i love cheese

Payday is on Friday and we can view our paychecks online two days ahead of time to see how much our check will be, see any errors if any,etc.

I looked at my paycheck and was looking over the fields I get paid for such as regular, holiday, sick, etc. and saw this

Well, smack me on the butt and call me The Situation!

What is GTL? And why am I getting paid for it? I don’t go to the gym anymore, don’t tan and do laundry on Sundays so that can’t be it but now I am curious…..

Today was quarter end which is normally madness but it was pretty quiet but the floodgates will open up tomorrow.

My breakfast was oatmeal with sliced peaches, half a baked yellow apple, unsweeted coconut and a dallop of Trader Joe’s Greek Yogurt

I will never tire of the hot/cold combo of oats and greek yogurt. And I don’t know if I can ever eat regular yogurt again after being exposed to the thickness of the greek….man!!! LOL JK Greek Yogurt, just seeing if you’re reading.

 This morning was uneventful. I went to the Bucks and got a Venti Pike with soymilk and two pumps sugar free cinnamon dolce.

Now that I think about it, that’s the most interesting thing that happened.

The nice thing about quarter end is that our department caters lunch. We had Boston Market this time which was awesome since I haven’t had it in forev!!

My beautiful plate with chicken, slice of turkey, slice of brisket, sweet potatoes, macaroni and cheese, stuffing and a cookie.

I wanted to run away with the pan of macaroni and cheese but thought that wouldn’t be a smart move with our site manager in the room 🙂

I stopped at TJ’s after the bus ride home to pick up bread, salsa and these babies which I read about on Danica’s blog.

Trader Joe’s Lite Kettle Corn Snack Bags!!!

These are the perfect size, only 110 calories per bag and have four ingredients—popcorn, sugar, sunflower oil and salt. The shorter the list the better!

I’m not feeling so hot and my throat has gotten worse as the day has progressed.

I needed something easy and hot for dinner and decided on Grilled Cheese with Tomato Soup

I broke out my Trader Joe’s Low Sodium Organic Tomato and Roasted Red Pepper Soup

I love this stuff! I think the regular tomato soup brands out there are too sodium ridden and I don’t need anything helping me with feeling bloated

I used Trader Joe’s Whole Grain Bread

The statement I love cheese may be an understatement! I used Kraft Singles and shredded cheese for the grilled cheese

Grilled for seven minutes while the tomato soup was heating up and behold, the beautiful outcome:

I sprinkled some pepper on my soupn for extra flava

A perfect meal and I will be having dessert later!

If I want to go to Indiana, I need to get better by tomorrow. If not, no dice. I simply cannot go be all high energy and make an 18 hour trip by myself if I am sick. Boooooooo!

But then on the flip side, if I do get worse I will have to go see my hot doctor who is a younger and less white-haired version of this fella

I was reading.watching Kelly’s Blog and Vlog last night and she was talked about how it’s the end of the first quarter of the year, what have you accomplished? She made a terrific point of how we are evaluated at work on our performance by month.quarter.etc. but do ever evaluate our accomplishments, things we can work on, etc. when it comes to our health and fitness? I never thought of it that way and I think it is a totally valid point. I know I say I am going to eat healthier, work out more, etc. but how am I accountable for that? I am going to think about this further when I don’t have a horrible headache and feel like I can breathe and figure out what my goals for the second quarter are going to be health and fitness wise.

What I accomplished in the first quarter of 2010

*Bought a kettlebell

*Tried many new foods such as

-Brussel Sprouts

-Tempeh

-Baby Spinach and Green Monsters

-Incorporate more fish in my diet

-Spaghetti Squash

-Rolled Oats

*Ran my first 5K!!!

Things that I could have done a better job on

*Work out more with kettlebell

*Have a more structured running plan

*Snack less

*Not buy 75% off Valentine’s Day chocolate

*Track what I eat

*Listen to what my body wants not want my head wants

*Stop making excuss or justifications for what I eat

*Drink less beer

I encourage you to check out Kelly’s blog. She is so high energy, motivating and I don’t really think she’s human since she seems to do it all! And I would give up cheese if I could have her arms and shoulders in return. And her vlogs are hilarious.

Do you have a quick minute?

I really, really, really hate when people say this. “Do you have a quick second?” is even worse but still, what kind of world do we live in that a minute isn’t quick enough? I don’t want to be lied to, if you need me just ask if I have a few very long minutes. I will respond a little more enthusiastically I’m sure.

Ugh, Tuesday. It’s good to see you again . You have no feeling but I still suffer through you each wk. On the flip side- I woke up to David Muir-hello beautiful man!

I love sleeping in and getting to catch some of GMA before I catch the late bus into work. The only thing that sucks is that the late bus is always full (can you blame people for wanting to sleep in?) so I have to go all the way to the back of the bus and get crammed in the last row. Makes me think of this

I forgot my Fit & Fresh cup at work so regular coffee and no GM today but tomorrow it’s on! When I went to Earthfare this wknd, big packages of baby spinach were on sale for $1.99 so I stocked up. Those puppies are usually $3.79 so when I see it for cheap, I horde all that I can.

I grabbed an iced coffee from Starbucks with cream and 2 pumps of sugar free cinnamon dolce-so refreshing!

 I had a granola bar since breakfast wouldn’t be until later. I like taking the late bus because I can sleep in (duh!), have a little to eat in the AM along with my coffee and be fine until 10A or 11A when I have my real breakfast. When I go into work earlier, I am famished and end up breakfasting it up around 8A and then hungry again at 10A.

I decided to give Oikos Honey another chance since I bought five for $5 the other day. I gave it another chance more so for that fact alone because I am super frugal and hate wasting food. I paired it up with strawberries, flax, unsweetened coconut and granola.

Oh Oikos—you redeemed yourself! This was great and not a fail like last Friday when I tried it or TJ’s European Style Chocolate yogurt yesterday.

I tried Brothers All Natural Fruit Crisps that I won over on Live, Love, Eat and Play

WOW. I was pleasantly surprised. I normally don’t like the crisp snacks but these were amazing!! The taste was fresh and light. It was a perfect snack to get me through to lunch. I will be trying these again and with stats like that, you can’t go wrong. Thanks Brothers!!!

I was super busy at work which was great! It makes the day go by faster and in general, I just work better with deadlines and have a number of things to do before I leave. Before I knew it, it was lunch time and I got to dig into my tofu pad thai leftovers from Sunday night. I was so excited for this (yes I get excited about food, I can’t help it!) It was fabulous !

And right after that—I found a picture of me from the 5K on Saturday!

Soon it was time to go home but for once, a success of a day! Nothing extraordinary happened but I wasn’t depressed at work for once. So yay for not being sad at work! Now if I only had co-workers who liked to go to lunch or happy hour …..

I was reading Whole Body Love the other day and learned that Kashi is made by Kelloggs, which I never knew. I decided to look further into this and didn’t know some of these organic brands were owned by big parent corporate companies…click here for a beautiful flow chart. Some examples are—

I was craving mexican for dinner (shocker) and got yet another bag of avocados at Trader Joe’s so it was on like donkey kong! I decided to try something other than quesadillas or nachos which are my two staples. Thank god I don’t know how to make flautas-that would be the death of me!

I went with a taco salad made with baby spinach, black beans, Morningstar Veggie Crumbles, avocado, shredded cheese, jalapenos, tomato and onion with a side of Mexi Cream dressing (salsa and greek yogurt)

Good Lord this was some good stuff and filling! The warmer is gets the more I crave  salads 24/7 !

I did a 30 minute kettlebell session along with some planks, pushups and crunches. Nothing too strenuous but it felt good to work on strength training again since running has been my main focus point the past two months. My calves are still hurting from the run on Saturday. I was talking with a co-worker who has done some races here in Charlotte and she said they always incorporate those damn hills into the races-grrrr.

Lincoln and I took a 20 minute walk and I did some cleaning while waiting for Lost.  I think it’s great this season but I zone in and out when it’s on Tuesday nights so usually re-watch during the wknd. In the past, I used to go onto the message boards online and read what everyone’s theories were for the episode that aired (have I mentioned that I am a dork!?) but haven’t really done that this season. I think it’s because it’s the last and I will have all the time in the world to do that.

My first 5K

I did it!!! I ran my first 5K and it was amazing!

Some fuelage at 6A for “Get Your Rear Into Gear 5K” hehe, I love the name.

Got the D tag on the shoe. I never knew this is how they tracked people, very cool!

I’m soooooo excited!! I repped the WVU after their HUGE win last night!!

That is me au natural. I usually wear some form of makeup (lipgloss at the least) so me stepping out like that was a rarity!

I DID IT!!!!

My final time was 43:48 with a pace of 14.03.

I know that’s not quick by any means but that’s the fastest I’ve ever gone! When I turned the corner at mile 3, my heart rate was a whopping 201 but I just pushed myself a little longer to make it to the finish line!

My neighbor ran as well but she was behind me so I refueled and cooled down while I waited for her

They had tables with bananas, oranges, bread, fruit chews, pretzels and water aplenty. I took a little of each and may have snagged four or five mini bags of pretzels.

Thoughts on the 5K

*I hate hills

*My heart rate was decent for most of it but when it got to 190+ I would slow down but it hurt so much to walk (especially rough on my calves). I would start a slow trot again but tried to keep my heart rate down which was harder to do that I thought. I would have gladly walked to cool down but was in excruciating pain. Running wise, I was fine–calves, hamstring, feet, etc. didn’t hurt at all

*Lucacris helped get me through this race

*We ran though a historical neighborhood and there were tons of people out on their decks and yards cheering runners on. It was so encouraging and sweet– these complete strangers just cheering us on and telling us we could do it–it made me smile and restored my faith in humanity 🙂

*Yay for no spitting! I usually have to hauck one out (no clue how to spell that) a few times during a run but none today

*I wish I would have drank more water. I had about 30 oz beforehand and they only had one water station so the water tent was the first thing I walked over to when finished.

*Said water station was across the street from the Salvation Army Thrift Store and it took everything in me not to go in.

*The Hives “Try It Again” was the song I was listening to when crossing the finish line. I love this song because it is high energy and super motivating.

*I thought I would cry or be swept up in a wave of emotion after I crossed the finish line but didn’t. I was in total awe that I just ran a 5K and proud of myself. I can’t believe I did it but did and will do it again!

I came home to a nice surprise….2 huge boxes of Brothers All Natural Crisps that I won over on Morgan’s blog. Thanks again!! Review to come soon 🙂

I made black bean and avocado quesadillas for lunch.

Oh Mexican food, I wish I could quit you.

I then took a warm bubble, caught up on reading and maybe fit an hour nap in there.

For dinner, I made pizza  with Trader Joe’s Whole Wheat Pizza Dough since it’s been awhile

Topped it with the veggies, light sauce, turkey pepperoni and mozzarella

One of these days, I will make a circular pizza. I like that mine are in funky shapes, it gives it personality.

Hockey guys are hot

This afternoon was full of fun- I got a lot done!

I’m a poet and didn’t even know it-hehe.

I took Lincoln to the dog park and there was the most dogs I have ever seen at one time! I counted 27 little ones at one point and we stayed for about an hour. We were going to stay longer but this Boston Terrier kept nipping at Lincoln’s tail and Lincoln started whimpering 😦 Poor baby.

We came home and I heated up leftover’s from Azteca last night. I had some rice and beans (I could eat this every day!!) and half an enchilada

The day was nearing to an end and I decided to go for a much needed run after GorgeFest 2010 this past wknd. I did about 3.6 miles and ran most of it but had to walk a bit. I don’t know what was up with my lungs today but they were just not wanting to cooperate with me.

I came home and the Men’s Olympic Hockey game between the US and Canada was still on. What. A. Game!!!!

And those men are hot–I have always been attracted to football players but bonjour hockey men, nice to meet ya!

I nourished with a Green Monster (Soy Milk, Spinach, Frozen Banana and Chocolate Whey)

Drinking one out of this cup always makes me smile. I don’t know if it’s because of the dogs or beer but it does 🙂

Does anyone have any good recipes for acorn squash or how to prepare? I have heard about it alot but never cooked with it, so if you do—let a sister know!

  I cannot believe my first 5K is in less than two wks and I am nervous about it! But excited at the same time. I think nervous because I don’t know what to expect and don’t know what the process is. I am expecting someone on a golf cart and a bullhorn to follow me and yell at me if I start walking lol. I hope this isn’t the case!  I am not trying to be gross but when I run, I find that I need to spit. Do I just do it or is there some proper etiquette? I like to think that I am once twice three times a lady but didn’t know if you could forgot about it or let it out?

  After today’s run, I am in complete pain. Please tell me this running thing gets easier and I won’t be aching as much. Or lie to me at least! LOL

Dinner was my take on Spicy Chicken Cakes with Aioli from myrecipes.com that I made a few times

I didn’t have bread so I used breadcrumbs and used red onion and parsley in the mix. I made about six total which is perfect for the work wk since you can nuke them or make a sandwich out of them. I had leftover fries from Five Guys and couldn’t let go to waste.

I topped with Ken’s Lite Honey Mustard and it was delish!

And a measly side of broccoli—I had a small bag with five florets sitting in my freezer and didn’t want to throw them out

Ain’t That The Tooth

Happy Monday!  I started off the day with a yummy breakfast (1.2 cup oats, 1 cup Soy milk, 1 nanner, 1/2 scoop protein powder) sorry for no picture—my cam did not want to cooperate. I finally got the nerve to book a dentist appt (after 7 yrs without one!) and went to my new dentist today at 915A. I filled out all the paperwork and patiently waited for the nurse to call me out. The front desk lady called me over and told me “Oh, yours husbands insurance is DMO not PPO and we are an out of network office.” I, of course, fount this amusing because I don’t have a husband and asked her “Oh, is he hot and does he make a lot of money??” 🙂  I was kinda bummed after that. I finally grew a set and turns out they are out of network. At least they told me beforehand. To shake this bad feeling, I went to Goodwill to find some goodies for cheap. I bought a pair of cute Nine West black heels that are perfect for work and actually comfy! 4 dolla make me holla!

After that, just went to Buckies and got a Grande Pike with two pumps SF Cinnamon dulce and soy milk. Yum!

 After that, I went to Earth Fare to wonder around and got some red quinoa, rolled oats and coconut granola. I came home, picked up my baby boy (I love federal holidays!!!) and packed up the car to go to the Dog Park.

Look at how good he is ….never happens in the car. We went to the park and sadly enough, no small dogs there. We decided to get our cardio on and walk around regardless (it has been in the 20’s the past two wks and today it was 50’s-60’s so suffice to say, we wanted to take advantage!)  I stopped at The Teet and got a turkey wrap (sub of the day $2.99 why thank you Mr. Teeter) and some oranges for the wk. Chowed on my wrap once I got home and some Food Should Taste Good Jalapeno Chips. I actually got my wrap without cheese or mayo which is muy dificulte for me. I loaded the wrap up with tomatoes, pickles, banana peppers and a yummy Dijon mustard made by Boar’s Head that has white wine in it. Will definitely be trying again! The chips were interesting…..texture wise, I really didn’t like them but I loved the jalapeno flavor. They had enough flavor that I would consider trying again.

 And I got to break out my ultra cool napkins. If I ever breed, this will be me (except I do like salt with my ‘rita’s 🙂 )

Since I was feeling productive, I decided to continue training for Couch to 5K. I went to the local Greenway and walked/ran 2.25 miles for 45 minutes. My legs didn’t hurt as much as Saturday and I felt fabulous afterwards! I called one of my girls afterwards and we met at Salvation Army to look for goodies (you know it’s a good day when you can hit two thrift stores up in one day!) and I found some awesome deals once again! I got a pair of Italian Leather Ankle Boots for $2.50 and some kitchen utensils (yes I know, which I plan on cleaning very very very well!) before using. After that, she wanted Buckies and I wanted Cold Stone since it was so gorgeous out. I was a good girl and got the Like It Guilt free sweet cream ice cream with strawberries.

We chatted outside about the horrible dating scene that is Charlotte. I love exchanging bad dates stories with friends. But in a sick way, it’s like we try to one up each other by whose circumstance is worse. Her date brought over a $5 jug of wine (which he took with him when he left!) and I have a guy who has called me 11 times in the past two days who cannot take a hint. I guess we can’t win them all. Sigh!!

After a day of running around, I came home to my beautiful dog and made some dinner. Tonight was leftovers (which I eat leftovers a lot since some recipes make so many portions, it’s a waste to throw out the food!) and it was my take on this  Baked Polenta Recipe. I made this last night but mixed it up a bit. Instead of the sausage, I used Morningstar Crumbles  and used about 4 oz. shredded Mozz and a dash of Parm.  

I reheated some of that yummy goodness and grilled some zucchini, onions, mushrooms, red pepper in a dab of evoo and garlic. All in all, a good flava filled meal!

Besides that, I am looking forward to a relaxing evening. Perhaps a bubble bath? Perhaps a read? Perhaps waiting for my Weeds Season 5 DVDs to get here on Wednesday (Thanks Netflix!!!) Cannot wait. I am seriously addicted to that show and if one has not watched, I seriously recommend it.

Do I seriously have to go back to work tomorrow? Boo to that! Cheers to a three-day work wk (I took Friday off as well since I am crafty like that!)
