As much as I love the eggs, I really need to start buying egg-whites again. I think my heart will thank me after the fat fest I had for breakfast yesterday morning: Two Scrambled Eggs with Muenster Cheese, Avocado and Tomato


Lunch was a BIG salad with carrots, tomato, feta cheese, quinoa, green onions topped with pulled pork and pomegranate balsamic vinegar. Holy balls. I don’t like the idea of hot and cold together most times (with the exception of greek yogurt and oatmeal) but I nuked the pulled pork up for about a minute and the combination was terrific. I also liked how the pomegranate balsamic vinegar tasted with it. I didn’t want to ever end 😦

One of my co-workers came over to my desk and told me she had a treat for me. I love treats. And I love treats in the name of fresh produce even more. I thought she was just being sweet but she had an ulterior motive but it worked out fine because I can be persuaded just to do about anything if you put some good food in front of me.

I want this dogs life

A girlfriend and I had plans to go to dinner so she came over to my place and we walked over to Lebowski’s Neighborhood Grill, a semi-new place here. Can I say how happy I am that I moved? I love the convenience of being able to walk to restaurants, shops, bars, etc.  I know I keep talking about it but that right there is something I am willing to pay more money for. I can tell a difference in my energy level and attitude from not having to wake up at the butt crack of down and having a long commute.  Love it.

I got the Jerk style Gardenburger with garlic fries (I’ve heard people raving about them so had to see if they lived up to the hype)

There was jerk sauce and pineapples under the beautiful layer of melted cheese.

And the fries? They totally lived up to my expectations, it was a fair amount of garlic but nothing that would keep a vampire away. We had quick service, enjoyed the patio area and had reasonable prices, I would definitely go back.

Today was another day full of fruits and veggies. I needed to take a little break from the eggs for breakfast and had a green monster in a bowl instead. I made it with blueberries, spinach, almond milk, xanthan gum and half a packet of Spiru-Tein Blueberries and Cream Protein Powder topped with Kashi Go Lean Crunch

Yeah…..and there was about 1/3 still left in my magic bullet.  Again, if you haven’t tried xanthan gum, what are you waiting for?? It’s awesome!

Lunch was yet again a BIG Salad with romaine, tomato, quinoa, carrots, cucumber, onion, ham, hardboiled eggs, Laughing Cow french onion wedge and sunflower seeds topped with Ken’s Fat Free Raspberry Vinaigrette. Add another salad to the list that I didn’t want to end.

I really liked this, it was a simple almond bar and it wasn’t too sweet or moist (I feel so dirty when I say that word)

Zumba was great but I didn’t rock it as much as last week since I am still a tad achey from Jackie Warner’s One on One Training DVD I did the other day. I didn’t jump around as much but I still got a good workout in with a nice calorie burn of 677 and average heart rate of 166—yes!

I was ready for a big dinner when I got home! I made turkey burgers (with parsley, green onions, Heinz 57, garlic and panko breadcrumb)

I served with a cold quinoa salad with lemon juice, extra virgin olive oil, garlic, salt, pepper with carrots, cucumbers, tomato and red onion thrown in.

I loved the meals I’ve had the past two days and can honestly say that all this fresh produce is my favorite part of summer. I am going to miss having access to different farmers markets in the area once fall comes around but I think it’s a fair trade-off for football, sweaters and cold weather. There are so many veggies to look forward to as well which means new stuff-yay!

A Pom Kind Of Day

The friendly people at POM Wonderful contacted me a couple of weeks ago in regards to trying their pomegranate juice. I was so excited because I love all things pomegranate but have only tried the actual juice a couple of times before (I prefer to get my pomegranate from pom flavored beer thank you very much! 🙂 )

A little about POM Wonderful from their site

  • contain no added sugars, preservatives or colors
  • are a good source of potassium
  • are gluten-free
  • are flash pasteurized to retain both flavor and nutrients
  • are certified kosher
  • Plus they have different flavors of Pom juice that I never knew about-such as mango, kiwi, blueberry, cherry and nectarine with a myriad of different products like tea, bars, iced coffee (say whaaaaa??!!?!), shots, pills and more.

    I got their package on Friday and have been brainstorming what I could make with it. Yes, I could make a cocktail or green monster but I wanted to try cooking with it.

    With that, I decided to make Feta, Walnut and Parsley stuffed pork chops with a creamy pomegranate sauce and a side salad with pomegranate balsamic dressing

    I finally bit the bullet and bought some xanthan gum. I’ve been wanting to get these to use in my green monsters since they turn out soupy a lot of the time and to use in sauced instead of corn starch. Most recipes only call for one to two tablespoons of cornstarch so this bag is going to last me awhile!

    For the stuffing, I threw in 1/3 cup walnuts, 3 tbsp of feta and a few tbsp of parsley in the food processor and pulsed on low for about 10 seconds.

    I butterflied two pork chips and stuffed with the filling then secured with toothpicks. I rubbed a little extra virgin olive oil and black pepper on them and then cooked at 350 for 25-30 minutes

    For the creamy sauce, I threw  1/4 cup half and half with 3/4 of a POM Wonderful bottle on the stovetop with one tbsp xanthan gum and let cook on a low setting for 10 minutes until thick and bubbly. I know it kinda looks like the River of Slime from Ghostbusters 2 but don’t fear, it was tasty!

    Side salad with carrots, tomato, extra stuffing mix, quinoa topped with homemade  pomegranate balsamic vinegar. I liked the dressing a lot and never knew how easy it was to make your own dressing!

     This was such a fabulous, filling meal. It was nice to experiment with the POM Wonderful for a different flavor for my meals and I cannot wait to try it with more stuff—thanks POM Wonderful for sending me and giving me the opportunity to try your juice, I am loving it!

    I also found the mythical Chobani Pomegrante Greek Yogurt I’ve been seeing all over the blogs lately. I’ve never seen this flavor in the store before so when I saw it this past week, I practically screamed and started doing my happy dance right in the middle of Harris Teeter!

    And I got to use the free Chobani coupons I won over at Nutrition Nut on The Run so free Chobani is always nice. It was terrific! I am a bit skeptical with new flavors ever since trying Chobani’s Pineapple flavor but this did not disappoint. Thus being said, I may just turn into a pomegranate by end of day.

     Fail to plan, plan to fail….yep that’s what I would say about my lunch today

    Microwave popcorn-yum! I love the stuff but it is not filling at all. Oh, I didn’t mention I had this at work did I? Yeah. Another so busy week that I went in for five hours today just to catch up on my emails so I could get some peace of mind. I was annoyed by having to go in to do that but I kept repeating to myself “time and a half-pay, time and a half-pay, time and a half-pay” to make it bearable.

    Oh and I know how I was singing praises to Jackie Warner and her workout dvd yesterday but today? I curse the day she was born. My everything hurts and each time I step up or sit down today, I whimper a bit. It’s sad. No pain no gain right??

    I made a yummy plate of eggs topped with avocado and tabasco for breakfast.

    Hey healthy fats!! Just wanted to say that I heart you.

    I got a Magic Bullet for my birthday this past December and finally opened the box today to try it out with a green monster with blueberries, almond milk, baby spinach, Spiru-Tein Blueberries & Cream protein powder (half a packet), one Splenda and 1/2 tbsp of xanthan gum

    Holy crap-why did I wait so long to use this? I absolutely loved how easy it was to use, quick it was and way more quiet than my blender. And xanthan gum, I just love it. It came out like sludge (which is a good thing!) this was more like an ice cream treat than a smoothie.

    Happy August to everyone as well, I completely forgot its first of the month!

    Things to work on for this month

    *Drink less beer. I was out of control the month of July. Ok, not alcoholic out of control but drinking way more beer than I normally do due to the ridiculously hot weather out.

    *Have a more consistent workout schedule each week. With moving and going on vacation twice in July, I didn’t get much workout time in. Again, add the nasty weather and it was a recipe for laziness on my part.

    *Cook more at home, eat out less. Now that my kitchen is all squared away and I am somewhat getting used to cooking in a smaller kitchen, I need to get back into the swing of things.

    All in all, today was a great day with work, new recipes, etc. Hope everyones August is off to an equally fabulous start!

    Today was yet another hellacious day at work. We had three people off and it’s month end, which is always the busiest day of the month for us. My phone was ringing non stop, my email box was never empty and I was just struggling to stay on top of everything all day along with helping others on my team. People would call me and ask how I was doing since they knew about our understaffed team for the day and I would just reply “Do you want the real answer or the fake one?” Of course everyone wanted both answers

    Fake answer- “I’m super fabulous!”

    Real answer- “I want to crawl into a fetal position with a bottle of wine”

    But it’s all over with (for now) and I can go in this wknd and catch up on things. Okay and get some time and a half-pay in the meantime (which will be going towards Lincoln’s boarding in a few wks when I go to Phoenix or some snazzy digs for me!)

    The day started off questionable, I slept in late (yay!) but woke up to a text from my ex boyfriend from college (boo!)

    I found my “Keep Austin Weird” mug that I got four years ago when I visited for a weekend. I loved Austin so much and would love to go back. Sso if any of you ever want to me to stay with you, let me know, will be over ASAP and I will bring Trader Joe’s goodies since you have the Whole Foods mothership!

    I think I was going for overeasy eggs but it was kind of a fail in that aspect but still tasty.

    I mixed it up (pun intended) with a Venti shaken Iced Green Tea.Lemonade with two splendas—tasty as well! I didn’t know refills of these were only $.55, when did that happen??

    As busy as it as this morning (understatement of the year), I forced myself to take a short lunch break and visit my hippies and stop by Chick Fil A to buy a pakcet of their Fat Free Honey Mustard. This stuff is laced with southern goodness crack. I wish they would start selling it in stores because I will walk to Chick Fil A and offer to buy a few packets but they give it to me for free. Then I feel bad about it since they are always so nice about it and say “My pleasure”, which is what I totally to say to people at work when I am super busy and it’s more in a facetious tone

    All that produce for $6, I love my hippies!

    With that, I had a BIG salad for lunch with romaine, mushrooms, tomatoes, cucumbers, zucchini, ham, onion and tuna salad with my beloved fat free honey mustard. Seriously, if you haven’t tried their FF honey mustard, please do-it’s out of this world!

    Anyone remember that tv show? I used to love watching it and dearly miss the fashion of the late 80’s

    A late afternoon sugar rush is always necessary on a bad day. Swedish fish are the bane of my existence.

    By the time I got off work, I had zero mental energy. I just wanted to get home, change into my comfy clothes and zone out. After reading Monique’s post about having home-made take out the other night, I knew that was going to be the meal plan for the night!

    My favorite Trader Joe’s product of ALL time—Mandarin Orange Chicken. If you haven’t tried this, it really does taste like something you would get when eating out (if not better)

    While that was baking, I cooked up some quinoa and red pepper, onion and zucchini…..and voila—home made take out!

    Hope everyone’s weekend is off to a great start! I took a huge nap after dinner so I am all out of whack time wise right now.

    Big on the Pig

    So, I feel if I eat anymore pig at this point, I am going to explode. But it may just be work it with the good eats I’ve had the past couple of days! Work has been super stressful the last two days, we have had one person out for the past week and a half. On top of that, I rolled into work yesterday and another girl was sick and my manager came right over to my desk when I walked in and told me she was leaving because her mother in law passed away the night before. Oi Vey! It’s like one bad thing keeps happening to our team plus we have some of our highest volumes EVER so it’s a tad frustrating at this point.

    Good thing I can now sleep in later, have my morning cup of joe and make breakfast at home instead of scarfing it down at my desk. I present, pig eat #1

    Egg, cheese, ham and avocado sandwich on a whole wheat bagel thin. Talk about a filling and somewhat nutritious meal. This kept me full for a while and I am a fan of that

    Leftover pad thai from Monday for lunch from Thai Thai. It was actually good this time, much to my surprise. I think it had to do something with the sauce , when I got it on Monday it was super soupy and think it overrode every other flavor.

    A peach that did not come from a can…..that was put there by a man….in a factory downtown. Sheesh, I remember seeing Presidents of the USA in concert when I was 16 and now that I think of that, I feel old.

    Work dragged on and I felt like it would never end. However, I did get everything done and left in time to meet up with some other ladies at the Cajun Queen, a New Orleans themed restaurant here in Charlotte that I’ve been wanting to check out for a long time!

    Blackened Catfish with garlic mashed potatoes and broccoli. Go me for keeping it kinda healthy! I was proud of myself for not getting A) Pig or B) a dish with a cream sauce because I love me anything roux. This was good but nothing out of this world. I personally like stuff really spicy and it has a kick but no distinct flavors popped out. One of the other girls, got the Diane Chicken (Mushrooms, garlic, butter, green onions, parsley and Queen’s Magic spices) and it was fabulous, I would try that if I was to go there again.

    Omelet with cheese, avocado and ham. Another satisfying breakfast……and Chris Cuomo was on GMA this morning!

    I don’t know what it is about this man but he just knocks my socks off, rawr

    I am not into spiders at all but am really diggin this spider web in front of my place

    Catfish with quinoa topped with mushrooms, peppers and zucchini. I am loving the quinoa (so much more than brown rice at least) and can’t wait to make more creations with it!

    I was supposed to meet up with one of my girlfriends to go walk our dogs after work but after the day I had, two words came to mind.



    I had a Groupon for $30 for Icehouse South End, a relatively new restaurant near home. I’ve heard mixed things about this place off of Yelp but already had $30 worth of food and drinks (yes you could use this Groupon for liquor—score!) so why not try it out?

    Carolina Strawberry for only $2? Sign me up. I’ve had the Carolina Blonde before but never this one and was pleasantly surprised. A subtle, refreshing strawberry flavor with it that went down nicely. I guess the fact that it was only $2 helped it go down easily as well.

    My friend already ate and as much as I wanted to, we didn’t think we would be able to drink $30 worth of beer because I am not 21 anymore and have this little thing called work in the morning.

    Chips and Salsa with queso dip. The queso was out-friggin-standing. I joked around that I wanted to just take my straw and slurp it up (I was joking but 75% serious!)

    Large pulled pork plate with fries and cole slaw. It was like a little baby pig on a plate—-sorry to any vegetarians but look at the size of it! I got the large plate so we could get up to the $30 mark and so I could have leftovers. I had all of the fries because if I ever have a meal with fries, they are the first thing to go. I can’t start on anything else on my plate until they are gone since i am weird like that. The cole slaw was great—it wasn’t mayo based at all but a vinegar based one which I am a huge fan of. I had a few bites of the pork but boxed pretty much all of it up so I can enjoy this wknd.


    Saranac Pomegranate Wheat. I feel like I’ve had my vitamins for the day through my strawberry and pomegranate infused beer-go me! And who doesn’t love a beer that has a bear juggling pomegranates? That right there? Is just fun.

    All in all, I really enjoyed this place. The service was good, fairly priced food and I believe they had a beer selection of over 200 beers. Word on the street (ok or their website) is that they have some pretty good drink specials also like $4 Margaritas on Tuesdays, which I would totally check out. More so than $1 Margaritas at San Antonio’s, blech.

    I looooooove the view of the Duke building from South End!

    On that note, I am outta here—hope everyone had a fabulous thirsty Thursday like I did!

    98 Degrees

    And no, not talking about these guys.

    Although, I do kinda miss the boy band craze of the late 90’s sometimes (Jeff was my favorite 98 Degree-er)

    That’s how hot it was today. 85 degrees by 10A and just nastiness outside. I feel like I am living back in Phoenix but with humidity. Make. It. Stop.

    I had such a wonderful day off and felt like I got so much done. I was in normal spirits, had more energy, etc. it’s a real shame that this work thing gets in the way of my life schedule. But, gotta pay the bills right?

    I slept in until 745A (which was just fabulous), I felt so rested and relaxed, it wasn’t even funny. I made an egg and egg white omelet with red peppers and Trader Joe’s Feta with Mediterranean Herbs

    I was waiting on the washer/dryer company to come pick up my set but of course they gave me a six-hour time frame in between 8A and 2P so I lounged around while Lincoln sat out looking at the window. He wasn’t doing anything, just sitting there. It really makes me wonder what he does when I’m at work or away. I’m really tempted to get a nanny cam but then if I see he is just sitting there bored, I will feel sad about going to work and having a life. Look at how he was glaring at me!

    There was only one thing to do at that point-Fight Club Chihuahua Style. I got a puppet dog out of Lincoln’s Baby Bin (a bin with 20+ babies aka toys) and we had a training session.

    Don’t worry, I have no intention of fighting Lincoln and am disgusted when I hear about dog fighting. I think people who fight their dogs should get thrown in a pit full of hungry, vicious dogs and let them go to town. I just want to know Lincoln can hold his own if he ever gets into a “situation” when someone is trying to mess with him. Good session indeed. I was on such a high from training Lincoln (and kinda was feeling like Mickey Goldmill) that I put him in my room and had a workout session of my own.

    The delivery guy came right after that once I was in my normal clothes again and not looking like a complete wreck. Lincoln is a quiet dog for the most part but barks anytime a stranger comes and goes absolutely berserk when a man comes in, he just doesn’t like them (which is not good for my game). The delivery man came in and not one peep from Lincoln, which really perplexed me. I was telling the guy this and noticed he had an accent and asked him where he was from originally and he responded with “Mexico” then I said “Ahhhh it’s b/c you’re of the same ethnicity—he’s part Chihuahua!” LOL he thought that was funny (all I’m ever looking for is some laughs to validate my great sense of humor and wit) and he went over to Lincoln, pet him and said “Hola amigo!” It was cute. I went to the pool for two hours afterwards and had the entire thing to myself—it was great! I was sure to re-apply the sunscreen every 20 minutes because I didn’t want to burn and need to protect my money-maker as much as I can.

    I was famished by the time I got in and made a tuna melt for lunch. It was so nice to make my lunch, listen to the Beatles and dance around the kitchen for once. I always listen to music when I am cooking or prepping and it makes it an even happier event than normal. I mixed tuna with Light Mayo, pepper, paprika, red pepper flakes with red pepper and onion and placed on two toasted pieces of whole wheat bread and topped with tomato and 2 slices of Monterrey Jack cheese then broiled for 10 minutes and served with a side of Trader Joe’s Organic Baked Nacho Tortilla Chips with Tabasco sauce.

    I spent the rest of the afternoon shopping, I got some cute clothes for NYC and some accessories to go with and had an iced coconut coffee with skim milk from Dunkin Donuts. Ummm, why does it look like an Arnold Palmer?

    Broke into my Newman’s Own Organic Champion Chip Cookies-Double Chocolate Chip

    It’s 160 calories per serving, which is only four cookies. Edit, four small cookies. I enjoyed the taste, they were super chocolate and mint flavored but wouldn’t buy these on my own based on that serving size (I won these in a giveaway)

    I am still on Operation Clean Out My Kitchen so for dinner I made Health Is Wealth Jalapeno and Cheese Munchees

    I’ve never tried any of their products before so I was super excited because I love trying new stuff! I bought these on a whim awhile back but you never know with the frozen products how they will turn out. They reminded me of Totino Pizza Rolls.

    They only took eight minutes to cook in the oven and I served with a baby spinach salad with onion, zucchini, tomato and cucumbers topped with Red Vinegar and T Marzetti’s Light Ancho Chipotle Ranch

    I sipped on my new favorite—cucumber water, so refreshing!

    Today was all about beauty. I stayed up until 2A last night (which is late for me, even on a weekend!) thanks to the coffee and woke up around 9A. I was seriously dragging. Dragging so much that I poured coffee grinds into the water filter area of my coffee pot and water into the grinds filter, oi. Oddly enough, the coffee was drinkable but not strong whatsoever. I made a quick breakfast of scrambled eggs, shrooms, red onions and a diced sweet potato so my belly would be full for a little.

    I went to a local spa to redeem a $50 gift certificate that I bought for $25 off of Groupon. I got the Deluxe Pedicure which was hands down the best pedicure I’ve ever had. Even better than this one that I also got off of Groupon. It was nice because there was only two pedicure chairs so it was very detail oriented. I got a paraffin wax, peppermint sugar scrub and some kind of menthol peppermint lotion of my feet. I got my piggies done in a beautiful “Last Tango”

    No Yuengling for me today since I had a hair appointment shortly after and it is with a new stylist for me and didn’t really want to be sauced for it. I’ve been going to my stylist for the last two years and she recently moved to a new location which is about 30 minutes further from the 30 minutes she was already from me. I am really not too keen on making a two-hour trip to get my hair did (I’m a diva what can I say?) and thought I would try someone new. I was out walking Lincoln a few weeks ago and I started chatting with a girl while she was walking her dog and got her info. Turns out she is 10 minutes from my apartment with the same rates as my stylist so I decided to give her a shot.

    I was early so I stopped at Dunkin Donuts for a large iced coconut coffee with half and half and snacked on a kiwi and banana on the way to my appointment. I hate having appointments in the mid afternoon since I don’t have time to pick up lunch.

     Check out the area where I got to lounge when my color was setting! An Ottoman, magazines and cable!!?? Bring it.

    Naturally, I turned on Bravo in hopes of catching up on some Real Housewives and I lucked out with the Real Housewives of NY Reunion—hello drama!

    I touched up my blonde highlights and chopped my hair off! I’ve been trying to grow it out but it is just blah when it gets long b/c it’s so thick and full so I thought a cute, shorter look for the summer would be fun.

    I’m diggin it so far but I keep running my fingers through my hair wondering where all my hair is! I got back home to have a late lunch-some beautiful sushi that I got at Reid’s yesterday—Sushicado and LBJ Roll

    Speaking of LBJ, Lincoln bears an uncanny resemblance to his dog, Yuki. Lincoln is presidential!!! Get it—-Lincoln—-Presidential? I crack myself up.

    I took a nap after that and woke up and popped open my Greek Salad with Grilled Chicken that I got at Reid’s and topped with T Marzetti’s Lite Ancho Chipotle Ranch

    Such a beautiful, messy salad! I finally got around to watching Valentine’s Day

    So, I know it got really bad reviews but I absolutely loved this move! Especially Jennifer Garner’s role, I think the part with the pinata was effin awesome along with the waitressing bit! Hell hath no fury like a woman scorned….

    I got some bad news this afternoon though. My friend from Phoenix texted me to let me know her dog passed away this week. I believe he was 10 or 11 yrs old and she had had him since he was a pup so it was very bad news. I used to go to her place and pay more attention to her dog than to her and would since Lionel Richie’s “Once, Twice, Three Times a Lady” to him but insert his name in there.  I cannot even imagine the pain she is going through and don’t want to think about how I will be when Lincoln’s time will come.

    So for now, I enjoy every minute I have with my beautiful pup, even if he does sometimes resemble Nick Nolte’s infamous mug shot with his crazy hair

    I got a feeling

    That if I hear “I Got a Feeling” by the Black Eyed Peas, I am going to scream and possibly hit someone. I heard it at least nine times last night and am officially over it! Besides that-oh-hi–hope everyone had a lovely weekend. Personally, I feel like mine just flew by and I really didn’t have a weekend. Between going to the wedding yesterday, packing up, dropping Lincoln off to be watched and getting back home today, I am pooped. And I just noticed it”s 9P and I still haven’t had coffee today. No wonder I feel so funkalicious, I have been meh all day and don’t feel too hungover but more meh.

    I started yesterday with scrambled eggs and turkey bacon

    Packed my bag and pakced Lincoln up and was ready to go!

    I stopped at Harris Teeter and got a six inch ham sub with lettuce, tomato, black olives and banana peppers for a quick lunch since I knew I would be eating and drinking a lot later on

    I finally broke into my FSTG Buffalo Chips as well, these have been sitting in my pantry for two months which is just uncalled for. Why didn’t I have these before? I absolutely loved them.

    Pooltime soon followed after! I was super excited to check out the pool b/c it’s a roof pool with a gorgeous view of the city.

    We hung out there for a few hours then walked over to the supermarket for food and beer…..mostly beer though.

    We picked up some Bud Light Golden Wheat and Dynamite Roll to split.

    The beer-fabulous. The sushi? Not so much. I hate imitation crab meat and I believe a dynamite roll is supposed to be spicy or have some flavor that pops but this was just nill of any kind of taste.

    Soon it was wedding time—the theme was Hollywood Night so they had a red carpet, Oscar replicas, Walk of Fame stars, etc. Plus the colors were red and black which I absolutely love.

    They had a photo booth there so my friend and I got every accessory possible on us and went to take some pics

    Oh yeah—look at the lobby of the hotel we were staying at! Yeah, it’s a Holiday Inn. Who knew they were so chic? I so want the zebra print chairs in the background.

    We changed and headed to a couple of bars afterwards. Personally, I wasn’t feeling it since it seemed like everyone who was out was 23 y.o and just a d-bag. Nothing wrong with the 23 y.o.’s but I did the whole bar thing was I was that age and am kinda over it. I kept yelling at my friends because the music was so loud and I couldn’t hear anything. And I typically don’t like to go to bars where girls dance on the bars. If it were guys dancing, that might be a different opinion though.

    We stopped at another bar after that and I was done by that point. It was 1230A, which is super late for me. Sad, I know but waking up early and drinking for eight hours kinda took a toll on me. I ordered a small Woodchuck but didn’t even finish it. I did help finish some of my friends nachos because drunk me like greasy drunk food.

    I recall singing Beautiful Nachos to Madonna’s “Beautiful Stranger”. Nice. Ok so after that, I was done. I walked back to the hotel since it was only 1.5 blocks away but still didn’t feel safe which is just horrible. Um, I live in Charlotte. Not so huge city where I should worry about walking by myself but Charlotte actually has a huge crime rate and I really don’t feel safe walking around uptown at night alone. Thankfully, there were a lot of people out so the walk back wasn’t bad but I just didn’t feel safe and felt like I was about to pass out so told my friends I was going alone.

    This morning, we went to The Penguin Drive In. The Penguin has been around for years, is constantly on Food Network and just an all around good place. They have great burgers, hot dogs, fries and more. I’ve only been a few times since the place is totally addictive but when I go, I go all out!

    And I’m not a huge sweet tea person but had three glasses because theirs is that good! Soon after, I headed back home and picked up Lincoln from my friend’s house. He was totally happy to see me and me as well. I miss him after a day, I am whipped for this dog. We came home and he looked depressed though and I have no clue why. Lincoln- I know you have a rough life of playing with your babies, running around, eating and taking naps but what’s with the depressed look? Not diggin it.

    The rest of the afternoon was spent on the couch since I was A) hungover and B) it was stifling hot and humid outside. I hate when it gets so sticky outside you don’t even want to move. I napped on the sofa and watched Mystery Diagnosis. I love Discovery Health and can watch it 24/7, it just amazes me with all the true stories. I snacked on a Jokerz Candy Bar (can you tell it’s my day off from calorie counting??) 🙂

     Dinner was Trader Joe’s Spinach and Artichoke Dip with their Organic Baked Nacho Tortillas Chips. This spin dip is one of my favorite items because it only takes 5 minutes to make and you can use on pasta and sandwiches as well.
