A Pom Kind Of Day

The friendly people at POM Wonderful contacted me a couple of weeks ago in regards to trying their pomegranate juice. I was so excited because I love all things pomegranate but have only tried the actual juice a couple of times before (I prefer to get my pomegranate from pom flavored beer thank you very much! ūüôā )

A little about POM Wonderful from their site

  • contain no added sugars, preservatives or colors
  • are a good source of potassium
  • are gluten-free
  • are flash pasteurized to retain both flavor and nutrients
  • are certified kosher
  • Plus they have different flavors of Pom juice that I never knew about-such as mango, kiwi, blueberry, cherry and nectarine with a myriad of different products like tea, bars, iced coffee (say whaaaaa??!!?!), shots, pills and more.

    I got their package on Friday and have been brainstorming what I could make with it. Yes, I could make a cocktail or green monster but I wanted to try cooking with it.

    With that, I decided to make Feta, Walnut and Parsley stuffed pork chops with a creamy pomegranate sauce and a side salad with pomegranate balsamic dressing

    I finally bit the bullet and bought some xanthan gum. I’ve been wanting to get these to use in my green monsters since they turn out soupy a lot of the time and to use in sauced instead of corn starch. Most recipes only call for one to two tablespoons of cornstarch so this bag is going to last me awhile!

    For the stuffing, I threw in 1/3 cup walnuts, 3 tbsp of feta and a few tbsp of parsley in the food processor and pulsed on low for about 10 seconds.

    I butterflied two pork chips and stuffed with the filling then secured with toothpicks. I rubbed a little extra virgin olive oil and black pepper on them and then cooked at 350 for 25-30 minutes

    For the creamy sauce, I threw¬† 1/4 cup half and half with 3/4 of a POM Wonderful bottle on the stovetop with one tbsp xanthan gum and let cook on a low setting for 10 minutes until thick and bubbly. I know it kinda looks like the River of Slime from Ghostbusters 2 but don’t fear, it was tasty!

    Side salad with carrots, tomato, extra stuffing mix, quinoa topped with homemade  pomegranate balsamic vinegar. I liked the dressing a lot and never knew how easy it was to make your own dressing!

    ¬†This was such a fabulous, filling meal. It was nice to experiment with the POM Wonderful for a different flavor for my meals and I cannot wait to try it with more stuff—thanks POM Wonderful for sending me and giving me the opportunity to try your juice, I am loving it!

    I also found the mythical Chobani Pomegrante Greek Yogurt I’ve been seeing all over the blogs lately. I’ve never seen this flavor in the store before so when I saw it this past week, I practically screamed and started doing my happy dance right in the middle of Harris Teeter!

    And I got to use the free Chobani coupons I won over at Nutrition Nut on The Run so free Chobani is always nice. It was terrific! I am a bit skeptical with new flavors ever since trying¬†Chobani’s Pineapple flavor¬†but this did not disappoint. Thus being said, I may just turn into a pomegranate by end of day.

    Microwave popcorn-yum! I love the stuff but it is not¬†filling at all. Oh, I didn’t mention I had this at work did I? Yeah. Another so busy week that I went in for five hours today just to catch up on my emails so I could get some peace of mind. I was annoyed by having to go in to do that but I kept repeating to myself “time and a half-pay, time and a half-pay, time and a half-pay” to make it bearable.

    Oh and I know how I was singing praises to Jackie Warner and her workout dvd yesterday but today? I curse the day she was born. My everything hurts and each time I step up or sit down today, I whimper a bit. It’s sad. No pain no gain right??

    I made a yummy plate of eggs topped with avocado and tabasco for breakfast.

    I got a Magic Bullet for my birthday this past December and finally opened the box today to try it out with a green monster with blueberries, almond milk, baby spinach, Spiru-Tein Blueberries & Cream protein powder (half a packet), one Splenda and 1/2 tbsp of xanthan gum

    Holy crap-why did I wait so long to use this? I absolutely loved how easy it was to use, quick it was and way more quiet than my blender. And xanthan gum, I just love it. It came out like sludge (which is a good thing!) this was more like an ice cream treat than a smoothie.

    Things to work on for this month

    *Drink less beer. I was out of control the month of July. Ok, not alcoholic out of control but drinking way more beer than I normally do due to the ridiculously hot weather out.

    *Have a more consistent workout schedule each week. With moving and going on vacation twice in July, I didn’t get much workout time in. Again, add the nasty weather and it was a recipe for laziness on my part.

    *Cook more at home, eat out less. Now that my kitchen is all squared away and I am somewhat getting used to cooking in a smaller kitchen, I need to get back into the swing of things.

    All in all, today was a great day with work, new recipes, etc. Hope everyones August is off to an equally fabulous start!

    I’m back!

    If you’re expecting a post with healthy alternatives to road and vacation food, workouts, etc., keep clicking. This weekend was one of indulgence, laziness and stretch capri’s ūüôā I left for Indiana on Saturday and got back this afternoon and am completely wiped. The drive turned out to be 10 hours each way instead of 9 hours but on the flip side, Lincoln was a good boy the whole ¬†way.¬†

    I am currently going through a love/hate thing with Google Maps. I just got the application on my phone and love that you¬†can see where you are,¬†map things out (duh), etc. I use my phone for texting, calling and Internet but use the applications once in a blue moon. But no more–I am completely addicted to the Google Maps app. However at the¬†same time,¬†I really want to write a rude letter to Google Maps. I put directions into Google Maps on Thursday before I left and put in “give me fastest route” and that one was taking me through VA, WV, OH into IN. Perfect. I’ve driven into WV thousands of time and am comfortable with¬†it. My past experience with Ohio driving though hasn’t been so great. Anyways, that’s another story for another time. What happened is, Google Maps brough me into Ohio on a non interstate road that was also a local road and had a business route. It didn’t connect me to a major interstate or tell me where to pick up the closest interstate highway so I drove on this road the entire way across Ohio. I thought I was going to murder someone. I saw I could pick up I-70 in Richmond. Indiana and was so excited-yay civilization!

    I didn’t take too many pictures of food this wknd but will give the highlights of the wknd.

     

    Anytime I go to Indianapolis, I have to go to Cafe Patachou. We went to Petite Chou this time in Broad Ripple (my fave area of Indianapolis). If you’re ever in Indianapolis, please check this place out. They have locations throughout the city along with one in the airport. Their breakfast and brunch is amazing (although I’ve always wanted to try their dinner but never get there for it. But maybe Ashley has tried it?and their coffee is to die for.

    I’ve been to Costco a few times in my life and always see the picture of the berry sundae at the food stand but am always too full from a hot dog and soda. Sunday was the day to finally try it

    Coming back today, we got stuck in a bit of traffic right near the Kentucky/Tennessee border. Lincoln woke up and  hopped in my lap to drive for a  bit while it was bumper to bumper.

    ¬†I had Wendy’s for lunch. I haven’t gotten one of their real burgers in forever. If I do go there, I get the Jr Bacon Cheeseburger but I got the single with cheese and it was absolutely amazing.

    Mamma Jamma in front of me? That’s what I like to think at least.

    Who knew Tennessee was so pretty?

    I even had some time tonight to get to the supermarket, buy some veggies and make a couple of salads for work this wk. I need to pick up some extra veggies when the hippies are out tomorrow because I ran into a co-worker when I was there. I think it’s so weird to see co-workers out in the real world and realize they too have a life. That threw me off a little bit and was kinda out of sorts after that. Anyone else like that?

    Despite going to the supermarket, I was really craving some pad thai and gave¬†Thai Thai another chance. I tried¬†Thai Thai for the first time¬†a few weeks ago and didn’t have the best experience but I am one of those people who gives people….and places a second chance. Last time¬† when I ordered from there, I got it spicy so this time I tried a spice level of 1with tofu¬†(which killed me since I like it hot) and it still wasn’t good.

    The best I can explain is that the peanut sauce tastes chalky and void of the regular flavor I’d had when eating the pad thai. But still, since I am frugal, will be eating the leftover this wk.

    ¬†And with that, I’m off. I am about to drop from the drive today and getting back into my normal groove of things. Thanks everyone who emailed to check if I was alive ūüôā Hope everyone’s weeks are off to a great start and as always-staying cooler. People who say global warming doesn’t exist can officially go suck it.

    PS-Anyone see this video Pennsylvania Guys? It’s a take off of California Gurls, which I officially cannot stand after hearing it 538 times this weekend.

    Movin’ On Up

    So exhausted! Thanks all for your warm wishes on a good move. I am¬†settled in but still moving some stuff around and¬†figuring out where things are so I think¬†by tomorrow¬†I should be all set.¬†I have¬†today and¬†Tuesday off¬†as well so that will be some extra time for me to clean, unpack, go¬†find a pool to play in and such ūüôā¬†On Saturday, I woke up at 630A¬†to start moving stuff and really didn’t get a chance to sit down the whole day but I did fit in an hour nap in the late afternoon once my friends who helped me left and the Time Warner guy stopped by. Speaking of which, I’ve had basic cable for the past year but now I have TBS, Bravo, VH-1, Food Network, Comedy Central and many others. Thanks Time Warner dude? I didn’t look cute at all and was in a crabby mood but apparently that’s what the men like. I have so many shows to catch up on, it’s not even funny. I need to just sit down and enjoy it because I keep thinking one day they are going to discover this snafu and then it will go bye-bye.

    ¬†I met up with some girlfriends at Nikko’s, an¬†awesome sushi restaurant in South End area of Charlotte. I absolutely love this place—the atmosphere is more clubby than restaurant with modern¬†decor, lighting and fist pumping music. I¬†only frequent Nikko’s every now and then since it can be pricey (or suggest it when I have a date¬† and am confident the guy will be paying, I’m a brat I know :)) but when I¬†do go, I enjoy it immensely. ¬†I had the Tuna Crunchy Roll and Rainbow Roll along with a Sake Bomb and Sapporo Light

    After that, we headed Uptown to go to the Dandelion Market but once we were a block away we heard it was dead so we ventured into The Attic. I pass by that bar every day since it’s right near work but never been there…..and now I know why. It was full of 23 and 24 yr olds who were just so happy to be out–which¬†is cool, really it¬†is. I was loving their enthusiasm mostly because I was like that—six¬†or seven years ago. I have to be in a “Let’s go out and get wasted” kind of mood to enjoy scenes like that and truth be told, that’s just not me anymore. I would rather go out, be able to hear people I’m with, not have some youngin dry hump me multiple times (not making that up), have a few drinks and go home at a decent hour. Plus, with the fact I had been up so early doing manual labor and such, I was ready to go home.

    Yesterday morning, I walked over to Dilworth Coffee and got a large cup and stopped at Harris Teeter for some random items

    I feasted on a blueberry bagel with light cream cheese and sliced banana pieces

    Let’s not even talk about the mess I had to conquer…..oi vey. I don’t have a lot of storage so that was the main issue. I did make a lot of it work though and only have a little bit to get to still but I ended up going through my stuff once again and putting some away to donate to the Salvation Army.

    While I was getting through that monstrosity, Lincoln was pulling out his ninja moves and exploring his new pad

    Lunch was a Mardi Gras Salad from Harris Teeter. The name intrigued me, I think it would be cute if they added beads for decoration but nothing nipple related please.

    Oh, have I mentioned that I don’t have gas until Monday so I can’t make anything hot?

    I went back to my old place¬†in the¬†afternoon and got the most of everything out of there but I keep forgetting about all of my cutting boards, pans and sheets under the oven so I need to make a mental note to pick those up next time. Besides that, I just need to clean the place out which I’m dreading.

    I’ve been craving Thai and ordered takeout from¬†Thai Thai because I’ve heard good things about it. One of these days I’m going to try someone other than Pad Thai¬†but today was not that day. I got Chicken Pad Thai with a Medium Spicy sauce.

    The portion size was ridiculous—I think it could be three servings which isn’t bad at all for $9 but I wasn’t too impressed. It had a hint of spice but the spice overtook the peanut flavor so it was good but¬†not the taste I was expecting. Maybe that’s my sign to try something different next time?

    Lincoln and I went for a walk last night and when we made it to Freedom Park (the halfway point), it started downpouring. 20 minutes later with littler coverage, we were still there but found a commercial building near and waited it out. It was still sprinkling by the time we started walking again and we were completely drenched. Poor Lincoln, he looked like a drowned rat ūüė¶

    Today has been pretty boring—got¬†some laundry done, unpacked some more, gas turned on so I can start cooking again and found the Trader Joe’s in my area. I was so out of sorts when I was there but the TJ’s employees were super nice….unlike the ones at the other location. Don’t get me wrong, they weren’t rude but they would never chat me up when I checked out like they do with everyone else. Seeing that I think I’m pretty effin¬†personable, it kinda annoyed me. I talked to some nice ones at my location and chatted with a cutie¬†for a few minutes and he asked if I moved here from Caliornia…..maybe b/c I talk like a valley girl? Who knows. Anyways, I love my new one and got the lowdown on when their not so busy hours are. I stopped at Target and Harris Teeter afterwards and yet again, it started downpouring. I am really over this rain but it’s perfect whether to sit at home in and catch up with these ladies

    I have so much to catch up on. I was never really a Real Housewives fan b/c the other cities have been pretty boring with no drama but NJ I totally love.

    Lunch was a turkey, cheese, spinach and spicy hummus wrap with Grandma Gibble’s Popcorn¬†

    I feel like I should go do something or clean but screw it, I’m sitting here on my butt watching trash tv! Hope everyone is having a great start to the wk!

    Today has been the longest day-oi! Let’s start at the beginning, I woke up at 4A¬†due to nerves. I’ve had so much on my mind with NYC, moving and other random stuff that I have been a tad on edge lately and my sleep issues are starting to come back. But on the flip side (get in flip…..can’t sleep…..tossing and turning? Ha!) none of my sleep issues are coming from stress at work so I guess that’s good. I was tossing and turning all night and decided to get out of bed at 4A¬†(yeah, you read that right) and be somewhat productive. It was definitely a dance party kind of morning when I¬†put on¬†some old school music, make a pot of strong coffee and dance the morning away.¬† I popped in a rap¬†cd from college and started jamming, dancing and drinking coffee (not simultaneously, I am not looking to get burned). “Bling¬†Bling” by BG came on and I kept dancing and after the 8th time it played, I finally took notice. I like Bling¬†Bling¬†but even I have a limit. Yes, I know your pinky ring is worth about 50 and that you have Lorinsers¬†on Yokahama tires. Oh BG, why do you do me like you do?

    By the time I got to work, I was a tad delirious from the combination of lack of sleep, major coffee consumption and dancing. I had a bowl of Chobani Greek Yogurt Honey style with Kashi Go Lean Crunch!

    This did nothing for me. Plus, I didn’t have any fruit on me so that was a major bummer. I did get another free coffee at Just Fresh but did I really need it? You tell me, it’s 11P, I woke up at 4A, have had no nap and am still going strong. Suck on that, Energizer Bunny.

    It was a pretty quiet morning even by quarter end standards. Quarter end is absolute madness in my world however there were few issues today which was great. I was also trying to get through the day without letting people I work with know I would be off until next Wednesday. When they find out I am leaving, they try to throw everything on me last-minute and I am just not a fan of that.

    It was another day of free food! We had Olive Garden for lunch, I normally despise Olive Garden (since I think it’s fake Italian food) but hell, I will eat¬†Fazoli’s if it was free. Sooooooo¬†many things wrong with the concept of fast food Italian but that is for another time. Let’s talk food, I had a slice of the lasagne, two bread sticks and a side salad.

    This was half a slice! When I was getting a slice from the pan, I could barely lift it up because it was so heavy! And I like to think I have some pretty strong forearms but something is wrong with that picture. I cut it half and it was still huge! This right here is why I make my own lasagne at home.

    I may talk smack on Olive Garden but I will never talk smack on their salad and breadsticks.

    Work ended soon enough, I set up my voicemail and email out of office for the next week and I was outta there! I was sketchy and snuck out with only saying bye to people because I knew if I ran into others, something would happen and I would have to stay later which I was not all about. Plus, I had to get home to take the doggies out and then meet up for a Charlotte  Blogger Meetup!

    Lauren from Clean Eats in The Dirty South¬†¬† sent out an email this past wknd¬†about meeting up for dinner this wk and got a pretty good response from other bloggers in the area. I didn’t even know there were that many!¬† I love the name of her blog. Oddly enough, it makes me think of Ludacris which then makes me think of chicken and waffles. Oh the irony! Regardless, it makes me smile.

    We met up at Big Daddy’s Burger Bar¬†for some great food and we sat outside which was nice b/c this was the first day in two weeks it hasn’t been in the 90’s!!

    I had the Cantina 1511 Burger (Cantina 1511 is a fabulous, local Mexican restaurant)—a¬†black bean burger topped with green chiles, avocado, Monterrey and Cheddar¬†Cheese with a Chipotle Ranch. You can also substitute a salad as your side for only $2 more and you can create a side salad—how¬†awesome is that? I got a side salad with baby spinach, red peppers, feta, strawberries, jalapenos¬†and walnuts with Balsamic vinaigrette

    ¬†Two words—GOOD¬†LORD!¬† This was one fantastic meal! The black bean burger was great and not dry at all plus the green chile and avocado added a rich, punch to the flavor. The salad was great as well, as I said before, I love that you can create your own salad and I love the combination of feta, strawberries and balsamic with the spicy jalapenos. When I move next week, I will be by their other location and you can bet your bottom dollar I will be going there again! And yes, I just threw out some Annie tunes right there!! It was great to meet other bloggers in the area and I had a fabulous time—thanks again Lauren for organizing this!

    Looks like North Carolina¬†tied the spot for 10th fattest state with Mississippi still coming in first for the sixth year in a row—where does your state rank?

    Yay for vacation officially starting! I am doing absolutely nothing but running around tomorrow doing some last-minute shopping, returning some things, pool time, doing my nails and brows (instead of going to get them done, it will save me $25 which is about two drinks in NY haha) and sadly, taking Lincoln to get boarded.

    I promised myself I am not going to be the girl who cries when she drops him off for his first time being boarded but don’t know if I can keep that promise. They have a webcam which I can check but I am just nervous. He has always stayed with someone when I go out-of-town and just get sad when I think of him alone in a crate. Sigh.

    That being said, I’m borderline delirious right now from my lack of sleep. I was doing well but am going to crash in a few minutes after I take the pups out.

    ¬†Hi all—hope your weekend is going great! I feel like it’s flown by and I still have a ton of stuff to do! Yesterday instead of coffee, I made a green purple pink brown monster. Seriously, I have no clue what color this really is but thought it looked cool. I made it with 8 oz Vita Coco Water, Chobani 0% Plain Greek Yogurt, Banana, Blueberries, Mango and Baby Spinach.

    ¬†I’ve been loving this in the AM if you can’t tell. I love my coffee but just haven’t been craving it as much first thing in the morning—not¬†sure if it’s bcause¬†of the weather or when I make my own iced coffee at home, it is not good. I try to add more grounds and less water to make it strong but no go. Plus, I have a bunch of frozen fruit in the freezer I need to go get rid of, which brings us to breakfast.

    Three Nature’s Path Flax Waffles topped with peaches and blueberries. It looked so pretty, I almost didn’t eat it. Almost. Who am I kidding, I devoured it but the thought did cross my mind for a nano-second.

    ¬†I didnt¬†have any plans until afternoon time so I went back to bed after breakfast. Um, I never do that…edit, I never do that when I’m not hungover. I don’t know if it’s the heat, humidity or what but I have just been taking every minute I can to rest or take a nap lately. My sleep is lacking! I woke up, showered and made a quick wrap lunch with ham, tomato and hummus. Speaking of hummus, click here for a new way to use your hummus. Well new to me, I never thought of the concept but will definitely be trying it soon!

     I met up with my friend Kristi for a free brewery tour at the Olde Mecklenberg Brewery, a fairly new brewery located here in Charlotte. It has been open for about 15 months but their business seems to be on the up and up and had good beer! We like that. I had a few pints of the Mecklenberger, a full bodied yet light beer.

    Full bodied indeed but very refreshing. Originally, I was going to try their darker ale as well but stayed with this one because I am devoted like that.

    The World Cup was on and it was a packed house! We really weren’t paying attention to the game but clapped when we hear everyone clapping, boo’ed when other people did, etc. Really dug the atmosphere though, it was just a big open room full of people appreciating good beer. I am down with that.

    ¬†The wrap didn’t hold me over for too long and for some reason I was craving Subway. I hate Subway. The smell of their bread just lingers and I find it just a downright, nasty smell. Plus back in Florida, we had a lot of gas stations that had Subways within them and I can still smell how disgusting they smelled.¬†The¬†Five Dollar Footlong¬†and Jared commercials¬†don’t help either, those two alone make me scream! Personally, I would rather go to Quizno’s¬†to get a sub b/c they are awesome in my book and they have one my most favorite commercials….EVER!!

    But I guess the beer was really good and potent because I was on a mission to find a Subway! I keep seeing commercials for the Orchard Chicken Salad and was ready to give it a go.

    ¬†It was ok. I was expecting more flavor with the fruit it had in it but it was a decent sub. Arby’s had a Chicken Salad Sandwich with apples and grapes a few years back and that was the best I had yet but this was ok. I can say it was fresh¬†and the cucumbers were fantastic!

    Then I was on my way to pick up Monet, my friends dog that I’m dogsitting for the week.

     These dogs have such a ruff life.

    Dinner was a Greek Salad with Grilled Chicken from Reid’s that I purchased the other day 40% off. I topped with T Marzetti’s Light Ancho¬†Chipotle¬†Ranch. This had waaaaaaay more black olives than last time but I am actually starting to enjoy black olives so bring it.

    Despite it being humid and nasty out, I woke up at 7A¬†today and went for a two mile walk. I felt good to get out, do something and move today rather than complaining that it’s hot. Sunday mornings are so peaceful, I love how quiet it is, not too many people out and just a hopeful feeling for a new day!

    I stopped at the Bucks and came home to make breakfast since I only had a banana before my walk. I made an egg white, ham, cheese and avocado sandwich on an Arnold Whole Wheat Sandwich Thin

    So I know it doesn’t look like much but this was one of the best breakfast sandwiches I’ve made! I loved the ham and cheese in between the egg white omelet and I used Monterrey Jack, which added a nice kick of flavor. And avocado never wrongs me or lets me down. I was pleased with the sandwich thin as well, in the past I’ve only had bagel thins and always had that pesky hole in the middle but this right here was fabulous and filling!

    Ok, off to start a bunch of things that need to get done today–starting with laying out by the pool ūüôā I’m not going to have a pool at my new place so I need to appreciate it while I can.

    PS–Seriously? These dogs are knocked out like they did manual labor.

    I just wasn’t feeling the coffee this morning but craving something cold with this crazy, hot weather and opted for a Mango Green Monster. Look at how green it was! This was one of the best ever! I made with baby spinach, Chobani Plain Greek Yogurt, Frozen Mango’s, flax-seed and one packet of Splenda

    I had a diet coke on the bus so got some caffeine in my system but this green monster? Yum.

    We had a Just Fresh open today and they were offering free coffee for a month to the first 100 customers. I completely forgot about this but one of my coworkers who doesn‚Äôt drink coffee went and got a breakfast pastry and had the coupon. He asked if I wanted it and I responded with ‚ÄúIs the pope Catholic?‚ÄĚ Free coffee for a month?!? That‚Äôs like a dream come true! I fear that I will become like Kramer on Seinfeld when he gets free coffee for a lifetime and starts getting all jittery, has the shakes, etc.

    Beautiful. I will be there every day instead of Starbucks now. I have no loyalty whatsoever when it comes to free stuff.

    My coffee buddy came in late and I told him about the free coffee deal but by at that point they stopped giving out the free cards. I lent him mine to go get some free coffee since I am nice like that. He came back to my desk sans card. I asked him where it was and he just shrugged his shoulders. I had a knife at my desk for cutting my fruit (I‚Äôm all about the love) and pulled it out and was like ‚ÄúI don‚Äôt mess around when it comes to free or coffee, give it up!‚ÄĚ and then I continued to recite lines from the Princess Bride such as ‚ÄúMy name is Inigo Montoya, you killed my father, prepare to die!‚ÄĚ accent and all and he looked at me like I was from outer space.

    ‚ÄúHello? Princess Bride?‚ÄĚ and again, he shrugged his shoulders and said ‚ÄúNever seen it‚ÄĚ What? How has someone never seen that movie? It‚Äôs a cult classic and personally, I‚Äôve probably seen it over 50 times since I used to love it so as a kid. He then told me he has never see Forrest Gump, Star Wars, Shawshank Redemption, etc. I haven‚Äôt seen the latter two of the three so I can relate there.

    For breakfast, I kept it simple: Half of a sweet potato and egg whites with a packet of ketchup

    For lunch, I had leftover Chicken Fried Rice.

    I walked to Reid‚Äôs in the afternoon despite it being 93 degrees out. When I am out for a good deal, nothing stands in my way. I am all about the saying ‚ÄúNeither rain, nor sleet nor snow‚Ķ.will keep me from a sale!‚ÄĚ I ended up getting goodies there, they are closing this Saturday and the entire store is still 40% off. All of this for $15!

    I wanted to dive right into this beauty of yummy, sugary goodness but was good and only had half ūüôā

    After work, it was time for RiverJam @ the National Whitewater Center. During the summer, the center has a free concert series every Thursday and Saturday night. It’s a beautiful venue with great live music, dog friendly and beautiful sights

    They have the River’s Edge Bar and Grill and we got a table right in the sun, which was killer, but thankfully¬†had an umbrella-ella-ella so that helped a bit. But when it is 7P on a summer night in North Carolina, it doesn’t help that much! We kept fanning ourselves off and waiting for the sun to go down. There was a funk band playing but we were there for a little over two hours but they may have played four or five songs. It seemed like they were taking a break more than they were playing.

    Blue Moon made a¬†much-needed appearance (not only because I had a rough day at work but because it’s summertime!)

    It did not disappoint, as fried pickles usually don’t. I never tried fried pickles until I moved to NC and wish I would have never tried them because they are slices of heaven

    I had the Apple Walnut Chicken Salad –Marinated grilled chicken atop spring mix with apples, crumbled bleu cheese and candied walnuts with Balsamic Vinegarette

    Fantastic salad! It was very refreshing and the candied walnuts added a nice sweet touch to contrast the apples. And I am all for any kind of crumbled cheese! I was looking at the hummus plate but needed something cool and refreshing and this hit the spot!

    Seriously, why has Lincoln been glaring at me lately? Dislike.

    A day without a hippie.

    I love not being busy at work. I had time to meet one of my old co-workers for coffee this morning and wasn’t stressed about time at all. We went to Caribou Coffee since I had two $1 off coupons that are expiring this wk. I got a large coffee for $1.08—score!

    I just love this cup from Caribou it just made me smile. I really need to follow these especially
    “Hold Hands Not Grudges”. I don’t like Caribou¬†drip coffee as much but their specialty drinks beat Starbucks hands down in my book. But then again, I think Starbucks laces their coffee with a little something extra to get you addicted. I used to love Dunkin Donuts but had it recently and it tasted like coffee flavor water….ick. I’m progressing with weaning myself off the Diet Coke but don’t know if I could get off the Bucks.

    The 13g of protein I loved. The 280 calories for that little bar, not so much.

    Today was a relatively slow day again. I wish it would just even out with a steady pace instead of being super crazed one day then dead the next.

    I did a side by side with a co-worker¬†today who does a different job function so that killed a good hour of my day. Thanks¬†everyone for your words of encouragement about the manager position role I mentioned yesterday (and the taking down of Stinky!).¬†I got more questions from coworkers today if I’m going to apply for the manager position or not. I’m going to think long and hard about this because I KNOW I would do an awesome job but its Stinkalicious that’s getting in my way. And it would be more money and cmon who doesn’t like that? But then again in the words of Biggie…..mo money month problems.

    Sigh, decisions decisions.

    For lunch I had a¬†Cedarlane Chile Relleno. I’m not a big fan of frozen meals but it was a) Cheap and b) Mexican so I was game.

    ¬†It was good…except that I had to re-nuke¬†it three tops. Originally I cut into it after heating for the recommended time and kept getting¬†icy bits. I would have loved¬†to have tortilla chips to dip in the sauce but didn’t have any there. I think if I would’ve had a reliable microwave I would liked it more but I would try again.

    I saw Scott Stapp¬†lookalike again and didn’t recognize him b.c he has a beard. Not. A. Fan. I am anti facial hair—what¬†about yall? He just looks a little too hippie for me. And speaking of hippies, my hippies (yes I now own them) weren’t out today….sadness.

     

    I was hoping to get some veggies but they don’t come out when it rains. Which confuses me b.c aren’t hippies supposed to be one with nature? BS I tell you.

    I had half a container of Chobani peach greek yogurt with blueberries for a snack since that was going to my brekkie.

    Didn’t keep me full too long though b.c I remembered I had these mini size candies hidden in a drawer.

    I had some Trader Joe’s Whole Wheat Pizza Dough leftover and decided to make a pizza with a side salad for dinner.

    Salad with red onions, half a tomato and Ken’s Lite Honey Mustard Dressing, Boring I know. If the hippies would have been out, it could have been prettier.

    And look at this—I¬†made an almost round pizza—no Richard Nixon looking or California shaped pizza! Go me ūüôā

    I love the combination of mushrooms and artichokes with garlic and red pepper flakes–yum!

    Even though the hippies weren’t out today, I had my own hippie–Lincoln! He got into a bush when I took him out and turned into a flower child.

    And I’m sorry but I think Lincoln is just one of the cutest dogs ever. And he is so much cuter in person since he doesn’t photograph well. But seriously, how could you look at him and not be happy?

    I spent a good 10 minutes getting the mess out of his hair and it obviously exhausted him. Poor baby.

    And I forgot—I signed up for another 5K today! I am going the Great Harvest Bread 5K on May 22nd.

     I have been slacking on running lately and this will push me to get out on the road again. And I was all set to go tonight and course the rain is coming down. Maybe the hippies did a rain dance?

    Let Them Eat Cake

    I barely slept at all last night yet felt so rested and relaxed this morning.

    ¬†I’m convinced that I need to stop watching tv though. In the past wk I have dreamed that I

    *Was a Polygamist wife (Big Love)

    *Was a pimp

     

    *Was stuck in the desert with Larry King¬† (I don’t¬† want to know what these means and I don’t even have CNN!)

    ¬†I woke up late and caught the late bus and¬†Josh Hartnett look-alike¬†was on it so that made the ride¬†more pleasant¬†I love eye candy in the morning ūüôā

    All of our systems were working today! It was like a dream how a normal business day should be! Clicks to that!

    Breakfast was Greek Yogurt, flax, coconut granola and frozen cherries and raspberries.

     Lunch was a Dragon Roll from Harris Teeter. Surprisingly good! I didn’t have the time to go sit down somewhere for lunch so when I need a quick fix for sushi, I head to the Teet. The avocado was very fresh and tasty.

    Seriously, how beautiful is this roll?

     I had a side salad as well with spring mix, peppers, mushrooms, onions, olives and carrots with peppercorn dressing.

    ¬†Of course after this, I found out about the dessert bar in the conference room. Yes‚Ķ.I said dessert bar (so much better than a salad bar). It was¬†for associates as a “thank you” for all the hard work we do. It included ice cream, cake, fruit and nuts. Yum! I didn‚Äôt want to be rude so I took a slice and some fruit to go . Yay for fruit‚Ķyay for free fruit and cake!

    After the big lunch and a bite the slice of cake, I was in a food coma. The afternoon¬†surprisingly went by quickly. We were super busy at work which means the day goes by quickly which means it doesn‚Äôt feel like I am there an eternity which means I am happy which means …..(hahaha just kidding I will stop there)

     Having a three-day wknd is so nice because it makes the rest of the wk fly by but then I get super confused about what day it is. So today is Wednesday, which should feel like a Tuesday but for me it feels like a Thursday. Oi! Suffice to say, two more days to go!

    I came home and had to think about what was for dinner since no chicken, pork or red meat for the next 40 days. I went with tofu stir fry….quick, easy, delicious!

    It is so cold out which means perfect running/walking weather! I don’t know why but I really enjoy running when it is cold out and it motivates me more to workout than hot weather. I ran for 30 minutes and went 3 miles.

    ¬†And had a yummy smoothie waiting for me ūüôā I made it with Soy milk, chocolate whey, almond butter and spinach. Magnificent!
