A Pom Kind Of Day

The friendly people at POM Wonderful contacted me a couple of weeks ago in regards to trying their pomegranate juice. I was so excited because I love all things pomegranate but have only tried the actual juice a couple of times before (I prefer to get my pomegranate from pom flavored beer thank you very much! :) )

A little about POM Wonderful from their site

  • contain no added sugars, preservatives or colors
  • are a good source of potassium
  • are gluten-free
  • are flash pasteurized to retain both flavor and nutrients
  • are certified kosher
  • Plus they have different flavors of Pom juice that I never knew about-such as mango, kiwi, blueberry, cherry and nectarine with a myriad of different products like tea, bars, iced coffee (say whaaaaa??!!?!), shots, pills and more.

    I got their package on Friday and have been brainstorming what I could make with it. Yes, I could make a cocktail or green monster but I wanted to try cooking with it.

    With that, I decided to make Feta, Walnut and Parsley stuffed pork chops with a creamy pomegranate sauce and a side salad with pomegranate balsamic dressing

    I finally bit the bullet and bought some xanthan gum. I’ve been wanting to get these to use in my green monsters since they turn out soupy a lot of the time and to use in sauced instead of corn starch. Most recipes only call for one to two tablespoons of cornstarch so this bag is going to last me awhile!

    For the stuffing, I threw in 1/3 cup walnuts, 3 tbsp of feta and a few tbsp of parsley in the food processor and pulsed on low for about 10 seconds.

    I butterflied two pork chips and stuffed with the filling then secured with toothpicks. I rubbed a little extra virgin olive oil and black pepper on them and then cooked at 350 for 25-30 minutes

    For the creamy sauce, I threw  1/4 cup half and half with 3/4 of a POM Wonderful bottle on the stovetop with one tbsp xanthan gum and let cook on a low setting for 10 minutes until thick and bubbly. I know it kinda looks like the River of Slime from Ghostbusters 2 but don’t fear, it was tasty!

    Side salad with carrots, tomato, extra stuffing mix, quinoa topped with homemade  pomegranate balsamic vinegar. I liked the dressing a lot and never knew how easy it was to make your own dressing!

     This was such a fabulous, filling meal. It was nice to experiment with the POM Wonderful for a different flavor for my meals and I cannot wait to try it with more stuff—thanks POM Wonderful for sending me and giving me the opportunity to try your juice, I am loving it!

    I also found the mythical Chobani Pomegrante Greek Yogurt I’ve been seeing all over the blogs lately. I’ve never seen this flavor in the store before so when I saw it this past week, I practically screamed and started doing my happy dance right in the middle of Harris Teeter!

    And I got to use the free Chobani coupons I won over at Nutrition Nut on The Run so free Chobani is always nice. It was terrific! I am a bit skeptical with new flavors ever since trying Chobani’s Pineapple flavor but this did not disappoint. Thus being said, I may just turn into a pomegranate by end of day.

     Fail to plan, plan to fail….yep that’s what I would say about my lunch today

    Microwave popcorn-yum! I love the stuff but it is not filling at all. Oh, I didn’t mention I had this at work did I? Yeah. Another so busy week that I went in for five hours today just to catch up on my emails so I could get some peace of mind. I was annoyed by having to go in to do that but I kept repeating to myself “time and a half-pay, time and a half-pay, time and a half-pay” to make it bearable.

    Oh and I know how I was singing praises to Jackie Warner and her workout dvd yesterday but today? I curse the day she was born. My everything hurts and each time I step up or sit down today, I whimper a bit. It’s sad. No pain no gain right??

    I made a yummy plate of eggs topped with avocado and tabasco for breakfast.

    I got a Magic Bullet for my birthday this past December and finally opened the box today to try it out with a green monster with blueberries, almond milk, baby spinach, Spiru-Tein Blueberries & Cream protein powder (half a packet), one Splenda and 1/2 tbsp of xanthan gum

    Holy crap-why did I wait so long to use this? I absolutely loved how easy it was to use, quick it was and way more quiet than my blender. And xanthan gum, I just love it. It came out like sludge (which is a good thing!) this was more like an ice cream treat than a smoothie.

    Happy August to everyone as well, I completely forgot its first of the month!

    Things to work on for this month

    *Drink less beer. I was out of control the month of July. Ok, not alcoholic out of control but drinking way more beer than I normally do due to the ridiculously hot weather out.

    *Have a more consistent workout schedule each week. With moving and going on vacation twice in July, I didn’t get much workout time in. Again, add the nasty weather and it was a recipe for laziness on my part.

    *Cook more at home, eat out less. Now that my kitchen is all squared away and I am somewhat getting used to cooking in a smaller kitchen, I need to get back into the swing of things.

    All in all, today was a great day with work, new recipes, etc. Hope everyones August is off to an equally fabulous start!

    The World According to Lincoln

    Arf Arf, this is Lincoln.

    My momma still isn’t feeling well so I am going to write about today.

    She fell asleep while watching Food Network. I was going in and out of sleep but I could still hear the tv on. First there was this loud, annoying brunette who kept saying things like “Yumm-o” and “E.V.O.O.” I have no clue what either of those mean. Next there was this couple making comfort food and couldn’t keep their hands off each other, I was a bit put off by this. The last show I remember was a southern woman with big hair making things with a lot of butter, I liked her and her food looked good.

    My momma got up and decided to switch it up to the bedroom so we napped there for a while. She kept tossing and turning and so did I but eventually I had a dream about the cute Maltese I met yesterday who lives across the street from us. Her name is Sprinkles, she is cute and voluptuous. Momma got frustrated after a while with not being able to fall asleep so she got up to make something to eat. I don’t think she was too hungry but she needed something in her system so she made something she calls a green monster.

    She broke out the blender and threw in some baby spinach, greek yogurt, ice, frozen blueberries, a banana and vanilla protein powder and blended for a long while. It was really noisy but it came out pretty and purple.

    It must have been good b/c she slurped it up but I think she got a headache from drinking it too fast. We went back to the living room to watch tv and nap. She fell asleep to some show about wedding dresses but I really wish she would leave Animal Planet on if she is going to go to sleep so I can see some cute bitches. I’m stuck in this place all day and get to see some cuties when I go outside to do my thing but I like seeing bitches from other regions as well. Just like Ludacris, I want to have ho’s in different area codes. Throw a dog a bone!

    This is my food, Chef Michael’s Rotisserie Chicken Flavor. I love this stuff–I think they lace it with doggie crack. I don’t really get too hungry during the day and am a night eater when momma is getting a good nights rest so she can rock it at work and pay for the both of us to live. And there’s always a lot of water, I need to stay hydrated!

    We really didn’t do too much this afternoon, we went for a long walk before the rain started coming down and then just watched tv and cuddled, it was nice. She was watching this show called DC Cupcakes, about Georgetown Cupcake in DC, she was excited to watch the show because went there back in April and really enjoyed the cupcakes (but she kept saying that she liked Crumbs better).

    Soon it was dinner time, momma bought some shrimp this morning along with stir fry vegetables such as mushrooms, zucchini and onion for a healthy, cheap meal.

    I think she really enjoyed this she kept rubbing her belly and “Mmmmmm-ing” while eating it. She kept reaching for her water though so I think it was a tad too salty for her but she seemed satisfied afterwards. I hope we have more snuggle time later, her head hurts so I am sure that will be on the agenda!

    Doggone It

     Hi all—hope your weekend is going great! I feel like it’s flown by and I still have a ton of stuff to do! Yesterday instead of coffee, I made a green purple pink brown monster. Seriously, I have no clue what color this really is but thought it looked cool. I made it with 8 oz Vita Coco Water, Chobani 0% Plain Greek Yogurt, Banana, Blueberries, Mango and Baby Spinach.

     I’ve been loving this in the AM if you can’t tell. I love my coffee but just haven’t been craving it as much first thing in the morning—not sure if it’s bcause of the weather or when I make my own iced coffee at home, it is not good. I try to add more grounds and less water to make it strong but no go. Plus, I have a bunch of frozen fruit in the freezer I need to go get rid of, which brings us to breakfast.

    Three Nature’s Path Flax Waffles topped with peaches and blueberries. It looked so pretty, I almost didn’t eat it. Almost. Who am I kidding, I devoured it but the thought did cross my mind for a nano-second.

     I didnt have any plans until afternoon time so I went back to bed after breakfast. Um, I never do that…edit, I never do that when I’m not hungover. I don’t know if it’s the heat, humidity or what but I have just been taking every minute I can to rest or take a nap lately. My sleep is lacking! I woke up, showered and made a quick wrap lunch with ham, tomato and hummus. Speaking of hummus, click here for a new way to use your hummus. Well new to me, I never thought of the concept but will definitely be trying it soon!

     I met up with my friend Kristi for a free brewery tour at the Olde Mecklenberg Brewery, a fairly new brewery located here in Charlotte. It has been open for about 15 months but their business seems to be on the up and up and had good beer! We like that. I had a few pints of the Mecklenberger, a full bodied yet light beer.

    Full bodied indeed but very refreshing. Originally, I was going to try their darker ale as well but stayed with this one because I am devoted like that.

    Excuse my greasiness, me so shiny!!

    The World Cup was on and it was a packed house! We really weren’t paying attention to the game but clapped when we hear everyone clapping, boo’ed when other people did, etc. Really dug the atmosphere though, it was just a big open room full of people appreciating good beer. I am down with that.

     The wrap didn’t hold me over for too long and for some reason I was craving Subway. I hate Subway. The smell of their bread just lingers and I find it just a downright, nasty smell. Plus back in Florida, we had a lot of gas stations that had Subways within them and I can still smell how disgusting they smelled. The Five Dollar Footlong and Jared commercials don’t help either, those two alone make me scream! Personally, I would rather go to Quizno’s to get a sub b/c they are awesome in my book and they have one my most favorite commercials….EVER!!

    But I guess the beer was really good and potent because I was on a mission to find a Subway! I keep seeing commercials for the Orchard Chicken Salad and was ready to give it a go.

     It was ok. I was expecting more flavor with the fruit it had in it but it was a decent sub. Arby’s had a Chicken Salad Sandwich with apples and grapes a few years back and that was the best I had yet but this was ok. I can say it was fresh and the cucumbers were fantastic!

    Then I was on my way to pick up Monet, my friends dog that I’m dogsitting for the week.

     These dogs have such a ruff life.

    Dinner was a Greek Salad with Grilled Chicken from Reid’s that I purchased the other day 40% off. I topped with T Marzetti’s Light Ancho Chipotle Ranch. This had waaaaaaay more black olives than last time but I am actually starting to enjoy black olives so bring it.

    Despite it being humid and nasty out, I woke up at 7A today and went for a two mile walk. I felt good to get out, do something and move today rather than complaining that it’s hot. Sunday mornings are so peaceful, I love how quiet it is, not too many people out and just a hopeful feeling for a new day!

    I stopped at the Bucks and came home to make breakfast since I only had a banana before my walk. I made an egg white, ham, cheese and avocado sandwich on an Arnold Whole Wheat Sandwich Thin

    So I know it doesn’t look like much but this was one of the best breakfast sandwiches I’ve made! I loved the ham and cheese in between the egg white omelet and I used Monterrey Jack, which added a nice kick of flavor. And avocado never wrongs me or lets me down. I was pleased with the sandwich thin as well, in the past I’ve only had bagel thins and always had that pesky hole in the middle but this right here was fabulous and filling!

    Ok, off to start a bunch of things that need to get done today–starting with laying out by the pool :) I’m not going to have a pool at my new place so I need to appreciate it while I can.

    PS–Seriously? These dogs are knocked out like they did manual labor.

    Gonna Make You Sweat

    So….I believe it’s day 14 of the ridiculously hot weather (or sultry as the weatherman would say) we’ve been having here. This needs to stop, like now. I am sweating wherever I go, whether it be walking to get my mail or waiting for the bus…..at 7A or 11P. Gross. It’s only June too so I dread to see what the next few months are gonna look like. And it’s day 14 of having “Gonna Make You Sweat” by C&C Music Factory in my head and it’s getting a tad annoying. Whatever happened to them?

    And let’s talk movies! I’m happy to know I’m not the only one out there who hasn’t seen some popular flicks and looks like most of you love the Princess Bride (b/c how can you not??) and never seen either Lord of The Rings and Star Wars. I really have no desire to see Sean Astin as a dward/wizard/elf whatever they are. He will always be Rudy to me.  So yay for others out there! I had a green purple monster for a morning pick me up with baby spinach, Chobani 0% Greek Yogurt, Flax Seed and Blueberries.

    As big as a fan I am on these drinks, I am sad to say that I was not a fan. It lacked flavor and of course, the seeds were an issue. But then again, at 6A in the morning I really can’t be held accountable for good decision-making. Especially on a Friday! For the obvious reasons, I love Friday. But then again, Friday is usually busy for me at work….even though it seems like everyone is out of the office so who is sending me work and why are there always so many issues?? Hmmmm….

    My co-worker had a scrambled egg and sausage wrap from Just Fresh yesterday and didn’t finish it off and handed it to me. Seeing I will eat anything that’s in front of me (and free!) I gladly accepted! I cut up a granny smith apple to wake me up. I remember hearing somewhere they are a great food to help you wake up. Anyone else know about this?

    So I totally forgot that it is quarter end which means no work will be coming my way until next week. I had nothing to do—so fabulous! It’s pay-day as well so I got to do a little budgeting around my trip to NYC, pay bills, etc and it was nice to not have to worry about deadlines and a ridiculous volume.

    Lunch was purchased at Reid’s @ their deli yesterday–chicken tenders and greek pasta salad.

    Hello lovely plate of comfort. And hello artichokes! This was about 3/4 of the container, I made myself throw out the rest because I would have been licking the container clean!

    I still had half of cupcake from yesterday but I couldn’t bring myself to throw that away. That would be wrong, right??

    And then after pigging out, three words hit me—New York City—in one week! No one was at the office so I was doing my happy dance, jumping up and down, shaking my booty and shrieking. I think a large part of this was due to the sugar in the cupcake and excitement about my trip. Then this song came on Pandora—very freaky!

    I’m so pumped up for this trip but I really think I am going to be depressed when I get back. I always get sad when I get back from vaca’s because I have to come back to real life and usually go to more exciting places than where I live and it’s just a bummer.  NYC has three of my favorite things in life—food, hot men and shopping. Why would I want to come back here?

    I caught the early bus home and greeted by Lincoln in no time. I love how excited he is when I get home but then my mind get to thinking, he would love a little brother. They could have so much fun during the day and play but I think that would break his heart. And let’s not talk about the money factor as well! This is why I can’t go to Petsmart or any of those places on the wknd….I’m afraid I’m going to come back with a little brother for Lincoln (I’ve never had a girl and don’t like the attention stolen from me)

    Dinner was shrimp sautéed in butter, lemon juice, paprika and pepper with a side of baked okra and onions with extra virgin olive oil, garlic and pepper. Guess I was wanting my breath to reek huh?

    I can’t remember the last time I made shrimp b/c it’s so expensive but I caught a great deal (get it…..caught….seafood?? I crack myself up) at Reid’s since their fresh seafood and meat were also 40% off.  It was so easy to make and just a few ingredients, can’t beat that it.

    I was really wanting a nap afterwards but put on my workout clothes right before cooking so I would have no excuse not to work out. Plus, I kinda ate a lot today……and not much healthy stuff either. I had an awesome sweat session though and rocked it out!

    I did 25 to 50 jumping jacks in between some sets and that really got my heart rate up there. I was sweating my booty off and so happy I wasn’t going to be seeing anyone soon. I so need a Bondi Band b/c my bandana is just not cutting it…..as cute as it is. It’s black and grey with dog bones and “Woof” on it. I originally bought it for Lincoln but I think it may be bigger than him!

    Not too shabby at all.  Some people go out on Friday nights—I cook, workout and hang with my dog. Oh the exciting life of a simple girl!

    Green monster part deux was next, I used Vita Coco Coconut Water since it’s been sitting in my fridge for months. I have no clue why I never opened it up. Love coconut. Love beverages. Am a risk taker. Still can’t figure it out but it turned out to be a nice addition and full of flavor! Also made with baby spinach, Chobani 2% Plain Greek Yogurt and a banana

    Other than that, I think it’s going to be a pretty boring weekend. I am trying to save as much as possible for my big trip next week  and am dog sitting until Thursday so there will be two crazy pups here (and yes, there will be pictures). Pool time will definitely be fit in and I may hit up a Good Will or two. One of my co-workers with a truck agreed to go with me to Ikea on Sunday night to help with stuff. I had an SUV but did the whole Cash for Clunkers thing last summer and got a smaller, more gas efficient car, which I love but not a lot of room. I saved up a bunch of money this past year for newer stuff and think I am going to pick up some rugs because new place is hard wood floors and Lincoln doesn’t really dig that. But I pay the rent so he will have to suck it up! lol Besides that, a bed frame, bed storage and a kitchen cart are on the list.

    I just wasn’t feeling the coffee this morning but craving something cold with this crazy, hot weather and opted for a Mango Green Monster. Look at how green it was! This was one of the best ever! I made with baby spinach, Chobani Plain Greek Yogurt, Frozen Mango’s, flax-seed and one packet of Splenda

    I had a diet coke on the bus so got some caffeine in my system but this green monster? Yum.

    We had a Just Fresh open today and they were offering free coffee for a month to the first 100 customers. I completely forgot about this but one of my coworkers who doesn’t drink coffee went and got a breakfast pastry and had the coupon. He asked if I wanted it and I responded with “Is the pope Catholic?” Free coffee for a month?!? That’s like a dream come true! I fear that I will become like Kramer on Seinfeld when he gets free coffee for a lifetime and starts getting all jittery, has the shakes, etc.

    Beautiful. I will be there every day instead of Starbucks now. I have no loyalty whatsoever when it comes to free stuff.

    My coffee buddy came in late and I told him about the free coffee deal but by at that point they stopped giving out the free cards. I lent him mine to go get some free coffee since I am nice like that. He came back to my desk sans card. I asked him where it was and he just shrugged his shoulders. I had a knife at my desk for cutting my fruit (I’m all about the love) and pulled it out and was like “I don’t mess around when it comes to free or coffee, give it up!” and then I continued to recite lines from the Princess Bride such as “My name is Inigo Montoya, you killed my father, prepare to die!” accent and all and he looked at me like I was from outer space.

    “Hello? Princess Bride?” and again, he shrugged his shoulders and said “Never seen it” What? How has someone never seen that movie? It’s a cult classic and personally, I’ve probably seen it over 50 times since I used to love it so as a kid. He then told me he has never see Forrest Gump, Star Wars, Shawshank Redemption, etc. I haven’t seen the latter two of the three so I can relate there.

    For breakfast, I kept it simple: Half of a sweet potato and egg whites with a packet of ketchup

    For lunch, I had leftover Chicken Fried Rice.

    I walked to Reid’s in the afternoon despite it being 93 degrees out. When I am out for a good deal, nothing stands in my way. I am all about the saying “Neither rain, nor sleet nor snow….will keep me from a sale!” I ended up getting goodies there, they are closing this Saturday and the entire store is still 40% off. All of this for $15!

    I wanted to dive right into this beauty of yummy, sugary goodness but was good and only had half :)

    After work, it was time for RiverJam @ the National Whitewater Center. During the summer, the center has a free concert series every Thursday and Saturday night. It’s a beautiful venue with great live music, dog friendly and beautiful sights

    They have the River’s Edge Bar and Grill and we got a table right in the sun, which was killer, but thankfully had an umbrella-ella-ella so that helped a bit. But when it is 7P on a summer night in North Carolina, it doesn’t help that much! We kept fanning ourselves off and waiting for the sun to go down. There was a funk band playing but we were there for a little over two hours but they may have played four or five songs. It seemed like they were taking a break more than they were playing.

    Blue Moon made a much-needed appearance (not only because I had a rough day at work but because it’s summertime!)

    It did not disappoint, as fried pickles usually don’t. I never tried fried pickles until I moved to NC and wish I would have never tried them because they are slices of heaven

    I had the Apple Walnut Chicken Salad –Marinated grilled chicken atop spring mix with apples, crumbled bleu cheese and candied walnuts with Balsamic Vinegarette

    Fantastic salad! It was very refreshing and the candied walnuts added a nice sweet touch to contrast the apples. And I am all for any kind of crumbled cheese! I was looking at the hummus plate but needed something cool and refreshing and this hit the spot!

    Seriously, why has Lincoln been glaring at me lately? Dislike.

    Memories

    Happy Thursday! Thursday is my most favorite day of the week by far maybe because I was born on a Thursday or memories from college when it was ladies night?  We used to go out at 9p to catch all the specials—some had free drinks, some had specials from certain hours but we always got our drink on. One of the places had free wine and champagne for ladies from 9p to 11P and we thought we were so classy drinking that stuff since it wasn’t Natty Light or the Beast. Sad thing is that it was Franzia and probably champagne from Big Lots. We would go to the bar, grab three or four glasses and stock up. They also had $3 Captain drinks that night also so Friday morning was never a happy site. A normal view of our table on Thursday nights.

     I added half a packet of Amazing Meal Chocolate Infusion to my green monster this morning which made all the difference today. I felt like I was drinking an iced mocha and enjoyed it down to the last sip.

    I was sitting at my desk noshing on apple pieces debating whether I wanted Starbucks or not (and I was not smoking crack, some mornings I have to think really long and hard if I want some joe or not). One of my co-workers came over to my desk with a bowl of something—turns out she made breakfast for me. Hello, I could really get used to that! She brought in some steel-cut oats, which I’ve never had before but read about all the time in the blog world and cooked with raisins and added fresh blueberries, Trader Joe’s blueberry flax and unsweetened coconut (I keep a stash of the last two items in the break room). I enjoyed this a lot, I don’t think I could eat it everyday but it was a nice change from the regular instant oats I eat most of the time

    Shit went down in our meeting today. We have a roundtable at the end of each meeting and one of the girls on my team who is just as bogged down with work as I am said something about it. And I had her back 100%  but was trying to be civil about it. I keep a lot of things build in me and  I know it’s not healthy but that’s how I am. Plus, I am Italian so I kinda have a temper but have learned to keep it as minimum as I grown older. I basically said how it’s really not fair how some people (glaring over at Stinkalicious) take three or four breaks, a lunch, etc while the other girl and I barely have time to get up to walk to the bathroom(I have toyed with the idea of Depends). I offered some suggestions how to help, even if they just have 15 or 20 minutes out of their day. By that point I was talking really, really fast which with me either means A) I’m super excited! or B) I’m enraged. Guess which one it was? I shut up after thaton cool down but my manager brought us cookies, so that was nice and helped my mood a bit. I wasn’t going to have one but it would be rude for me to turn down a cookie from my superior right? Right. They were my favorite kind—chewy chocolate chip ( I don’t like hard cookies thanks to my sensitive teeth). You could totally buy me loyalty with baked goods.

    But on a lighter note, our manager told us we have to start taking a 30 minute lunch b/c it’s kinda state law. I told her I really don’t have time to take one and she said someone will cover my work for so I can so today I got to take two breaks and a lunch! It was like I’m a normal human being who can step away from my desk, it was fabulous :)

    I had some free time this morning and I went to Reid’s yet again. I heard a rumor that they were giving away free lunch today but asked three different employees and they knew nothing about that so whoever told me that, can suck it. I picked up a 6 pack of Diet Coke, kiwis, bananas, spring rolls and eel sushi –all for $11—not bad at all! I am cleaning up at Reid’s while I can, that really sucks for y’all who said places like you don’t do that when they are going out business!

    I had the grilled chicken salad I picked up Reid’s yesterday for lunch today. I brought in my own dressing-T Marzetti’s Light Ancho Chipotle Ranch to top with. I think this may be a new favorite of mine. I love ranch dressing however as of late haven’t been really digging it on my salads. Now fries, pizza crust, sandwiches is a completely different story b/c those items just taste better with ranch. And I wonder why I gained so much weight eating all of that!

    This was by far one of the best salads I’ve ever had. The grilled chicken was blackened which really added some zing to it and all the veggies were fresh. Along with a nice portion of shredded cheese? Yes please. The dressing is what really made the salad though, like I said before, this is a new favorite of mine.

    I was jamming to my Pandora at work set on The Killers station. I just love when a song I haven’t heard in forever comes on and takes you back to when you first time you heard it or when it was popular. This song takes me back to senior year in college.

    I graduated in December however the day after the ceremony, they told me I really didn’t graduate and still required one class–accounting. I was a journalism major so I was a little perplexed by that but since it was a core class, had to be completed. When I heard that, I was completely bummed because I had an internship set up with the minor league baseball team in Indianapolis and had to bail on that. I stayed an extra semester just taking that one class and waitressing the rest of the time. That’s also when I discovered the wonderfulness that was Dawson’s Creek. My sorority sisters used to watch it all the time and I would of course, make fun of them b/c thought it was so cheesy. Then TBS started playing two hours of reruns in the mornings and that’s when I got hooked. Team Pacey foreva!!

    I dated a guy two summers ago who was a Pacey lookalike and that was a beautiful vision. Too bad he was addicted to the ghanga and smoked it when he woke up, in the middle of the day and at night while watching tv. And he brought some over to my place on the second date. Who does that?? If you smoke the mary jane, rock on, however I never even mentioned it and just brought a bag over like it was a bottle of wine. Sigh.

    Dinner was an oldie but goodie–chicken tacos! Well, kinda chicken tacos. Maybe four or five little chunks on each topped with a crap load of veggies. I used Trader Joe’s Whole Grain Flour Tortillas.

    Those Trader Joe’s tortillas? Sucked. They kept falling apart and taste like cardboard. Thumbs down, TJ’s, what are you doing to me?? You’re breaking my heart over here.

    In between sets, I did a bunch of jumping, kicking, calf raises and reverse lunges.

    Dear old self who paid $50 a month for a gym membership and would only go on the elliptical  b/c you thought that was the best way to get a decent calorie burn—suck it.

    And can I just say I totally aspire to be like Jenn one day? Her KB workouts amaze me and are straight up gangsta, she truly is a girl hero!!

    It was time for green monster #2 of the day—with the rest of the packet of  Amazing Meal Chocolate Infusion, 3/4 of a packet of Justin’s Honey Peanut Butter  and almond milk

    Now, I’m sitting here enjoying my tasty chocolatey beverage and listening to U2 and remembering how much I love The Joshua Tree cd. Anytime I hear U2 it takes me back to college, to the first man (I am being nice by calling him that) who broke my heart. Every night, I have the tv on but don’t really watch it and is on more for background noise. However, after reading this post by Shelby, I turned off the tv and have been listening to music. It’s so peaceful not listening to canned laughter, annoying advertisements that are played on a loop and so on.

    What made me smile today

    1) An energizing breakfast including a green monster with milk, baby spinach, vanilla protein, cold coffee, cinnamon and ice and low fat protein pancakes topped with banana, nectarine and blueberries

    2) Eating brown rice and actually enjoying it. I like brown rice but it never tastes the same as you when you get it out. I made mine with low sodium chicken brother and added grilled mushrooms, onions and sun-dried tomatoes

    3) Finding out that everything at Reid’s (a local supermarket going out of business) had the entire store 40%!!!!  And when I say entire store-I mean everything (hooch included) Check out the goods I got—all for 45 bones!

    I even snuck a bottle of wine into work :) I wish I could break into this at work but I know I wouldn’t stop at one and then I would start telling people what I really thought about them.

    4) Having a Diet Mountain Dew in the afternoon and not caring if it will keep me up all night

    5) Lincoln!!

    Oink Oink

    Yep, that pretty much sums up the past two days for me. My eating has been a tad off course with work getting busier which equals me being tired and cranky along with some family drama going on. I am not going to get into the drama because I spent last night dealing with it, crying for hours which resulted in puffy eyes today and just feeling drained. I am sure I am overreacting about this situation but last night, I cried for two hours last night and wrote in my journal about everything I was feeling–frustration, sadness, etc. and afterwards, that made me feel a tad better. But again, enough of that.

    I started yesterday with a green monster with chocolate protein, coffee, baby spinach, almond milk and splenda. But I forgot the ice so it was a tad on the warm side….but still good!

    After reading about April’s smoothie, I am absolutely convinced I need to buy Caramel Toffee Fudge Whey. There is no way that cannot taste good!

    I had oats with peanut butter, raisins and unsweetened coconut flakes for breakfast

    Lunch was a chicken salad pita with french fries from Showmars

    Yum, I could eat this everyday.

    I got home and didn’t have a plan for dinner but had some chicken defrosting in the fridge. I decided to make chicken cakes.

    Chicken Cakes

    8 to 10 oz boneless skinless chicken breast

    1 egg

    1/4 panko or breadcrumbs

    1 tbsp mayo

    1/4 cup onions

    Salt, pepper (whatever seasonings you like, I also add garlic and chopped cilantro)

    Throw onions and cilantro in food processor than add chicken

    Mix all ingredients together in a bowl

    Form into patties (I made three with these), heat 1 to 2 tbsp vegetable oil, place cakes on the pan and cook

    I also had some sliced zucchini and mushrooms cooking on the stovetop with extra virgin olive oil, paprika, garlic salt, red pepper flakes and pepper

    I was starving when this was cooking and was trying to hold off on snacking until it was done then I remembered reading Diana’s post yesterday about eating what you want and said eff it, I’m grabbing a small bowl of chips.

    Soon enough, the patties were done and dinner time was here!

    I grabbed some wing sauce and light ranch dressing to make it buffalo-eque on placed on a kaiser roll

    Breakfast this morning was a Kashi Cookies and Cream Bar…..eaten on the bus so no pic, sorry! But this day was horrible, the puffy eyes were out and all the crying last night left my eyes so dry so my contacts were not working so well. I never wear my glasses outside the house so contacts it was and I was rubbing my eyes all day and felt like I couldn’t see. Talk about annoying. And we had three people out of the office…..on a team of six people so yeah. Not a fun day at all. I was even cussing like a truck driver when I was talking to people who I deal with….note…..I rarely cuss at work unless I am very pissed off or very very very very stressed. I had one guy email me telling me to take it easy this wk and not jump off a bridge. Eek! I am not that frustrated!

    Lunch was another take out one from Showmars—-gyro and fries

    That’s what I’m talking about! Next wk I will be planning better so I am not eating out yet again, this madness has got to stop ASAP. I hate spending money on lunch when I can eat it at home and have just been lazy in that field.

    After I got off work (at a reasonable hour to boot), there was only one thing that could make me feel better. And his name is Trader Joe.

    There once was a girl named Tiffany who lived in the land of North Carolina with her fur baby Lincoln. Tiffany had been trying to create new health goals for herself each month and one of Tiffany’s goals for the month of June was to cut back on cheese and dairy products.

    Well, that goal is clearly out the window.

    The first thing I did when I got home was cuddle with Lincoln who was absolutely psycho today. He was scratching at me, kissing me and just happy. It made me feel better. We went for a nice walk then I switched into my comfy clothes and glasses. Anyone else do this? I hate lounging around in business casual wear and when I am home for the evening, usually slip on some yoga pants and a tank top. But I always leave my ghetto baby girl big ass earrings on, go figure.

    I made a meal I haven’t made in forever—pizza rolls!

    Pizza Rolls

    Trader Joe’s Whole Wheat Pizza Dough ( I use about half of the package)

    4 slices provolone

    4 slices salami

    Turkey Pepperoni

    Ok, that’s the main ingredients so it is super easy to make and you can modify as you like. I cut the provolone and salami in half and then roll out the dough into thin strips. Top with provolone, salami and pepperoni then roll from one corner to the other and place on a greased cookie sheet. I then mix extra virgin olive oil, crushed red peppers, oregano and parmesan in a bowl and brush onto rolls before placing in the oven. Bake at 375 for 13 to 15 mins or until golden brown.

    And a cold one to wash it down with!

    I absolutely loved the World Cup Concert tonight–Shakira was my favorite performance and I need to catch some cames! Hope everyone’s having a fabulous start to the wknd!

    Inspire, Perspire?

     Yesterday was a day of meh eats.  Nothing really screamed at me and I just was not feeling my meals. I shall do pictures only because meh is the only word to describe.

    Ok so I shall speak about dinner because it was BFD—always a bomb ass meal in my book. I made egg white and egg scramble with cooked mushrooms and onions topped with avocado and ketchup with a side of spray buttered bread

    Today started off better at least. I made a green monster that was actually green instead of brown with almond milk, 1 handful baby spinach and Spiru-Tein Strawberry Protein Powder—yum!

    I felt inspired to eat something pineapple after reading Mo’s post about pineapples last night. I bought a Pineapple Chobani Greek Yogurt the other week but have been nervous to try it out. For breakfast today I mixed the pineapple greek yogurt with Kashi Crunch!, mixed berries and unsweetened coconut.

    My thought on this?

    Absolutely disgusting. It was too artificially sweet for me and just did not taste good. Sigh, I hate when I have bad Chobani experiences. I love the Chobani so much but when I try a flavor I don’t like (the only other one I didn’t like was the Chobani Champions Chocolate) it’s just a huge let down. Don’t worry Chobani, I won’t quit you. On another note, don’t judge by my desk, I work better in an organized chaos kind of atmosphere.

    We had a temp on our team start today and she sat with me all day. She has a background in finance and is talkative so that was a nice change for me. I pretty much showed her our entire job function and what we do throughout the day and it was enjoyable. I love training people and showing them our process, how our line of business works, etc. For lunch, I had chicken stir fry with snap peas, mushrooms and zucchini

    Dinner starred a new ingredient: Eggplant. The hippies have gorgeous eggplants and I always pass them by but never buy them. I decided to take a chance and buy one and make a grilled eggplant sandwich. I sliced the eggplant and grilled with extra virgin olive oil, paprika, garlic and pepper.

     While dinner was cooking, I had an appetizer of Trader Joe’s Tomato & Basil Hummus with sliced cucumbers

    Verdict? I was not impressed. The flavor didn’t pop at all and I didn’t taste a hint of basil at all. Thumbs down, TJ, thumbs down. Two of my favorite things letting me down in one day is just no bueno in my world.

    I had the eggplant on a kaiser roll with tomato slices and baby spinach with a sprinkle of balsamic vinegar and parmesan cheese along with roasted red potatoes

    And some Patriotic Pretzels for dessert…..God Bless America

    I’ve been a lazy ass as of late. I will admit that right now. I come home from work, do nothing but cook and hang out then suffer from insomnia some nights. This doesn’t make me a happy camper and definitely does not leave me wanting to work out. After I had dinner, I was sitting on the couch watching Family Guy and catching up on some blogs. I was contemplating working out and again, made the excuse that I will just do it tomorrow (as I did yesterday, the night before that and so on) and then I read this post on Kelly’s blog. That post and what she said motivated me to get off my butt and do some strength training.

    Workout:

    Kettlebell 20 lbs

    *Halos (2 sets, 12 reps)

    *Shrugs (2 sets,14reps, each side)

    *Swings (3 sets, 13 reps)

    *Squats (1 set, 14 reps)

    *Upright Deltoid Row (1 set, 13 reps)

    *Bentover Row (2 sets, 13 reps)

    Dumbbell

    *Concentration Curls (15 lbs. 1 sets, 13 reps each side)

    *Shoulder Press (15 lbs. 2 sets, 13 reps each side)

    *Bench Press (10 lbs. 2 sets, 13 reps each side)

    It was only a 25 minute workout but I was happy I did something and had a nice calorie burn and average heart rate of 148 and max of 182

    Right when I was about to chomp away, I saw little Lincoln curled up on the ottoman

    I hate how depressed he looks at times then to make it even worse, he will pick his head up, look at me then drop his head down with a big sigh. Yeah, we went for a nice 20 minute walk after that to lift his spirits. And wtf is up with dog owners with little dogs that are Lincolns size not wanting to be social? Lincoln will pull me over there (he is eight lbs and I am not a skinny girl) and then the owners will pull their dogs away from Lincoln and wont let them play. He just wants to sniff some butt, throw my dog a bone!

    At one with nature

    Today was a perfect, busy day. I passed out last night while watching SNL with Betty White. I tried to rally and stay up the whole time but the body just wasn’t having that. So sad that I used to be able to stay up until 4A with no problems but now staying up past midnight requires a nap the day of and a coffee! Oh Father Time, you suck.

    I made eggs in a hole for breakfast. Although it just looks like egg covered bread, regardless whatever you want to call it, it was great.

    I was picking up around the apartment and cleaning out my bathrooms. There was an empty Q-Tip (whatever happened to the rapper by the way? Vivrant Thing used to be one of my favorite jams) in my linen closet and I finally got the energy to pick it up and throw it out. But there was something in there and what do you know, I found the Starbucks gift card my team at work got for me for my birthday. My birthday was in December and I thought I lost it but happy times–$20 worth of Starbucks is on its way!

    It was cool out this morning yet sunny and not a cloud in the sky. I went to the pool for two hours to sun myself. I was again, the only person there which kinda baffles me. Not that I am complaining, it was peaceful and I finished My Fair Lazy. While I appreciate the quiet, I kinda missed people watching.

    I got back in and made a light lunch—Sabra Supremely Spicy Hummus, a Pocketless Pita and random veggie slices.

    This may be my new favorite hummus! Athenos and Trader Joe’s are good but this was my far the creamiest and it left me satisfied.

    After that, Lincoln and I went to the dog park for an hour so he could see his peeps then I dropped him off at home and I went to Ulta. Target and Starbucks.

    It was after 3P so I got the half price frappuccino deal they have going on this wk. I haven’t had a frapp in a looooong time but since it was only $2 something so why not. I got a Tall Coffee Frappuccino

    Delicious! Now if we only had a Sonic nearby so I can get one of their iced drinks. Or even a 7-11, some days I would almost kill for a Slurpee.

    Let’s talk about the deals I got at Ulta. They had Buy Two Get Two Free on Ulta Brand cosmetics, shampoos, etc. and other deals.

    That all would be two shampoos, one conditioner, a hairspray, face wash, body wash, sunscreen, self tanner, two nail polishes and a lipliner……all for $40! Most of it was Ulra Brand and for the three items that weren’t….Olay Facewash for $5.09 and I had a $2 coupon, the Loreal Shampoo was $4.99 and I had a $2 off coupon and the Nivea Bodywash was $5.49 and I had a $4 off coupon. I love being frugal.

    By the time I got back, it was 430P and I was already beat but didn’t want to take a nap. I went on walk/run on the greenway for over an hour. My knee has been bothering me so I walked most of the four miles but got a bit of running in there. I took a water bottle to keep me hydrated, wore a hat and lightweight clothes so it was more bearable than last time. The one thing I didn’t take with me was my ipod. I guess I felt like being one with nature today but I really enjoyed it. Not concentrating on my music allowed me to pay more attention to the greenway and the nature around it. I kept walking past gardenias that smelled amazing (and better than the scent at B&BW), listened to the birds and took notice of the colors. It was nice being able to fully concentreate on how my body felt and the atmosphere around me without Andre 3K telling me to shake it like a polaroid picture. But then I got bored without my ipod and starting making up rhymes in my head. I think I was the only person out there alone (thanks God for reminding me of that fact) and it was pretty much all families of lovers take a stroll. So I would make up stupid rhymes in my head like “The family that peddles together, meddles together” , “The couple who runs together, bakes hot buns together”. As you can tell, I could only get so far with that. I ran a bit but my knee wasn’t having that and when I had only about .5 mile to go, I thought I was about to start crying in agony. There was a sharp pain going from the back of my knee to my calf and it was just killing me. I got back and was happy because I didn’t look like a complete wreck for once!

    And had a good calorie burn

    Those two happy things could only mean one thing—-green monster!

    I made my Green Monster with Chocolate Almond Milk, Spiru-Tein Banana Protein Powder and 2 handfuls baby spinach

     Afterwards, I iced my knee, took a bubble then gave myself a manicure.

    For dinner I made zucchini cakes.

    2 zucchini’s, peeled

    1 egg

    1/3 cup breadcrumbs

    1 tbsp butter

    1-2 tbsp vegetable oil

    salt, pepper, whatever seasonings you would like to add (I prefer paprika, garlic salt and pepper)

    Chop zucchini into bits in the food processor until shredded. Pour onto a plate covered with a paper tower and top with another paper towel and squeeze moisture out (if you don’t chances are it won’t stick too well together) mix with remaining ingredients and form into patties. Heat oil in the pan and add the patties and turn every four minutes. This made three patties for me which was more than enough! I served with Ken’s Lite Honey Mustard on top and with a BIG Salad with spinach, peppers, zucchini, tomatoes, shredded cheese and Kraft Light Three Cheese Ranch

    I think the rest of the night is going to involve reading and cuddling with Lincoln. A Happy Dog-Mother’s Day indeed. And I hope all the momma”s out there (momma of kids, dogs, cats, men haha, etc.) had a fabulous and relaxing day :)
