Tame and lame

Yep, that would describe my weekend. Friday night was exciting but the rest was pretty tame and lame.

Saturday morning was solely dedicated to packing and getting rid of junk. I had someone from Craigslist come over at 11am to look at my tv stand and they bought it—woo hoo! One item down, a whole lot left to go. I paid $100 for it last year and got $60 in return so I think that’s pretty good plus that can be a credit card payment for next month.

Of course, I put on Twitter about how if no one ever heard from me again, it was because I’d been killed. I never used to be weird about it but then this guy had to go ruin it for everyone.

The rest of the day was nothing to write about, errands, cleaning, gym. Fun.

I went through my freezer and saw that I had some shrimp that should be used soon so I decided to make shrimp, veggies and pasta. I cut up red peppers, onion, zucchini and shallots and seasoned with

I seasoned the shrimp with pepper and garlic then cooked with extra virgin olive oil on the stovetop until cooked thoroughly. I topped with parsley and grated parm. The best part was that this didn’t even need any kind of sauce since it was so flavorful and absorbed the extra virgin olive oil that I cooked the shrimp in.

I wanted to do something on Saturday night but nothing was going on. No one was around or responded to my texts if they wanted to do anything (nice) and no one asked me to do anything and I didn’t want to spend any money. Around 8pm, I got up and went to Freedom Park with Lincoln since there was still some light out. we walked around the lake, canoodled with other dogs and enjoyed the night. I t started to turn dark and the rain was coming in so we went home and hung out. The rest of the evening was spent with this guy

I’ve been trying to make Lincoln rock a faux-hawk but he isnt having any of that.

I woke up bright and early Sunday morning but not my choice. I didn’t get to bed until midnight and couldn’t take Lincoln out since it was down pouring. What does that mean? I woke up to him on my chest

I made an awesome bowl of oats—chocolate banana chia oats. These were bomb. I was just going to add the banana and chia seeds but had a little left of a bag of morsels to use up and most definitely didn’t want to be wasteful.

I went to Target to grab a battery and left with a battery and three tops. So typical

I also picked up my dad a Father’s Day card. I love my dad but I feel awkward picking out a card since they are too sappy for my taste like “You picked me up when I fell and now I pick up my kids when they fall” and other lame stuff like that. I just want a card that says “Happy Fathers Day, love you” but apparently Hallmark and the other big shots don’t want to produce stuff like that.

 

By the time I got back from Target, it was 9am and I was bored….again. So I got on my sneakers, grabbed Lincoln and we went for a mile and a half way and then to the park

Lincoln was chasing so much squirrel that his chain broke! His retractable chain went out 15 feet and now the string won’t go back in. So now we have to use his old leash which only goes six or seven feet out and when you have an energetic pup, that just doesn’t jive.

And something else broke apart but with the help of a wrench

Sing song the bed is dead!!!!!! That was my independence day and while everything didn’t break completely apart, it’s dismantled. Thanks Nic for the tool tips—I appreciate it!

Lunch was leftover mushroom flautas from Vida and kale chips. I believe in making the most of what you got and definitely when it comes to cooking, why use to sheets when I can use one?

I got creative with dinner on Sunday night. I had leftover spaghetti from Saturday night so I halved the leftover portion, added two tablespoons of cottage cheese, thawed frozen spinach, red pepper flakes, garlic, spaghetti sauce and mozzarella cheese

Took one portabella mushroom, cleaned it out, sprayed with extra virgin olive oil from my Misto then stuffed with the pasta mixture

Topped with more mozzarella

Bake for 15 minutes at 375 and then top with parsley and done!

This was a fun way to make spaghetti interesting as opposed to just the blah leftovers it sometimes can be! Plus if there’s an opportunity to get some mushrooms into my belly, I won’t pass it up.

Also this weekend I’ve been trying some new smoothie concoctions thanks to my friend, frozen mango

I’m out of protein powder and in limbo regarding what flavor or brand I’m going to buy next step. So to get my protein in the meantime I’ve been adding greek yogurt along with coconut water instead of milk and I love the consistency, it’s still thick but not as heavy.

 

Does anyone else feel me on the wanting a non sappy Father’s Day card?

Do you sell stuff on Craigslist/Ebay/Amazon?

Random question-anyone familiar with Google Analyticals? I have the code to add it to my site but I’m not sure where exactly to enter it in since I do everything by posts. It keeps telling me to put it anyone on my site, please help if you know where I should put it!

A few things gave me great comfort today after a horrible day at work

* Pringles coated fried chicken bit dinner

I remember seeing this recipe in the Hungry Girl cookbook and was too lazy to look the recipe (much less find where the cookbook is in my house) but it turned out fantastic. I coated them in BBQ Pringles, fried those bad boys up and paired with Steamfresh veggies for a simple dinner

The best part was the cheese sauce seeped over to the chicken–cheese covered fried chicken? Can we say bring it??

*A great workout

I did 40 minutes on the Precor elliptical doing an interval session. What didn’t comfort me? While watching Sex and The City on E! the very young girl on the machine next to me asked if I was watching Gossip Girl. I shit you not, a little piece of my heart died when she asked me that. Afterwards I did the leg press (240 lbs), hip abduction (110 lbs), hip adduction (140 lbs) and leg extensions (80 lbs)

Yeah you. Thanks for everyone on the props on yesterday’s post regarding my goals. I can’t say how much I appreciate the kind words and support. Checking my email every day and  seeing supportive and funny comments is one of the highlights of my day– you all rock!

Negativity, happenings and goal checks

So the past few days have been rough, I’ve just feeling blah. Maybe it was from the drunken stupor of Friday night, the 79 degree days we’ve been having or just laziness but I’m finally back to feeling “normal” and like myself again.

I had a major tofu fail last night. I have a couple of slices pressed in the fridge to get the liquid out and was looking forward to cooking up something tasty. I added bbq sauce to the tofu and cooked it on the stovetop while I had sweet potato slices and kale chips in the oven.

The tofu was extra firm but it was crumbling while cooking it so it quickly turned into a bbq tofu mash and it was funkalicious. It didn’t taste right at all so there goes my first experience with tofu gone bad. The rest of the meal was fantastic though.

Afterwards, I met up with a friend at the Y. She went to find a treadmill to run on while I found a Precor AMT to get my cardio on. When I finished working out, I sprayed down the machine and the guy next to me flipped his lid! He started getting all whiny and dramatic “Saying, og my gosh, I can’t breathe, why did you spray it in my face?? blah blah blah” I apologized saying that I didn’t realize it gotten on him (I sprayed it two times on the machine and wiped it) then after I apologized he gave me more attitude saying “Next time you really need to spray on the towel and wipe” and I just smiled and spurt out “Ok”. I walked away and *almost* walked back to go off on him and say something along the lines of “If getting cleaner on you is the biggest issue you have in life, I want your life” but I’m trying not to be so confrontational with strangers plus it’s the Y and I know I would start dropping the F bomb on him so I walked away.

My friend and I did some upper body weight machines after like the row, lateral pull down, shoulder press and chest press.

 It was a great workout and to think, I almost didn’t go because I had a case of the Mondays!

I came home and made a green monster with kale, coconut milk, Spiru-Tein Blueberries N Cream protein powder, flax seed and Yoplait Smoothie fruit mix.

Very tasty! I don’t think I would buy the Yoplait Smoothie mix again because there really isn’t alot of fruit in the bag and I believe it only comes out to two servings in the bag. I would rather buy a generic brand than spend an extra buck on this.

And today was hell. I didn’t have a lot on my plate because I wanted to work on a project but that fell through and there were just issues all day long. I started the day off with Yoplait and a Vita Top

Unfortunately, this didn’t hold me over at all. And there was a little issue with my sanitzer spilling all over the Vita Top–boo!

Just a note, this is the most disgusting scented sanitzer I’ve ever smelled. Plus the fact that anytime I see it, I start singing Strawberry Champagne to the tune of “Raspberry Beret” is getting annoying.

I didn’t make anything in advance so I had something new for lunch-Morningstar Sesame Chik’n

I’ve said it once and I’ll say it again-I’m not a huge fan of frozen meals but usually keep a few in my freezer for days I have no lunch. This was surprisingly good though. The “chik’n” tasted like real chicken and the sauce was smooth and didn’t seem like it was laced with a shaker of salt. I’ve had Lean Cuisine frozen meals like this and they pale in comparison compared to Morningstar with it’s abundance of vegetables and flavor. I will definitely be buying this in the future.

When I got home, I was spent. But I came home to a nice, surprise package.

What can it be?

Multigrain Cheerios and Biggest Loser Wii workout I won from Kelly Olexa! If you haven’t ever visited Kelly’s blog, please check it out. She is super inspiring, posts vlogs on the faily and has a Monday post called Monday Manjoyment–who doesn’t love that!? Whenever I am feeling down an uninspired, I head over to her blog and it puts things in perspective for me and motivates me to get off my behind and work it out!

Dinner was something new-chicken satay with brown rice, green beans, onions and baby corn

I’ve never cooked with satay sauce, nor did I know how orange it was!

Please disregard chipped nail polish. Instead of giving myself a manicure, I choose to blog.

I chopped up one and a half chicken breasts and mixed with the sauce

Cooked some onions on the stovetop then added the chicken

Then added the green beans and baby corn

Checked to make sure any chicken didn’t fall because if it did, Lincoln would be right there by my feet but instead he was sitting like a good boy

And voila! A tasty, healthy meal

I like to think of myself as a positive person but this past weekend, I had two guys tell I was a really negative girl and that bothered me. I am lot more positive than I used to be and when I feel like I’m speaking my mind or “telling it like it is” apparently, I come off negative. This came from me speaking about my job, you know, when you go out partying the first thing you want to talk about is work right? So when someone asks me what I do, I tell them then try to steer the conversation in another direction by saying something like “Let’s talk about something more interesting than work” and when they ask me, I really start to speak my mind about my job. As many of you know, I’m very unhappy with my role and have no issues about speaking my thoughts on my position but I guess I am really coming off negative? That being said, I am going to start making more of a conscious effort about how I speak about my job, life, feelings, etc and try to portray them in a more positive way and speak my mind more thoughtfully. I know I shouldn’t be doing this for other people but when I think about would I want to hang out with someone who is consistently complaining about their job, I wouldn’t. It’s just a downer. So I am going to try to express myself better or just learn when to shut up.

Which brings us to…..goal checks!

*Pay off one credit card by 2/15/11.  

 Success! I paid off in January and working on paying my other one down. I’ve paid $500 down on it in the past two months so I’m cutting that balance down. Thank God for 0% balance transfer offers!

*Quit my job. 

On the way to success! My manager and I had a one on one last week and I told him that I am 100% sure I will be out of there by May. He was quite receptive to what I was saying so I appreciate it and the goal date is going to be April 29th. I told him that I will give them a month’s notice since I’ve been with the company for six years and want to leave on a high note with a good recommendation. I can’t believe this is going to happen.

*Check out cities that could potentially be my new home.

Working on it! I am going to Pittsburgh in late March to check out the scene there. I have a good number of friends from college there, it’s an hour away from where I went to college and I would be within driving distance to family six hours away. I hate the fact that I have two nieces but I feel like I don’t know them at all. One is turning 10 this summer and I know nothing about her, I don’t want it to be that way, especially since I don’t want to have kids. Pittsburgh was recently named  the #1 Most Livable City in the US so it seems like a possible moving location. I am going to look into Indianapolis when I am there in May and possibly Chicago around that time as well. It scares me that I have absolutely no clue where I will be in six months yet at the same time, it excites me.

*Pay a little more on my car payment each month so I can pay it off quicker

Success! I’m still paying about $30 extra with each paycheck to cut the balance down on there

*Cut down on  Starbucks and eating out.

Umm, what’s Starbucks? Seriously, I’ve only been going one to two times a week which is major for me. I haven’t been eating out as much as I once did which is also helping me save money and when I do go out to eat, I try to use a Groupon/Living Social deal.

*No new clothes until March.

I did it! I don’t know how but I did and I’m proud to say, I didn’t buy any new clothes in January or February. It is possible!

*Plan a stay-cation instead of jetsetting all around the country.

This is going to be a difficult one still with all the traveling for potential cities to move to but am least when I travel, I will be crashing with friends instead of staying at hotels

*Sell what I don’t need.

Copied from last month because there is no progress on this–I haven’t sold anything yet but I am in the works of putting together everything I want to sell, take pics, put on Craigslist, etc. If anyone in the Charlotte area is looking for a Wine Refrigerator, let me know

*Try out new ethnic recipes.

 I still need to mix it up some but I made some good stuff in February like stuffed mushrooms, meatballs, tuna melts, tofu tacos and roasted chicken along with going out for sushi, Indian food,

*Be more consistent with taking my vitamins.

I give myself an F. Seriously, I don’t know when the last time I took one.

*Cut down on my meat intake.

Success! Doing great with this by incorporating Meatless Mondays along with eating  more beans, tofu and making dishes meatless.

*Use skim milk or almond milk in my coffee instead of half and half.

 Success! I bought coconut milk this weekend after seeing a recommendation from Monique and it’s sooooo much better than almond milk. Go try it if you haven’t!

When cleaning off a machine at the gym, do you spray the machine and wipe or spray the towel and wipe?

No kale no sale

 Hi all!

One of my fest friends from college in on Friday afternoon. We met up at my place then walked over to East Blvd Bar and Grill before taking her to the airport. I love when I see friends who I haven’t seen in a while and it feels like just yesterday you saw them. It was great catching up with her and reminiscing about our crazy times in college and I miss that. Yeah, I’ve made friends here but not like the friends I made in college who know me so well,  feel like I confide in as much, who really get me and I can be myself around. I just miss that.

They have a pretty awesome appetizer special until 6p everday with a mini appetizer menu. I was milling over the selections but knew I wouldn’t be eating later that night. I decided on the classic of chicken tenders and fried potato chips with a dijon honey mustard sauce and it was great. Sometimes you just can’t go wrong with bar food.

She got the nachos. I love when friends are down with me taking pictures of their food. And wtf, that is the small portion. I need to go back there again just for that.

Saturday, I went to Great Grapes wine festival I’ve wanted to attend this for a while and seem to miss it every year so I was excited to finally try it out. It’s a wine festival featuring North Carolina wineries along with other vendors such as food, jewelry and more. It was gorgeous when we got there but soon it was almost unbearable with the sun beating down and barely any shade near the vendors. It would have been perfect on an overcast day when it was cooler out but if I would have known it was going to be that hot out, I wouldn’t have gone. I am such a diva when it comes to hot weather and was just miserable.

 With wine, I am more of a dry wine girl and alot of the vendors where more sweet so I only found a few that I liked but it was nice to try new stuff. I thought I could handle a few sips of the sweet wines they offered but it was too sweet for me then stuck with dry’s. Had I know it was going to be so hot and more sweet wines, I would’ve stayed home but it was a good time regardless.

Wine slushee? Yes please. This was refreshing and tasty and totally worth the $5 (free tastings but $5 if you wanted a full glass of a drink)

The pretzels and crackers we ate in between tastings didn’t keep us too full so we went looking for nourishment afterwards. We went to Paco’s Taco’s, a new Mexican inspired restaurant in the South Park area. So the name seems like a Mexican place but  I was confused by the theme of it. It had a menu full of Mexican food, the decor seemed more Western Route 66 -sh and the music was random as well. Being one that loves random stuff, I enjoyed it even if I was perplexed Service was great and the manager even stopped by after to see how everything was and how we thought everything tasted and if it needed any more flavor or seasoning. I thought that was really awesome that they asked our opinion (even if they really didn’t care). I got the ceviche which was served like a parfait in a dessert cup so I found that different but it tasted fresh as well did the chips and salsa.

I woke up this morning (no hangover thankfully) and you can tell fall is definitely her! That being said, I was in a soup making mood today. I was toying with the idea of making chili but I’ve made that tons of times and decided to try a new soup recipe that I saw in a Rachael Ray Everyday issue I had sitting around from last winter. I tried the Bacon and Kale Minestra because I love bacon and wanted to try kale since I’ve never cooked with it. I see raves all over the blog world regarding kale–in stews, kale chips, etc. so I have been anxious to try it and figured this would be a flavorful and seasonal recipe to try it in. Everytime I hear the word kale, I am taken back to waitressing at Applebee’s in college where they would never let a plate leave the expo line without kale. They always used to say “No kale, no sale” and now I have that running through my head.

I also wanted to try this recipe because I am a sucker for all kinda of stews and thicker soups. I really don’t make brothy soups that much so figured it would be nice to mix it up a bit and the fact that it’s a healthy recipe made it even better! I made a few modifications—I used turkey bacon instead of regular (I had a coupon that allowed me to buy it for $.41 yesterday so I am using that up), I only used six cups of chicken stock instead of the called for eight because I mentioned, not a huge fan of the brothy soups and added black pepper to taste.

I love that the finishing garnish was grated parmesan—funky? I was like parmesan on kale and bacon soup and didn’t think it could be good but it was the perfect finishing touch! I recommend this recipe–it was easy to make and it made about six servings as opposed to the recipe which said it makes four. As always, you lie Rachael Ray. I have a love/hate relationship with her. I love her ideas but hate the cutesy names she calls things—stoups, sammies, etc. I love her personality but hate the overexaggeration that comes with it. I have  a subscription to her magazine which I absolutely love but hate that it’s only her on the cover most of the time. It’s annoying and creepy in a Oprah kind of way (don’t get me started on Oprah-I think I’m the only white woman who doesn’t love her). Anyways,  someone (not me) wrote a letter saying how they would like to see some variety on the covers and not just Rachael Ray and they actually put kids on the cover with her the next month after that so cheers for variety.

After slurping one and a half bowls down, I went to Freedom Park and walked for 35 minutes. I am going to try to start running again when it gets a little cooler. I can’t believe it’s been since April since I’ve ran and I’m looking forward to starting up again.

I found some canned pumpkin this morning and got to cooking. I was going to make muffins but didn’t have all the ingredients so I went with the pumpkin bars I made last week. I make a few modifications with this as well–I used whole wheat flour, added chocolate chips (because chocolate makes everything better) and used 1/2 apple sauce and two tbsp butter instead of half a cup of butter.

After I made these I saw Brittney’s post with her recipe for pumpkin cookies. I will be making those next time around!

This afternoon consisted one one thing: Entourage marathon. I was so happy to see it on Spike since I haven’t had HBO for a couple of years and it’s one of the shows I miss.

Dinner was a quarter chicken leg that I got on sale at Harris Teeter last night ($2 for 2 legs) along with roasted potatoes and kale chips

I love this sauce and the fact that it’s only $.92 makes it even better.

So, why didn’t I try kale chips before?? These were fabulous and were crispy just like a potato chip. I added extra virgin olive oil and oregano to mine instead of the standard salt and pepper. I will definitely be making these again!

Hope everyone had a nice weekend-how is it over already? Anyone do anything fun? My weekend was kind of laid back again which I am starting to dig. I don’t need to be going out every weekend, spending tons of money and being hungover.
