Today has been a pretty relaxing day, I broke into my box of Kashi Go Lean Crisp! for breakfast and made a banana parfait with Trader Joe’s 2% Plain Greek Yogurt

I shouldn’t have eaten something so big, I completely forgot I was meeting a friend at 11A for brunch at Pewter Rose Bistro. I normally wake up so early on the weekends but slept in until 9A today so I could’ve had a banana but this was still delicious. Regardless, I’ve never been to Pewter Rose and have heard raves about their weekend brunch so it was on like Donkey Kong!!

I was contemplating getting either the Mashed Potato Omelet (cheddar cheese, bacon,scallions, sour cream) or Banana Fosters French Toast (rum butter, sweet banana cream, whipped cream,maple syrup) but french toast always wins!

The french toast was delectable and had a rich banana cream on the inside (it reminded me of the honey walnut cream cheese at Einsteins) I wanted to lick the plate but remained a lady and left one bite on my plate but everything else was happily devoured. I will be going back fo sho!

Found the Cardio Burn Yoga DVD Mari gave me when I visited NYC

Dinner was random, my stomach is still acting up a bit and I was full from the fabulous french toast I had earlier on.

I cut up two whole wheat tortillas, brushed with extra virgin olive oil, pepper and chili powder and baked at 300 degrees for 15 minutes or until crisp

Put some soup on the stove top

The “chips” came out perfect and I paired with Trader Joe’s Spicy Hummus

After a few chips, I wasn’t feeling the hummus (I don’t think I’ve ever said that in my life) so I just ate the chips plain and they were still terrific. I broke into my newly purchased bag of Trader Joe’s Wasabi Peas. I’ve seen bloggers writing about these and finally caved in and bought a bag, they were delicious!

Pretty much a boring day but I am feeling better and hope this week at work goes quickly. I am driving to Indianapolis on Friday (with Lincoln) and working overtime throughout the week so I won’t have to use any vacation time to leave early on Friday. Hope everyone had a fabulous (and perhaps more exciting) weekend than I did!

    the best thing about french toast is how different it can taste with a few changes or additions- like rum butter! mmmmmm rum butter and maple syrup…. mmmmmm!!

    K that yogurty banana kashi mess looks SO nummy ❤ such a quick and filling breakfast too which rocks!

    yay for Target finds!
    my weekend was worthy of a million YAWNS! i think we both had similar weekends.. oh well, next time right!?!

      You can’t go wrong with rum butter or nanners—they both make everything better 🙂

    I looooove scones! yours looks great and delicious! mmmmm! btw, does your pita chips get crunchy after you bake ’em? i’ve baked ’em before but they don’t get that crunchy. i might need to cook it longer.

      Yep, I was a little worried they would be soggy with the extra virgin olive oil I put on them but they turned out perfect! Maybe try flipping them as well?

      For my nieces 1st birthday–I haven’t seen her since her baptism last yr so I figured it’s time for a visit.

    I love French toast! So good!

    Making my own chips out of tortillas and baking them is quickly becoming one of my favorites! I like them so much better then regular chips! So good! They are also great sprinkled with a little cinnamon and sugar!!

      I was thinking about that when I was making the ones for the hummus dip. Anything with cinnamon and sugar is good–especially homemade. And if whipped cream happened to make it’s way into the mix, I would be in heaven!

    the french toast looks amazing! I dont know if i could leave a bite behind. I feel bad for it!
    I love wasabi peas though sometimes it burns my nostrils- i love it.

    I wish I liked french toast! That looks so perfect! At restaurants I always look longingly at people’s french toast (that’s right, i’m that creeper that looks at what everyone else is eating) then I remember that it has crusty egg and look around for someone eating pancakes or waffles.

    Your homemade chips look great! I need to do that. Love Rainbow Brite. Do you ever watch The Soup? If so, did you see when Joel McHale dressed up like Rainbow Brite. Hilarious!!!

    Breakfast overload!! Looks soooo good 🙂 Also, I’m a HUGE fan of polka dots. And stationary is just so fun. I actually just bought insanely reduced wiener dog journals from PetSmart haha. It was practically free. 🙂

      I know, it truly validates there is never such thing as too much breakfast!

      Polka dots rock and so does clearance stuff. I go to Target and SteinMart and somehow justify to myself that they are good buys. I have so many random notepads all over the place!
