slaw mix to make a quick, Asian salad!

I’m going to start using cole slaw mix as the base more. I will buy a bag and go through only half of it not knowing what to do with the other half and this is a perfect way to incorporate it.

I had a consultation for my tattoo removal in the afternoon so I got to leave work earl. Plus, it was another gorgeous spring day so getting out of the depressing gray cube  is always a nice thing. I talked to the doctor and it turns out I don’t need any more sessions of laser tattoo removal however they want to wait a few months before doing any procedures to remove the scarring.

So you can get an idea of how much color has been removed, here is a pic of me five years ago

You can barely see it anymore however there is a bit of it that has been raised from scarring and I would like to get it back to an even level. I hate to say this and will never admit it to her face but I wish I would’ve listened to my mother. Of course green is the hardest color to remove and this has cost me a good $1,000 more than getting the tattoo when I was 16. And I got my tattoo by a guy named Mr. Happy, how effin creepy is that?? I hate spending that much money because I am a frugal gal but it was a mistake I made when I was young and dumb. I felt like I couldn’t wear a lot of things I wanted to especially in the work place so getting it removed was the option that seemed best.

They were also concerned about my right arm.

I hate when I can’t get my self tanner all blended it. My left arm looks normal while the right arm looks like I have a funky skin condition going on. I assured them I was fine and it was all Hawaiian Tropics part. I was so self-conscious about it at work and whenever someone would come into my cube, I would hide my right hand.

Then dinner happened. I had no clue what I was going to make except that it was going to be chicken since I had a piece defrosting in the fridge. So I went to old faithful-stuffed chicken. Instead of making a hummus or spinach stuffed chicken like I have in the past, I put a south of the border spin on it and stuffed it with refried black beans, garlic and jalapeno spices.

I pounded the chicken (hehe) and then spread the refried beans on it along with the spices

Then I realized I was out of toothpicks, which means I will have to make a trip to Chipotle soon. I remembered that I bought some interesting toothpicks during my trip to NYC this winter.

I love ranch. Even ranch flavored toothpicks but sadly these didn’t taste too ranchlike so this was perfect to hold the chicken together.

I heated two tbsp of oil then placed the chicken in the pan to cook

I let cook while turning every two or three minutes so it could cook thoroughly, it took about 20 minutes

I turned the heat down and added salsa and cheese to the chicken and let cook for another five minutes

I had mini nachos on the side topped with jalapenos, green onions and cheese for a perfect Mexican meal done in less than 30 mins!

So, how was it? ABSOLUTELY AMAZING! Yes, I realize that’s all caps but that’s how good it was. My only regret is that I didn’t make another piece of chicken for leftovers but this will definitely be another addition to the stuffed chicken collection.

I had an admirer sitting watching me while I ate.  Even Lincoln could tell it was some good grub.

Afterwards, I made myself go to the gym. I was supposed to go last night but didn’t for no reason whatsoever other than laziness. I did 35 minutes on the Precor Crossramp on the interval workout with a resistance ranging from 8 to 10

All in all a good workout, I was just happy I got off my butt and did something. I was such a sweaty mess afterwards, all I want was a hot shower and then a cold smoothie.

(not so)Frugal Friday

So there is no Frugal Friday post this week.

Why you ask?

Because I’m on vacation and didn’t have a set Frugal Friday post ready to go so this is going to be a normal post with a hint of frugality.

On Thursday, both my friend and her boyfriend had to work so I was on my own. I found my way to Squirrel Hill and stopped at Crazy Mocha Coffee Company after hearing good things about it. I am all for the java and any chance I can get to check out a non-Starbucks establishment is a good one. I ordered a skim latte then enjoyed their free Wi Fi, I could have stayed for hours but the parking gods weren’t so kind to me with my lack of coins for parking.

I stopped at Sheetz for lunch. I haven’t been to Sheetz in a year but for gas station food its the bomb.

 I was sad to see that they now offer too much of a selection—breakfast sandwiches, wraps, Mexican food, subs, salads, pizza, hot dogs, etc. Can we say overload? I would love if they would’ve kept their menu on the small side because I stood at the computer kiosk for a good three or four minutes deciding what to get. It was that weird time of 10A right in between breakfast and lunch but didn’t feel right about getting a sub so I ordered an egg, cheese and bacon breakfast melt on a pretzel roll.

When I got back to the apartment, I did nothing the rest of the day. Seriously. By the time noon rolled around, I was thinking “It’s only noon? Why is this day going by so slow??” So I proceeded to watch re-runs of 30 Rock, nap and have a late lunch of a loaded sandwich and chips.

We stayed in for dinner so I offered to make stuffed chicken with feta, spinach and onions while my friend took care of the sides. I love cooking but always feel out-of-place in someone else’s kitchen. I don’t know where anything is, if they have certain items and just feel awkward. But I soon got to cooking.

I chopped up some baby spinach and onions and let cook on the stovetop with oil and black pepper.

Once they were cooked, I added to a bowl of feta cheese

While this was cooking, we enjoyed some rye beer from North Country Brewing Company

I beat down the chicken breast the best I could then spread the mixture on one half of the chicken then folded over

There were no toothpicks around and I didn’t have any stolen ones from Chipotle so I folded the chicken over and rubbed with extra virgin olive oil, salt and pepper and hoped for the best.

I baked these at 400 degrees for 30 minutes and broiled for five minutes afterwards instead of cooking on the stovetop in oil so everything wouldn’t spill out.

It smelled scrumptious while cooking and Lincoln was waiting on the sofa and licking his lips. Poor pup thought he was actually going to get some stuffed chicken.

It turned out perfectly this way, I will definitely be sticking to the baking method in the future!

We walked around downtown Pittsburgh today. I’ve been downtown before but never walked around that much so it was exciting to see everything up close.

We found Prantl’s Bakery, which my friend had heard of but never visited. I demanded that we stop in and get a quick treat

This place was bumping for a Friday morning!

I got the German chocolate cake torte, it was the perfect, small treat….devoured in two bites! I was trying to be a lady because I could’ve downed it in one bite but wanted to savor it.

We went to Macy’s because they have a Lush store in there. I’ve only been to Lush in San Francisco and love their products but unfortunately, it’s a bit pricey for my taste. I found a couple of cheap goodies though!

Solid perfume “Lust” and *gasp* Mint Julips Lip Scrub! I’ve never heard of lip scrub before but the Lush employee told me you lick your lips, put it on, then lick it off. Edible and moisturizing? Sign me up!

We tried on some ugly hats while warming up since it was so chilly outside

Soon after, we met up with one of my friends from WVU for coffee. I love seeing friends who I haven’t seen in years!

And then the highlight of my Friday—Primanti Brothers!!!

I can’t imagine going to Pittsburgh and NOT having Primanti’s since it’s a Pittsburgh establishment that has been there forever. They serve monster sandwiches and their claim to fame is that they put cole slaw and fries on every sandwich.

Awwww yeah!

 Um, dear Jesus, I’m sorry. I know it’s Friday during Lent and I gave up french fries but c’mon it’s Primanti’s! I still love you though,

Out of this world goodness! I ate up every last bite, I think Jesus would want it that way.

We were rolled out of Primanti’s then strolled over to Penzeys Spices because, you know, I love anything food related.

This place was adorable and prices were reasonable for it being a speciality store. I picked up two jars of spices and can’t wait to use them!

We walked around the Strip district for a little after that but decided to make our way home since it was getting late in the afternoon, we didn’t want to battle traffic and our bellies were at max capacity.

 I love my dog. I think you all know that from all the stories about him, the pictures and his own page on here. The boy just makes me happy….especially when I come home from work. He is so damn happy to see me every time no matter what and he never lets me down with lack of enthusiasm. I walk through the door and he starts to hyperventilating while jumping around and attacking me with his halitosis puppy kisses (don’t worry, working on getting him into a normal dental regime, we do things as a team here!) Then he sniffs me to see if I’ve been out with another doggie and once he is done with his assessment, he can breathe again.

When his breathing is back to normal, we finally go outside and he sashays down the street, hopping around like a deer and one would think he is the happiest dog ever. I live off of a major street so when I get home from work, people are stuck in traffic and just look downright depressed. Then they look at Lincoln hopping around without a care in the world and smile and some people even roll down their window to tell me how cute he is (Tell me something I don’t know people)

Seriously, how could you not love this face?

I always tell Lincoln that everyone loves him and he is so cute but it never goes to his head. I like to believe that his enthusiasm and general happiness make others feel good and smile. When we get home, he gets a treat if he goes potty and then we play. His favorite game is the dead game. I drop down on the bed face down and he hops over me like I’m a hurdle. It’s more fun that you would imagine. Then he burrows under my body trying to get to my face so he can give me kisses and will dig into my hair so I look like I have JBF hair. Fun. I’d like to buy everyone a Linx so he could bring them joy every day.

But then I saw this on GMA yesterday and was sucked in watching it (which made me a little late for work), sleeping with your pet can be bad for your health?

Mama, I’m tired. No way I’m leaving this bed!

He is my little portable heater and my cuddle bug, no way that’s stopping. I don’t care if it does make me sick, there have been numerous studies that pets are good for your health. Then to make it worse I perusing the news online and saw  a SC woman was charged with killing “ devil dog” because the dog chewed her Bible. Check out the article, she doesn’t look deranged or anything.

Regardless I was in a super happy mood yesterday morning and actually excited to go to work—what’s up with that? I was smiling from ear to ear and had no clue why. Maybe it was laying the best of my worst dates out on the table or delirium from lack of sleep but this girl was in a great mood! My co-workers must have thought I got some the night before but sadly, not true. I was just in a good mood and didn’t even have a sinking feeling in my stomach like I always do on the way to work. Unfortunately, that changed towards the end of the day in a meeting. I won’t go into details but I basically got called a moron and a spazz all in one. The banking world doesn’t like spazz’s (spazzi?) Again, tell me something I don’t know regarding the spazz part.

I’m glad you all enjoyed the post on Monday on the bad dates, 30 day challenge and all that. It’s nice to know that some of you can relate with me on the bad dates. The sad thing is that’s just some of them! I think I’ve pushed all the other bad dates into a corner of my mind I don’t wish to revisit. But maybe one of these days…..

So let’s go over the eats now…….

For breakfast, I mixed it up with nut butter. I don’t like nut butters and don’t go ga-ga for them like many other bloggers do. I just don’t get the appeal of it unless it’s covered in chocolate of course. I am trying to like it since it’s packed with protein and you can vary up a lot of different things with it but still not a fan. I used half a packet of Justin’s Honey Almond Butter that’s been sitting in my snack stash drawer for awhile, spread on an English muffin and topped with bananas. A simple breakfast, can’t go wrong there.

Lunch was leftovers of my last bowl of chili. Always delicious and this one had my mouth on fire! Love it!

When I got home from work, I was spent. But I kept on truckin and made the dinner I planned on making–Greek stuffed chicken with sweet potatoes.

I pounded one chicken breast until thin (very good release after a frustrating day)

I mixed hummus, kalamata olives and red onions in a separate bowl

I spread one wedge of Laughing Cow on the chicken then spread the hummus mix on it

Then folded over and toothpicked that sucker up. Lots of cussing was involved as always since the chicken was not too keen on cooperating with me

I massaged with extra virgin olive oil and black pepper then let that bad boy cook!

I don’t know if it was because the stuffing wasn’t solid enough but the chicken didn’t hold too well together but still turned out tasty.

It was good but not as good as the stuffed chicken I made a couple weeks ago.

Afterwards, I was feeling meh. I was full, cuddling with Lincoln and the last thing on my mind was the gym. It was cold and raining outside and I just wasn’t feeling it. But I made the mistake of posting on Twitter, I was going to the gym and I had some ladies call me out on it, so yeah, to the gym I went.

I had a decent workout, I did 25 minutes on the Precor AMT with a resistance ranging from 7-13 then did 10 minutes of rowing. I had a calorie burn of 400 and felt great afterwards! All I needed was a little push to get me there and even though I didn’t go balls to the walls, I had a nice workout.

And now for Day 2 of the 30 Day Challenge-Where you’d like to be in 10 years

10 years? Wow, I have absolutely no clue. All I know is I will be 41 (ay effin chihuahua) I would like to have traveled to Europe at that point. I want to have my student loans paid off and have a nice retirement nest egg by then (which I am well on my way to the way my 401K is growing!) I don’t even know where I will be in six months so 10 years is hard to say!

While my mandoline gently weeps

Another snow day. Well, ice day. It is absolutely horrible outside and everything is iced over. Initially, we had to go in at 10AM but on the first voicemail, it said to call back at 8A to see if 10A still rang true. When I called back at 8A, I learned our entire office was closed so another day at home.

What’s a girl to do? Clean? Organize? Workout?

No, I choose breakfast, naps and Dr. Phil

Breakfast was rolled oats with canned pumpkin, cinnamon and dried cranberries

The rest of the morning is self-explanatory–naps and Dr. Phil. I am getting completely sucked into Dr. Phil and this needs to stop asap…..probably tomorrow since it looks like I will go back to work then.

I needed to get out of the house so I walked over to Dilworth Coffee and Harris Teeter. It’s only a few blocks away but it felt like it took me over to get there. I had to watch each step and was slipping every other step. Last thing I need on my plate is to fall on the ice and hurt myself so I strolled on over and got myself a cup of coffee. Surprised they were open but also surprised that I was the only chick in the place. It was sausage fest 2011—woo hoo! I sat around there for awhile, sipped my coffee and read. Very relaxing and nice to me around people as opposed to a needy fur-baby (got nothing but love for you Lincoln but momma needs her space sometimes!)

Tuesdays at Harris Teeter is $2.99 any half sub day, I got turkey on a whole wheat wrap with mustard, lettuce, tomato, banana peppers and black olives. Fresh and delicious!

I decided to break out my mandolin that I got for Christmas. My mom sent my gifts to me this wknd so it’s been sitting around in the box and felt it was time to pop its cherry.

I sliced a potato into thin rounds, brushed extra virgin olive oil on them and then tossed with Spike seasoning.

The main dish was baked chicken stuffed with a Laughing Cow cheese wedge, spinach and mushrooms.

I cooked the frozen spinach and mushrooms on the stovetop with garlic and black pepper until soft.

I took one chicken breast, wrapped in plastic wrap then pounded until flat

Spread the laughing cow cheese  wedge over the chicken

topped with the spinach/mushroom mix

And of course, some extra mozzarella cheese to add to the gooey cheese factor

Fold the chicken breast over and secured with toothpicks

Why buy toothpicks when I can get them for free? Thanks Chipotle!

 Proceed to toothpick the chicken until it looks whole again. Disclaimer: you may curse at the chicken when it’s being difficult with you when toothpicking-such as “I effin hate you, you effin chicken” don’t worry, it can’t hear you and won’t get talk back at you!

When closed up, sprinkle some seasonings on both sides of the chicken. I chose to keep it simple and went with black pepper and garlic.

Cook on the stove top with extra virgin olive until cooked thoroughly

When I’ve made stuffed chicken in the past, I’ve baked in the oven so my only issue with this method was getting the side and ends of the chicken. I wasn’t sure what to do so I would hold it for a minute and let cook!

When the chicken was almost done, I took the potatoes out of the oven

I should have sliced them thicker and used foil (but was out of it b/c I didn’t pick it up in one of the three supermarket visits in the past four days) but they were edible. I also had corn heating up in the micro then topped with pepper and spray butter when done.

The meal?

Gorgy, melted, ooey gooey chicken goodness!

But it didn’t stay pretty for too long

I’ve had some good dinners in the past few weeks but this has been the best-hands down! It was a perfectly balanced meal with meat, carbs and veggies and took less than 30 minutes to make (yeah Rachael Ray, I’m looking at you!) The chicken was succulent and tasty and only took a few seasonings to make it so. The stuffing reminded me of spinach and artichoke dip so I think I will make spinach and artichoke stuffed chicken next time around. When I was lucky, I would get a bite of the stuffed chicken with a potato and all was in the world for a couple of seconds. Way easy to make, I recommend making this tasty chicken!

After seeing Laury’s post, Something in the way she moves, I’ve had “Something” in my head all day. Which is perfectly alright with me since I love the Beatles and to me, their music is timeless.

It’s sad that only two of the Beatles are still alive, John and George were such wonderful musicians. If any of you like classic rock, I suggest Wonderful Tonight by Patti Boyd. Married to both George Harrison, then Eric Clapton, she was the inspiration for The Beatles “Something” and Claptons “Beautiful Tonight. If you don’t know the story of Boyd, here’s the short story of it but I definitely recommend “Wonderful Tonight”
