Today was a perfect, busy day. I passed out last night while watching SNL with Betty White. I tried to rally and stay up the whole time but the body just wasn’t having that. So sad that I used to be able to stay up until 4A with no problems but now staying up past midnight requires a nap the day of and a coffee! Oh Father Time, you suck.

I made eggs in a hole for breakfast. Although it just looks like egg covered bread, regardless whatever you want to call it, it was great.

I was picking up around the apartment and cleaning out my bathrooms. There was an empty Q-Tip (whatever happened to the rapper by the way? Vivrant Thing used to be one of my favorite jams) in my linen closet and I finally got the energy to pick it up and throw it out. But there was something in there and what do you know, I found the Starbucks gift card my team at work got for me for my birthday. My birthday was in December and I thought I lost it but happy times–$20 worth of Starbucks is on its way!

It was cool out this morning yet sunny and not a cloud in the sky. I went to the pool for two hours to sun myself. I was again, the only person there which kinda baffles me. Not that I am complaining, it was peaceful and I finished My Fair Lazy. While I appreciate the quiet, I kinda missed people watching.

I got back in and made a light lunch—Sabra Supremely Spicy Hummus, a Pocketless Pita and random veggie slices.

This may be my new favorite hummus! Athenos and Trader Joe’s are good but this was my far the creamiest and it left me satisfied.

After that, Lincoln and I went to the dog park for an hour so he could see his peeps then I dropped him off at home and I went to Ulta. Target and Starbucks.

It was after 3P so I got the half price frappuccino deal they have going on this wk. I haven’t had a frapp in a looooong time but since it was only $2 something so why not. I got a Tall Coffee Frappuccino

Delicious! Now if we only had a Sonic nearby so I can get one of their iced drinks. Or even a 7-11, some days I would almost kill for a Slurpee.

Let’s talk about the deals I got at Ulta. They had Buy Two Get Two Free on Ulta Brand cosmetics, shampoos, etc. and other deals.

That all would be two shampoos, one conditioner, a hairspray, face wash, body wash, sunscreen, self tanner, two nail polishes and a lipliner……all for $40! Most of it was Ulra Brand and for the three items that weren’t….Olay Facewash for $5.09 and I had a $2 coupon, the Loreal Shampoo was $4.99 and I had a $2 off coupon and the Nivea Bodywash was $5.49 and I had a $4 off coupon. I love being frugal.

By the time I got back, it was 430P and I was already beat but didn’t want to take a nap. I went on walk/run on the greenway for over an hour. My knee has been bothering me so I walked most of the four miles but got a bit of running in there. I took a water bottle to keep me hydrated, wore a hat and lightweight clothes so it was more bearable than last time. The one thing I didn’t take with me was my ipod. I guess I felt like being one with nature today but I really enjoyed it. Not concentrating on my music allowed me to pay more attention to the greenway and the nature around it. I kept walking past gardenias that smelled amazing (and better than the scent at B&BW), listened to the birds and took notice of the colors. It was nice being able to fully concentreate on how my body felt and the atmosphere around me without Andre 3K telling me to shake it like a polaroid picture. But then I got bored without my ipod and starting making up rhymes in my head. I think I was the only person out there alone (thanks God for reminding me of that fact) and it was pretty much all families of lovers take a stroll. So I would make up stupid rhymes in my head like “The family that peddles together, meddles together” , “The couple who runs together, bakes hot buns together”. As you can tell, I could only get so far with that. I ran a bit but my knee wasn’t having that and when I had only about .5 mile to go, I thought I was about to start crying in agony. There was a sharp pain going from the back of my knee to my calf and it was just killing me. I got back and was happy because I didn’t look like a complete wreck for once!

Those two happy things could only mean one thing—-green monster!

I made my Green Monster with Chocolate Almond Milk, Spiru-Tein Banana Protein Powder and 2 handfuls baby spinach

 Afterwards, I iced my knee, took a bubble then gave myself a manicure.

For dinner I made zucchini cakes.

2 zucchini’s, peeled

1 egg

1/3 cup breadcrumbs

1 tbsp butter

1-2 tbsp vegetable oil

salt, pepper, whatever seasonings you would like to add (I prefer paprika, garlic salt and pepper)

Chop zucchini into bits in the food processor until shredded. Pour onto a plate covered with a paper tower and top with another paper towel and squeeze moisture out (if you don’t chances are it won’t stick too well together) mix with remaining ingredients and form into patties. Heat oil in the pan and add the patties and turn every four minutes. This made three patties for me which was more than enough! I served with Ken’s Lite Honey Mustard on top and with a BIG Salad with spinach, peppers, zucchini, tomatoes, shredded cheese and Kraft Light Three Cheese Ranch

I think the rest of the night is going to involve reading and cuddling with Lincoln. A Happy Dog-Mother’s Day indeed. And I hope all the momma”s out there (momma of kids, dogs, cats, men haha, etc.) had a fabulous and relaxing day 🙂

A salad a day keeps the doctor away

Happy Frickin Friday!!! Yet again, I am so happy Friday is here! I have no plans this wknd except running errands, laying out, cooking and oh yeah, working yet again. Normally I would be really pissed off but I will be getting OT pay and the opportunity to get a lot done without any distractions so it won’t be too bad. Having two people out of the office most of this wk really took a hit on me and my workload. I wasn’t able to get as much done as I normally did, couldn’t drink any water during the day (I usually drink about 100-120 oz at work alone) because I was too busy to pee. Sad huh? I can go in tomorrow or Sunday from noon to six when our systems will be up and running and think tomorrow is going to be the day. The only thing I don’t like is the bus doesn’t run during the wknd so I have to drive up and pay for parking. There is a lot almost a mile away that’s $3 so I normally park there and get a little walking in.

I had Trader Joe’s Apricot Mango Greek Yogurt with blueberries, Trader Joe’s Blueberry Flax and Coconut Granola for breakfast

Come to think about it, I haven’t been to TJ’s in a week now. WTF? I must really be stressed out because there is no excuse for that!

The weatherman said it was going to be close to 90 today so that called for a Venti Iced Coffee with Skim milk and 2 splendas.

Our weatherman’s name is Larry Sprinkle. How frickin cool is that? LOL

I didn’t get a chance to pack a lunch last night so was on a search to find an affordable and not too unhealthy lunch. When I went to Quizno’s last wk I saw a sign for a pick two option so strolled down there to check it out. You can get a salad, soup, bullet or torpedo sub (the difference between the last two? No clue) for only $5!! Holla if ya nasty. I went with a Pesto Turkey Bullet and the Raspberry Chipotle Chicken Salad

Why haven’t I tried either one of these before? Both were great. The sandwich was just big enough to satisfy me but not overload me. The salad was tasty and the dressing had a bit of a kick to it. And look at those pieces of breads. Me love carbs long time.

I did get to stop by the hippies but didn’t get too much stuff. The fruit wasn’t looking to good neither was the okra which was a bummer so I got my normal staples of peppers, tomatoes, apple, orange, zucchini, cucumbers, onion and organic spinach (not pictured)

I stayed at work a bit late so the bus was empty and the ride home tolerable. I was starting to do all the math in my head having 11 hour of OT the past two wks and what that will add up to in the next paycheck and what I can spend it on. Odds are it’s going to be some clothes for when I go to NYC in July and heartworm meds for Lincoln. Exciting, I know.

Dinner was nothing extravagant but tasty. I cut up a pork chop I had in the fridge and marinated in John Boy and Billy’s Grillin Sauce. This is like liquid crack to me.

And another round of salad loving–I had a BIG Salad with organic spring mix, carrots, cucumbers, red onions, peppers, tomatoes, feta cheese topped with Ken’s Lite Honey Mustard

I saw these 25 questions on April’s page and loved it. It’s Friday night, I’m sitting at home with my dog and like answering questions-so why not?

1. Do you sleep with your closet doors open or closed? Closed. I have too much random stuff in there I never leave them open since God knows what Lincoln will get into.

 2. Do you take the shampoos and conditioner bottles from hotels? Hells yeah. I’m paying for it so why not? I clean house too (not literally!!) but take the coffee, shampoos, shower caps, soap etc. I leave a nice tip though 🙂

3. Do you sleep with your sheets tucked in or out?  I’ve never like top sheets and don’t sleep with them. I’m weird I know.

4. Would you rather be attacked by a bear or a swarm of bees? Bear for sure, I would it to be quick.

5. Do you have freckles? Not really. A few sun spots here and then but not frecklelicious at all

6. What is your biggest pet peeve? People who lack common courtesy

 7. Have you ever peed in the woods? I think I’ve only done this once and it was last yr at the Jimmy Buffett concert.

 8. Do you ever dance if there’s no music playing? Sheesh, I dance to the music in my head!

9. Do you chew your pens and pencils? Negative.

10. Is it okay for guys to wear pink? In my book, no. I want a man who can change my oil, throw down, drink beer and be a man not one who wears pastels better than I do.

11. What do you dip a chicken nugget in? Sweet N Sour

12. What is your favorite food? Sushi!

13. What movies could you watch over and over and still love?  There’s Something About Mary, Centerstage, Muppets Take Manhattan, Any Given Friday, Goodfellas and Shallow Hal to name a few.

14. Were you ever a boy/girl scout? I was for like seven years I believe.

15. Would you ever strip or pose nude in a magazine? If I had a better body yes. But then again, if I had a better body I would wear a bikini and high heels every day and tell people to come see how good I look.

 16. Can you change the oil on a car? No, that’s why we have places that do that.

 17. Ever gotten a speeding ticket? Too many. But not one in over two yrs—knock on wood!!!

18. Ever ran out of gas? Nope

19. Are you lazy? I have lazy spurts but I can’t sit around for too long because I get bored or antcy

 20. When you were a kid, what did you dress up as for Halloween? Oh yeah, I loved it.

21. How many languages can you speak? Mostly English but can read some spanish here and then. I am a super fast talker but can’t speak spanish because ironically enough, it’s too fast for me.

22. Who is better…Leno or Letterman? Gotta go with my Indiana guy–Letterman!!

 23. Do you sing in the car? Alone, yes. With others, hells no.

24. Ever eat a pierogi? Yes and even make them!

25. First concert? Violent Femmes and G Love!

Lincoln and I went for a nice walk then stopped at my neighbors for a couple of hours. She has a cocker spaniel so while they played we bonded and had some TLC……the channel that is. We starting watching “Say Yes To The Dress” which I’ve never seen but now love. This right here is why I miss cable. Do I want to pay an extra $80 a month to have programs like this? Hells no. My mind may change when I get a raise though!!

Down by the river

Super psyched to see the Matt Foley lookalike on the bus today—to and from work!

 He has the hair, glasses, built but not the clothes thank God.

I love seeing lookalikes on the bus it makes my mundane ride a little more interesting.

I got into work and Stinkalicious wasn’t there after so yay to that! Not yay to having to cover their work plus mine. Oh and the fact my computer decided to stop working around 930A. And then our my manager was running late as well as another dude on our team. Not a good way to start the day at all. Another thing that didn’t help was me being in a rush this morning and grabbing hardboiled eggs instead of honeydew which I planned on mixing with my yogurt.

And I didn’t want to be stinkalicious so I decided to toss them in the fridge for now and luckily had a container of Trader Joe’s Very Cherry Blend in the fridge to use in my greek yogurt.

We got absolutely slammed at work and I felt chained to my desk all day. I didn’t even drink that much water ( I drink from 120 to 160 oz a day of just water alone) which just sucked. I hate not being properly hydrated and my body doesn’t dig it as well.

We had a spirit celebration for the first quarter successes this afternoon. I enjoyed a fruit plate and the icing off the cake. I love supermarket frosting so much but the cake not so much. I would rather just have my icing and toss the cake. We got put into groups and had a fun game of trivia. I love that kinda stuff since I am super-duper competitive but we sadly lost. However I kinda won since my team was stationed near the fruit trays so I took an extra bowl of fruit for the afternoon. Thank you corporate America bank, that’s how I’m sticking it to the man!

And then I worked.

And worked.

And worked.

Oh yeah…..and worked.

No whistling though. I don’t even know how to whistle.

I know what you’re thinking, “Hey Tiffany you forgot pictures of your lunch!” Oh no I didn’t…..because LUNCH was at 4:30P due to an out of control volume.

Finally…food!! I had a salad with hardboiled eggs, tomato, red onion and carrots with Ken’s Lite Honey Mustard.

I finally tried a Kind Bar–Almond and Coconut style on the bus ride home. Why haven’t I been eating these? It was absolutely wonderful and coconut-licious.

Dinner was baked veggies–zucchini, red peppers, mushrooms, squash and red onions tossed in extra virgin olive oil, pepper and garlic salt

And popped my Amy’s Kitchen cherry!

This was just great. I am not big on frozen meals but I couldn’t tell this was frozen at all. Plus it had good stats like 20g protein and 430 cals but the sodium is my biggest concern with 640 mg, eek!

I got my Jillian Michaels Yoga Meltdown DVD from Netflix the other day and been curious since it seems like everyone is talking about it. Or maybe just talking about it on the blogs.

I got comfy, put Lincoln in the bedroom and got to the yoga-Jillian style. I did about half the workout because I was bored and wasn’t feeling it. I was looking for something more yoga-esque but it had more strength training than I cared for. I had a great workout and it worked me well but I was looking for a soothing yoga workout after today. And why is that all workout dvd music sucks? It’s like the music from The Max in Saved By The Bell. Straight up cheesy. I grabbed Lincoln and we went on a 25 minute walk but again, wasn’t feeling it. I had a headache come on and wanted to just get in the bubble asap.

After I got out of the bubble,  I saw Lincoln trying to do some yoga

I was kinda hoping he would do downward facing dog!

Besides that, I have a nasty headache and looking forward to bed…..and I’m out. Have a great night everyone!

Hockey guys are hot

This afternoon was full of fun- I got a lot done!

I’m a poet and didn’t even know it-hehe.

I took Lincoln to the dog park and there was the most dogs I have ever seen at one time! I counted 27 little ones at one point and we stayed for about an hour. We were going to stay longer but this Boston Terrier kept nipping at Lincoln’s tail and Lincoln started whimpering 😦 Poor baby.

We came home and I heated up leftover’s from Azteca last night. I had some rice and beans (I could eat this every day!!) and half an enchilada

The day was nearing to an end and I decided to go for a much needed run after GorgeFest 2010 this past wknd. I did about 3.6 miles and ran most of it but had to walk a bit. I don’t know what was up with my lungs today but they were just not wanting to cooperate with me.

I came home and the Men’s Olympic Hockey game between the US and Canada was still on. What. A. Game!!!!

And those men are hot–I have always been attracted to football players but bonjour hockey men, nice to meet ya!

I nourished with a Green Monster (Soy Milk, Spinach, Frozen Banana and Chocolate Whey)

Drinking one out of this cup always makes me smile. I don’t know if it’s because of the dogs or beer but it does 🙂

Does anyone have any good recipes for acorn squash or how to prepare? I have heard about it alot but never cooked with it, so if you do—let a sister know!

  I cannot believe my first 5K is in less than two wks and I am nervous about it! But excited at the same time. I think nervous because I don’t know what to expect and don’t know what the process is. I am expecting someone on a golf cart and a bullhorn to follow me and yell at me if I start walking lol. I hope this isn’t the case!  I am not trying to be gross but when I run, I find that I need to spit. Do I just do it or is there some proper etiquette? I like to think that I am once twice three times a lady but didn’t know if you could forgot about it or let it out?

  After today’s run, I am in complete pain. Please tell me this running thing gets easier and I won’t be aching as much. Or lie to me at least! LOL

Dinner was my take on Spicy Chicken Cakes with Aioli from myrecipes.com that I made a few times

I didn’t have bread so I used breadcrumbs and used red onion and parsley in the mix. I made about six total which is perfect for the work wk since you can nuke them or make a sandwich out of them. I had leftover fries from Five Guys and couldn’t let go to waste.

I topped with Ken’s Lite Honey Mustard and it was delish!

And a measly side of broccoli—I had a small bag with five florets sitting in my freezer and didn’t want to throw them out
