First things first-I wanted to say thank you to all of you with your encouraging words about running and great acorn squash ideas–that made my Monday a little more tolerable!

Monday already? March already? I am not diggin how fast time is flying. I haven’t really been wanting hot coffee lately….even though it is 30 something degrees when I wake up. I made an iced coffee spinach smoothie to take on the bus with me in my cool new Vortex cup I got this wknd

I was expecting my inbox at work to be out of control from being out on Friday but it wasn’t too bad at all. Our department did want us to take the Keirsey Temperment report to see what type of personality we are. Ummm I am the fun kind-duh! I’ve always wanted to do one of these but never had the chance and  found that I am an Idealist Champion —–Idealists are spiritual, intuitive people who can enjoy spending a great deal of time and energy working toward a better understanding of who they are. The ultimate hope of this group is to attain true wisdom. For the most part, Idealists are enthusiastic individuals who can find joy meaningful relationships as well as the world around them. Breakfast was TJ’s Apricot Mango Greek Yogurt with frozen berries and flax mixed in.


I sported my new green sweater I got this wknd and got mad compliments. That just put me in a good mood and way to start off the month. The people like what they see, what can I say? 🙂

I ran into my Starbucks buddy this morning (I didn’t go this morning because I am trying to get off the Bucks) and was telling him  about my running this wknd and made a joke about how I was running like Forrest Gump.

He looked at me as if I were speaking Japanese and turns out he has never seen it. This then followed by me freaking out and asking him how he has never seen it. And I may have pushed him ala Elaine from Seinfeld but I just don’t think I have ever met anyone who hasn’t seen the movie. Given, I have nevr seen Star Wars or Breaveheart but I thought everyone has seen Forrest Gump.

By 11A, I was about to break into my lunch (that’s how I get knowing I brought leftover Mexican food for lunch). I tried to hold off as long as I could but that turned out to be 1145A.Seriously, if you had this waiting for you, would you be able to resist it’s siren call?

Didn’t think so. Oh Mexican food, I heart you but you are no es bueno for my booty. I am talking about the greasy, cheesy kind I have a few times a year. I love it. The best is when I got a bite and had some refried beans, rice and the chicken enchilada all together in one forkful. It’s like when you get the nucleus of nachos and have a sampler in your mouth!
This afternoon was fairly uneventful. I didn’t have too much going on so I surfed the internet, did some work and took a nice 20 min walk around the uptown area in an attempt to wake me up.

Dinner was a clean meal and delicious. I bought a piece of tilapia last wk at Bi-Lo, which is one of the supermarkets here. Everyone says that Harris Teeter has the best seafood out of all the supermarkets but I haven’t had a good experience with that store and love Bi-Lo. Even if people think they are ghetto fabulous.

Anywho, I thawed the tilapia and rubbed some evoo and lemon garlic on it and baked for about 15 minutes. While that was going, I cooked some Barilla whole wheat thin spaghetti and grilled onions, mushrooms, baby spinach and shallots in evoo and old bay seasoning.

On another note, I absolutely love having my kitchen scale. I can’t believe how much I used to think “a serving” was. Now I measure it out in grams, make the serving size and split in two for two meals.

Then I took some shredded carrots and parsley, dashed white vinegar on it, threw in some salt and pepper on and let sit for 10 minutes. A great refreshing treat!

So simply yet I’ve never tried or even thought to combine these two. I love parsley and when I buy it, try to incorporate it into as many dishes as possible. I feel so much better than normal when I eat clean, feel like I am getting so much more bang for my buck and feel accomplished since I didn’t have to go to a box and make a meal out of ingredients I can’t even pronounce

And the question for the night-will he choose sugar….or spice??

That’s right Jakey-Poo, you’re going to need a lot of vino if you’re planning on making Vienna your wife!

T-Minus 30 minutes to the Bachelor—can’t wait!

Year of the Tiger (well, not Woods)

Happy Chinese New Year everyone! Year of the Tiger-rawrr!!! Maybe if Tiger Woods wasn’t such a dirty dog, this could’ve been a good year for him. I guess we’ll never know….

Today has been a great Valentine’s Day!

I started the day off with french toast topped with almond butter, bananas and lite syrup

I watched the news afterwards then decided to go for a run/walk. I ended up doing 2.5 miles for 35 minutes. I love my Polar heart rate monitor but wished it measured distance because sometimes I go off track.

Post Workout snack was Honey Graham Z Bar (first time trying it!)

Yum! I love Clif bars but it’s nice to have a smaller and lighter alternative. I will have to try the other flavors now.

Lunch was fried catfish bites. I was in the mood for something crunchy and didn’t feel like taking a chance  baking it. I’ve never baked breaded catfish before but  maybe I’ll try it some day.

I had a spinach smoothie with chocolate whey protein powder, silk soy milk , two spoonfuls of Chobani Champions -Chocolate (which I thought was nasty so I am trying not to throw it out and make some use out of it).

 Then I watched Love Actually and prepped dinner in the crockpot…….Crock Pot Kung Pao Cashew Chicken that I saw on Danica’s site.

 

Holy yum-this was great and healthy! I served over a bed of sprouts (along with mushrooms, broccoli and onion mixed in)  and topped with 1 oz.cashews.

Dessert was vanilla crème Peeps.  I had to celebrate V-Day somehow and what better way than pure sugar?

  I’m looking forward to tomorrow-Federal holiday-yay! And V-Day candy is on clearance 🙂

Wake up little sushi

I started my day off again with a Spinach Coffee Smoothie (Soy Milk, Coffee, Spinach, Chocolate Whey) but added alfalfa sprouts this time from the suggestion of a friend.

He is not a good friend because it tasted to alfalfa-ey (don’t think that’s a word but I’m making it into one) and was nastier than a two dolla hooker. With the spinach at least it doesn’t have a strong taste but the alfalfa was too much for me.

I made a breakfast sandwich with Thomas Whole Wheat Bagel Thin, Quick Eggs with parsley mixed in and laughing cow garlic and herb wedge

I do miss Starbucks Red Holiday cups but am kinda diggin the heart cups they have in lieu of Valentines Day.

And I have decided that since no man will be buying me anything( although Lincoln would if he was, ya know, human) I will be buying myself a cookie cake. I will probably only eat half of it but that’s what I want for Valentine’s Day ?

I met up with a friend for lunch and we went to Fiji Sushi Bar & Lounge for all you can eat sushi! The deal is $10 which is not bad at all. We were a little confused at first b.c we didn’t see a sushi bar with sushi readily available on it. Soon we saw servers coming around with trays o sushi and knew I was in heaven!

I was so happy to have some good sushi for a reasonable price. And  be able to enjoy a nice lunch out as opposed to eating at my desk. No one on my team ever goes to lunch so when I have a friend who wants to go out for lunch, I get super excited! And taking an hour off from work is such a great way to break up the day

I also found this adorable shower curtain online and would totally buy it if I didn’t have a garden tub with glass door


I went to the library to wake up after Sushi Fest 2010 and got this book


 
I can’t wait to look through and get some new recipes!

I saw this and chuckled

I went for coffee after and got a refill of my Starbucks. There are so many people in there mid day, I am curious as to what they do for a living? But then again, they could be thinking that about me! LOL

I wasn’t ravished come dinner time so made a mini portion of quesadillas (filled with chicken, kidney beans, onion, cheese and jalapeno) with sour cream and salsa mixed together 

On the side, I tried Kettle Brand Jalapeno PotatoChips, which is a new product of theirs

I think they forgot to put the flavoring on them 😦 I even poured myself a big glass of water to go with it and they were disappointing. I think bbq flavor may have more kick which sucks because I love hot stuff like jalapenos. this was my first bad experience with that brand and that made me sad.

I was kinda meh about it and zoned during some of it. I am going to watch it online either tonight or tomorrow night and see if I feel differently.

Xmas in February

Started the day with a spinach-coffee smoothie! I never had the two together but holy yum! I usually have a hot coffee in the morning but have been bored with mine lately (not sure if it is the brand or just redundancy of it?)

Since I woke up a little late and knew I wouldn’t be enjoying breakfast for a while so I downed a Thomas Whole Wheat Bagel Thin with Trader Joe’s Pumpkin Butter and Almond Butter

Continuing on my cold drink kick, I decided to switch it up and get an iced coffee at Starbucks with two pumps sugar-free vanilla


My barista was starting to make my drink when I walked in so it was nice to throw him off track 🙂 lol I love the Starbucks baristas in my building though, they are wonderful, peppy and know what a girl wants.

I had a Bosc Pear between meals and absolutely love that I can eat it like a huge turkey leg!

Lunch was a piece of the Chicken Tamale Casserole I made the other night with a dollop of sour cream. It was great and could definitely see myself making it again. I was surprised that the cornbread taste didn’t take over, it was very mild. I was also surprised it wasn’t too spicy. I added jalapenos instead of green chiles but still mild, in my opinion.

And a disappointing snack in the afternoon: Chobani Champions Chocolate flavor

Big Thumbs DOWN! I am still sad I was so displeased with it, especially after trying the HoneyNaner this wknd. I found the Chocolate  very sour and chalky. Unfortunately, they are packaging the Chocolate and HoneyNaner together so I probably wouldn’t buy this flavor combo again. Sad, since once I day I want my own Chobani factory in my backyard…..

I feel like it is Christmas in February for me. I have been cleaning my place and found some goodies but also bought a couple new things.

The Magic Bullet

I got this for my birthday back in December and haven’t even used it yet. And I don’t know why, which makes me sad. I went on a cruise in December then went to Florida for Christmas so I was moving around a lot but still, that was two months ago. I need to get on the magic bullet train!
I had a snack of Marzetti Lite Ranch Dip and Baby Carrots



Dinner was Spaghetti Squash with sauce consisting of stewed tomatoes, morningstar veggie, onion and mushrooms

I went for a short/run walk after dinner because Lost is on tonight and I feel like vegging out and watching. It was rainy and cold out (which I love) so it was only for 30 mins and about 1.5 miles. I would know if I had my heart rate monitor but sigh, still waiting on that bad boy.

I came home and refueled with what else—-a spinach smoothie(Can ya tell I like these?) with baby spinach, Chocolate Whey Protein, Soy Milk and TJ’s Plain Greek Yogurt

And the Yuengling Glass is just too cute for words

Alright. I have never put Greek Yogurt in a smoothie and I don’t know why I never tried it. This was like a malt and so delicious! I wonder what the Greek Yogurt with fruit in it would taste like? We will just have to see…..
