Relaxing

Happy Memorial Day everyone! Hopefully everyone had a nice relaxing day off like I did and remember why we are all off–can’t say that enough. Thanks to all past and present who have served and protected our country! Can it be a three-day wknd every wknd? I got an outstanding 10 hours of sleep last night, which is remarkable for me. I was in a lot of pain and there was tossing and turning but sleeping in until 10A just felt right. I will work extra hours and go in early, stay late, not take lunch (hold on, I already do that). I’ve been on a major egg white kick lately if you can’t tell so I decided to kick it up a notch for breakfast.

I made rolled oats on the stove top with almond milk then chopped up two Reece’s Peanut Butter Cups and dashed some cinnamon and peanut butter in the mix.

This was a great combination but it didn’t sit well with my stomach :( I was bored and watched Dr. Phil and The View for a while. There was a ridiculous rainstorm this morning and finally a break hit so I got ready quickly and hopped over to the supermarket. Not literally of course but the way my legs were feeling, it could have happened. It hurts to sit down and let’s not even talk about going down or up stairs.

I got a lot of good deals at Bi-Lo including my Chobani’s! They were on a sale a few wknds ago for $1 each and I went a couple different times and turned out none were left. But today, I cleaned house. And they even had the Pineapple flavor I’ve been hearing so much about and I cannot wait to try it!

I checked out and was super happy-my bill was originally $107 but brought it down to $61 with all of my coupons. Because I? Am awesome with being frugal. As I was checking out, the rain started yet again and it was coming down hard. Of course I didn’t take an umbrella with me because for some reason in my mind, I think “Oh it rained once today, it can’t rain again”. Grrrr. I waited in the lobby for 10 minutes and it let down a little and decided to go as fast as I could (which is not fast at all with the condition I was in) to my car.

Lunchtime was soon approaching and I made pork tacos. Are you shocked? I promise, I will start making something different soon. I had a bit of Frank’s Red Hot wings left in my fridge and hate when I have a bottle taking up space with just a little left in it. I cut up a pork chop with covered with Frank’s and let cook on the stove top

 I spent the afternoon with Kim and Jennifer

I love Shape magazine and LOVE Kim K but wasn’t sure if I wanted to spend my money on it since the whole-she-endorses-diet-pills thing. But Janetha mentioned it was actually a good issue and I trust her judgement so I Kardashianed that bad boy up!

Along with that, I also caught up on some shows and a movie.

Umm, why have I never watched It’s Sunny in Philadelphia? I’ve had a lot of people tell me I would like it but never took their word. I added it to my Netflix queue and absolutely love it. With a little guy resting in my lap. I don’t blame him though, sometimes he does have a rough day of playing with his toys, going on walks, getting treats and such, he just has to relax.

And my battle wound from the rock yesterday is getting bigger and more colors. Yeah, it’s across my entire right thigh. Dear Grandfather Mountain-can I please have my skin back? Thanks, Tiffany.

 I made the mistake of watching the Tyra Banks show. I never had beef with Tyra, I actually used to like and respect her a lot. Kinda like a mini Oprah (pun kinda intended) in the making. But the more I watch her show, the more she drives me crazy.

I had my leftover Magical Mystery Tour Pie for dinner.

May Goal Evaluation

*Keep on running  -did not happen. I tried in the beginning of the month and my knee pain was growing worse so I decided to lay off of the running for now and just walk in the mean time.

*Think outside the running box in regards to workouts and mix it up with other things (kettlebell, yoga, etc.) -with my lack of running this has been going alright. I’ve been trying to work out with my kettle bell more and even put together a full body for out for myself with the kettlebell and different weight dumbbells I have.

*Be more aware of my sugar intake and try to keep it less than the recommended intake of 40g-I’ve been doing great with thise for someone with a sweet tooth. When looking over my food diary throughout the mnth of May, I was above 40g however those were mostly from fruits so I don’t consider that a bad thing. I think, it could be worse by having something processed as opposed to an apple or banana. I will continue to keep an eye on this though.

*Track my food and exercise on a daily basis–22 out of 31 days. Not too shabby in my book

June Goals to come tomorrow!

I’m not dead

Hi all-Happy Frickin Friday! So I’m up and running again and so happy. My settings were set to private when I looked yesterday morning (don’t recall changing this though?) and throughout yesterday and today, I would try to change it and nothing. Frustration. Thanks to everyone who checked up on me though, I would never block y’all for my blog :)

Speed Street is going on in Uptown Charlotte now-it’s a three day street festival dedicated to Nascar since there is some race during Memorial Wknd. They have vendors, live music, cars ……lots of them and endlessly roaring their engines. Normally, I wouldn’t care. But when all of this is four floors below me, it’s annoying. The bass from the music was so loud my windows were rattling and I thought there was a bomb going off or something. And we had two people out of the office yesterday so I was covering my work plus someone else’s, trying to keep my sanity with that and my blog not working while avoiding a headache, so yeah, unhappy day.

I had a Venti Skim Carmel Macchiato yesterday because hey, I needed it (ok and had a free drink coupon to the Bucks)

OMG, I haven’t had an iced one since I lived in Phoenix four years ago and it was just as good as a I remembered it! Moderation though is key, I do not need this every day and don’t need to be taking in 300 calories from something I can drink.

Breakfast was an AMAZING wrap—eggwhites, feta, roasted zucchini, potatoes and mushrooms topped with ketchup

This was tasty and it kept me full for a loooong time. Which was good since I didn’t have lunch to 2P–thanks work. Lunch was leftover-baked chicken with hummus and feta with roasted zucchini, squash, potato and mushrooms.

I love having plates at work now. I don’t feel like an animal just eating my lunch from a plastic container. And pink is so happy :)

I came home, blog still not working, which made me even more frustrated than the day left me. I picked up a box of Trader Joe’s Three Grain Blend the other night because I was out of rice and wanted to make risotto since I’ve never made it before.

I was happy and excited—I started grilled up some mushrooms in the meantime (can you tell I like the shroomies?) and took it out of the box and found this.

I didn’t expect it to be all in one block, I just thought it would be normal rice so I was kinda bummed since I didn’t want to make the whole thing because I am one girl who can only eat so much of one thing (greek yogurt,avocados and Mexican food excluded). Plus I wasn’t sure if risotto would freeze well, anyone know?

Since the shrooms were already grilling and I had black beans in the fridge, I decided to go with my old stand by of tacos.

Delicious! Last night was nothing special, I hung out, took a bubble, tried to comment on blogs but that wasn’t even happening and ended up going to bed early so I could get a good night’s sleep. I wasn’t sure if my teammate would be back in the office so I didn’t know what kind of day to expect.

This morning, I had Yoplait Greek Yogurt, Trader Joe’s Very Cherry Blend and Blueberry Flax for breakfast

Today wasn’t bad at all. My teammate was back in so I didn’t have to cover his work, my desk was slow (due to a bunch of people being out on Friday so not alot of work coming my way) and it was just relaxing for once. Very rarely do I get to say that about work. The hippies were out but not in their normal spot due to Speed Street so I had a Hippie Search going on and picked up some peaches, apples, zucchini, onion, avocado and red peppers.

I got to take my first real lunch break and went with a co-worker to explore Speed Street. The two things iI do like about it is the

 A) Fair food! They have nachos, fries, turkey legs, gyros, philly cheese steaks, crab cakes, hot dogs, etc.

B) Freebies–a bunch of different companies set up booths and give away free stuff. Being the frugal girl I am, it’s my favorite part of the madness

I’ve been talking about the gyros all week-long to everyone at work and how excited I was to have one.

Looks good right?

No. Worst Gyro EVER. It wasn’t lamb meat, it was steak like the kind in a philly cheesesteak with no flavor yet lots of grease. The tzatsiki sauce had no flavor either, it was just sour cream or yogurt and it was so greasy it fell apart. I am pissed about my aspirations for the gyro and the $8 I spent when I could have walked across the street to Showmar’s and get one plus fries for $6.

I did however, get a lot of swag.

There was a sausage stand which I may have stopped at a few times. They were giving out free sausage samples and pork roast samples and it was absolutely delicious. I think it was Smithfield’s? Anyways, I decided if I ever decided to open up a male brothel, it shall be named “The Sausage Stand” . The rest of the afternoon was slow and I got a bunch of stuff done. I was counting down the minutes until I could catch the first bus out of there. I worked 8 hours OT this wk so I had no problem whatsoever with leaving early.

I made a HUGE dinner tonight because I was famished from the half-eaten gyro. I started off with a cucumber and tomato salad with oil and vinegar topped with feta

Ever since I saw Mo’s Pretzel Coated Chicken recipe, I’ve been dreaming of it all week.

I used Ken’s Lite Honey Mustard to coat the chicken since I was feeling something creamy (that’s what she said) and crushed up some Snyder’s pretzels and served with, what else…zucchini, squash, potato and mushrooms!

This was fabulous. It was like comfort food but so easy to make and not too bad for you. I get so bored with chicken breasts that I love any recipe that will mix it up a bit.

I had an awesome strength training session tonight.

Kettlebell

Like I said, awesome workout and nice burn!

I felt really energized after and started to think that I used to go to the gym and mindlessly hop on the elliptical and not even burn that much nor feel challenged at all. I am so happy not going to a gym anymore because I feel like I’m not wasting money on it and have found new ways to work out and challenge myself.

I went to Goodwill afterwards in search of a backpack. Weather permitting, I am going on a four-hour hike on Sunday and wanted something to keep all my stuff in and I haven’t had a backpack since high school so it was time to shop for one. No way was I going to spend $30 on one so Goodwill it was! Not only did I get a backpack for $3, I got two fun plates I can bring to work (you will be seeing these in the future!) AND a new oversized red microfiber chair and matching rolling ottoman—-for $70!! I forgot my camera and didn’t have my phone in the store but the chair is gorgeous and super comfy. I didn’t have room to take it home in my car so I called a friend and she is going to help me with it in the morning since she has an SUV. So happy—pics to come!

I stopped at McD’s on the way home since I was dragging on got a Medium Iced Coffee with Cream and Two Splendas. And now I am going to be wired!!

Lost :(

I can’t believe Lost is over for good tonight. Since there is stuff on from 7P to Midnight, I had to take a two-hour nap this afternoon so I could stay awake—no way I am missing this! 

A pretty boring wknd all in all. Payday isn’t until Friday so I am kinda waiting on that since I paid more than I normally do on my credit card. I hate having all this time to do stuff but no money–sucks. 

I started yesterday with eggs in a hole with yellow apple slices on the side. 

 

 

I was pretty bored plus it was overcast out so I decided to go into work to catch up from being off on Friday and of course, get some OT pay :)  Anywho, I knocked out all of my emails from Friday plus a bunch of stuff I needed to review. I even applied for some other jobs and it felt good to be caught up. I will definitely be catching the late bus tomorrow since I won’t be going to bed until 1A or so. Ay Chihuahua. 

Yes, that would be Lincoln napping in my arms like a baby.

But happy times were soon near—the hippies were out! I didn’t have a lot of cash on me so only got a few things. 

 

I had a late lunch –I brought a California Pizza Kitchen Personal Size Margherita Pizza. 

 

 

I got home and pretty much just lounged around the rest of the night. 

I was reading The Auspicious Squirrel and saw that she made Pasta Primavera a few wks ago and  been wanting to make it (or a variation) ever since. I usually make tacos or asian stir fry with all my fresh veggies but never really thought to do it Italian style. 

I made mine with Farfalle Pasta, Chicken, Homemade Pesto, Zucchini, Tomato, Mushrooms, Onions topped with a dallop of Greek Yogurt and Feta Cheese. 

 

 

 

 

FANTASTIC! I loved this and was nice to have a cold pasta for a change. 

 I fell asleep at 9P because I’m lame then woke up, cleaned the kitchen, did laundry and watched some tv. I had dessert of Skinny Cow Chocolate Fudge Brownie single portion 

 

 

This morning, I was gearing up to go on a walk and possibly a run and made a waffle and egg breakfast sandwich using Nature’s Path Original Flax Plus Waffles. 

 

 

 

I went for a two-mile walk  which was frustrating. Both my knee and ankle were killing me so I had to stop after that but wanted to do more. I tried running a little but my body did not want to roll with that. Why is my body acting against me now? For years, I was lazy, ate horribly and just a mess and now I want to be active, be healthier, etc. and I keep having this issues. Annoying to say the least. 

I went to the pool for two hours and caught up with some friends there and by the time I got back in, I was starving! I made black bean quesadillas topped with avocado for lunch. 

 

 

I saw that Naomi made these SuperCharge Me Cookies the other day and noticed I had the ingredient list in my kitchen and have been itching to make them! I used whole wheat flour and didn’t have any coconut on me but threw in some extra raisins in there instead. It took less than five minutes to mix and made 12 big cookies. 

 

 

 Try this cookie recipe now! It was awesome, moist  and flavorful. I put in a few extra dashes of cinnamon and really enjoyed the flavor of that along with the vanilla, raisins and chocolate.  My shadow was by my side also waiting for a taste 

 

After that I took my nap, I grabbed a Diet Mountain Dew so I could jolt my system to wake up for Lost. 

 

Dinner time was nearing and I had one of my favorite meals for a night of one of my favorite shows. I made Trader Joe’s Mandarin Orange Chicken with bok choy, mushrooms, onions and snap peas. 

 

 

And that’s it. I am absolutely loving this Lost Flashback of all the moments in Lost history. I cannot wait to see what happens tonight!!

OMG I am in pain today. My kettlebell session last night was a workout and a half. It hurts to walk, sit, type, etc but oh well, bring on the pain. I may have even whimpered a bit today but I will get over it. It just means I had a good workout :)

And I am glad to know I’m not the only one who is skeeved out by the nips showing through the shirt–thanks for the comments everyone!

Today was a great day at work–not slow but not ridiculously busy. Just enough to keep me occupied yet get me out on time— we like that.

Breakfast was a repeat from yesterday-Chobani 2% Plain Yogurt with fresh strawberries, unsweetened coconut topped with Kashi Crunch Cereal. I have two boxes sitting in my kitchen and never once thought to add it to my yogurt.

Lunch was tuna salad on whole wheat with baby spinach and tomato and a bag of Trader Joe’s Lite KettleCorn

It used to be that any time I ate popcorn, I would have a Diet Coke. But I had a Diet Coke yesterday and it just tasted gross. I guess it’s actually possible I’m starting to not dig it as much after cutting down on my sugar and trying to cut down on artificial sweeteners as well. I rarely get any sugar free syrups in my morning coffee anymore (whereas I used to get two pumps Sugar Free Cinnamon Dolce every morning) and have cut down to one splenda in my coffee with a sprinkle of cinnamon. But still, not liking Diet Coke? I never thought this day would happen. Pass me the water, thank you.

And get this—this was the first lunch over 10 minutes I got to take in three weeks! I IM’ed a co-worker in another building and asked if she wanted to go for a walk and away we went. We walked 2 miles in 30 minutes and it was a great way to re-energize myself. The sun was out, we caught up on stuff and just nice not to be looking at a computer screen for a half hour.

On a daily basis at work I always have people telling me “If you’re ever in NYC or Boston, I owe you a drink” and I had a guy tell me this today. I told him that he better watch his mouth since I will be in NYC in July and he said we’re going out to lunch. Score for a free lunch! Now, to start collecting on all those drinks that I’ve been promised….

I stopped at the grocery store after I came home and took Lincoln out. I was excited because Bi-Lo had Chobani on sale for $1 so I was going to stock up. And they had none-major bummer. I got a rain check for 10 of them so I am waiting for this sale to end and stock up! They did have Yoplait Greek Yogurt on sale for $1 also but let’s be real, it’s no Chobani.

I stopped at Trader Joe’s as well since I feel like I haven’t been there in forever. In reality, it’s been five days.

And I got some new hummus (hummi?) to try!

I finally picked up a bag of their Pita Puffs

I was running low on my Kalamata Olive Hummus so took this opportunity to finish that up (if you look in the background you will see  a dog waiting for one to drop)

I’ve had a hankering for pesto lately and whipped up a batch

1 bunch of basil

2 tbsp extra virgin olive oil

2 tbsp pine nuts

1/3 cup grated parmesan

Garlic, salt and pepper (I add red pepper flakes to mine for a little bunch)

Could not be easier and such a flavorful alternative to spaghetti sauce and it’s amazing on sandwiches

Dinner was chicken breast baked with Kalamata Olive Hummus topped with feta and Farfalle Pasta with mushrooms, onions and pesto

This was a huge plate of comfort. I haven’t had a homecooked meal this good in awhile and will definitely be making this again.

And tonight is the last new episode before the series finale for Lost. I am so sad to see it go and don’t know what I am going to do without it (maybe finally catch up on Glee?) I really need to watch the last two episodes over again and may have to buy the complete series when it comes out. I am such a dork about this show. I won’t even begin to tell you how I go on the message boards to read people’s theories and such! lol

Anyone have any good suggestions for books? I finished Jen Lancaster’s latest book and can’t seem to get into anything else. I love Chick-Lit like Sophie Kinsella, Emily Giffin, Meg Cabot, etc. and mysteries. If anyone has read anything good, let me know :)

Nips

And no I don’t mean this kind

I mean this kind

All I see today are men’s nips. And it’s because of the date I went on on Saturday night. I didn’t type about this before because I was still kind of disgusted but need to let this out. So the dude I went out with had a nice button up shirt on but forgot his undershirt. And his nips were hard and sticking out through his shirt—eww. It’s all I could stare at and kept drinking in hopes that they would soon go away but they never did. Whenever I saw a guy today, I kept seeing his nips through his shirt and felt sick. I don’t know if he was secretly rubbing ice on those babies or just aroused (I cmon look at me lol) but yeah, seriously just grossed me out.  Ay chihuahua

I’m scarred.

Onto brighter things, I hate this hot, sticky weather. Not only do I feel nasty and can’t do my hair, I want something cold all the time and preferably ice cream. I need to get off this kick ASAP. I tried Blue Bunny Frozen Yogurt last night and it was terrific. I buy the single portions for myself because when it comes to ice cream or chips, I have no portion control whatsoever.

Lincoln gave it two paws up as well

It was a nasty day today, all rainy and humid. I have a rough time on Mondays in the first place so the weather did not help at all. Plus, I had a dream last night that Cher and Alex Baldwin teamed up and were trying to kill me so I was kinda perturbed waking up.

Chobani was on sale for $1 each at the supermarket this wknd and stocked up on plain since that’s all they had. I had Chobani 2% Plain Yogurt with fresh strawberries, coconut and coconut granola for breakfast

This morning was busy so it went by quickly and not too many issues on hand.

Once again, I celebrated National Salad Month and had a BIG Salad with baby spinach, bella mushrooms, zucchini, cucumbers and tuna salad topped with Kraft Light Three Cheese Ranch

Holy effballs, two days from hell in a row. Not cool. I just noticed I didn’t post food pics from yesterday so this will be a foodlicious post.

Let’s start with the food because, cmon, it’s a lot more fun than work talk!

Breakfast yesterday was a good bowl of oats with banana, coconut and blueberry flax

And of course, a BIG salad in celebration National Salad Month with baby spinach, carrots, kidney beans, tomato, cheese, chicken, peas with Ken’s Lite Honey Mustard dressing.

Last night, I couldn’t fall asleep for the life of me. I only got four hours of sleep the night before and was up until almost 1A last night (morning?)…..grrrr!

I started out with a Kashi Go Lean Chocolate Peanut Bar this morning

I went into Starbucks ready for a HOT Venti drip coffee and they told me they were out of hot water. What? Isn’t this what most of your business is based off of? I got a Venti Iced Coffee instead but wasn’t happy about it. It was cold and rainy this morning so wanted a warm cup of happiness. I could have gotten a cup of the breakroom stuff but don’t want to start growing hair on my chest.

I then had a bowl of Chobani Strawberry Greek Yogurt with coconut granola.

And still hungry. One may say ravenous. And then I starting having horrible stomach aches and realized I had a friend in town, meh. I was just in a rotten mood. When someone called, I was rude which I never am at work no matter how busy or crappy of a mood I’m in. I have some apology calls to make to people who I was rude to today. And people kept looking at my strange because I had my hoodie on with my hood up on my head ala the Unibomber.

And my hair looked like crap. And I forgot my lipstick so I just felt weird without having any on yes (yes I do wear lipstick to take Lincoln out and to the grocery store). Since it was raining, the hippies weren’t out today either, meh.

I brought my lunch with me but just didn’t want it. I want something greasy. Something fatty. Something fried. And that left me with one place in mind—Bojangles!!

Awwww yeah.

I got a horrible for me meal….a leg and thigh with fries and a biscuit….and a 32 oz Mountain Dew. If I was going all out, I was going to go all out.

It was delicious.

Soon after though, I felt nauseous. And then remembered why I don’t eat fast food that much anymore. How on earth did I used to put this in my body multiple times per wk year after year? Dear Body, my sincerest apologies. This afternoon was a big mess of sickness, tiredness and stress. Not a good combination. I tried to leave early but that was a no go.

 

I took Lincoln for a walk, talked on the phone with my sister and parentals and was actually in a good mood despite the horrible day. I was off to make dinner, which was a complete 180 from my lunch.

I nuked some veggies that had been sitting in the freezer forever

Made some red quinoa…..which was new for me.

And baked a catfish filet with lemon juice, butter, lemon pepper seasoning and paprika

A balanced dinner!

Not sure how I feel about the quinoa though….anyone have any tips on cooking it or types they like?

Getting ready to watch Lost soon and can we talk about Sex and The City 2 coming out soon???!! Cannot wait! I liked the movie but still love the show more but fell in love with the first soundtrack and can’t wait to hear what the second one is like.

Goals, Tacos and Goodies

April Goal Evaluation

*Track my food every day online along with tracking my activity for the day. Result? 20 days out of 30. I was on vacation for five days just slacked the other ten.

*Work out at least 4 times a week (I will schedule what my workouts will be in advance so I can’t cancel out because I don’t want to). Result? Slacked on this big time, I averaged three workouts a wk and did not like having planned workouts at all. I’m more of a free spirit so I will not be planning out in the future but will be thinking about what I would like to do and when I can do it

*When I get a craving at night or on the weekend, I will give at least 20 minutes to think about the craving and if it’s something I really want. Result? Success! If I was wanting something salty or sweet, I would talk a walk with Lincoln, drink water or pop a Werther’s Original in my mouth

*Sign up for another 5K ! Result? Success–signed up to the do the Great Harvest Bread 5K on May 22nd

*Keep a positive attitude at work. Result? Success! As much as I complained on here, I tried to keep positive at work and did a great job. I think I only cried a few times at work the entire month (which is great seeing I used to cry every day there!)

All in all, I think April was a pretty good month but I definitely need to stay on the ball with tracking my food and working out. I did my measurements this morning and here are those results:

Lost 2 lbs
1” lost in bust
2” lost in waist
.5” lost in hips
1” lost in thighs

Another sleepless night. I really need to cut down on my caffeine intake but that is going to a major adjustment for me so I will have to bring it down slowly. Do I really need three cups of coffee a day? No. Do I want it? Yes. But then again, I would like to sleep for over six hours just one evening so a cutting I will do!

For breakfast I had half a container of Trader Joe’s Apricot-Mango Greek Yogurt, frozen blueberries, Trader Joe’s Blueberry Flax and Coconut Granola.

And Starbucks is having a Frappuccino Happy Hour May 7-16th?? What What!!!

I haven’t had a Frappuccino in forever but I think it will be a sweet treat and an afternoon pick me up.

I wasn’t too busy this morning so caught up on my news and saw this story.How could someone go on a stabbing spree at Target? Target is absolutely one of the happiest places in the world (especially since they merged with Starbucks) and I can’t imagine anyone that deranged to do that there. Maybe because when you go into Target for aluminum foil and come out $150 later with clearance clothes, accessories and makeup …which always seems to happen to me. But still, I am not that crazed enough stabbing innocent people. Oh society, what happened?

I went to the hippies today and got some awesome deals—-organic spring mix, tomatoes, zucchini, cucumbers, apple, okra, potatoes and peppers.

All for under 10 bones too. Love the hippies :)

And look at this pepper-it is so beautiful and fresh I don’t want to eat it. But will……

Lunch was leftover lasagna.

I am a fan of any meal that I can freeze a month ago and then take it out, pop it in the microwave for five minutes and voila-a filling and tasty lunch!

I went to the library to get some reads because nothing is intriguing me these days. This book looked interesting-Holly’s Inbox

The reader’s access to Holly’s frantic life is via her e-mail inbox—the entirety of the novel, in fact, is e-mail messages sent by, among others, her gay best friend (a chick lit necessity), her brassy co-workers (another requirement), her meddling mother (check, again) and, of course, her would-be paramour (ditto). The plot runs along very traditional lines, and in the end overreaches for a happy ending, but this overlong novel’s saving graces are its fast pacing and very funny writing. Some of the best exchanges are between Holly and her grandmother, who sends e-mails that just read TESTING and signs her up for annoyingly spammy Web services. Despite the limitations inherent in an e-epistolary novel, the book is populated by vibrant, endearing characters, and Denham manages to juggle a dozen story lines at once. The ending’s contrived, but feel-good, which, in these gloomy times, might be enough to do the trick. (June)

I saw Scott Stapp lookalike a little before I left work and  he said “Hi”. We like that!! And I smiled and batted my eyelashes and said “Hey”. And I didn’t shimmy! Finally, I didn’t look like a herb in front of him. But maybe he is wondering why I didn’t shimmy and that I am not longer attracted to him. Anywho, I realized that he always does the no teeth smile so I really don’t know what his dental situation is. I think he has nice teeth but let’s just hope he is not like

I wanted to use my produce right away and had frozen tuna defrosting in the fridge today and decided on Fish Tacos for dinner.

I cut into little pieces and let marinate in lemon juice for 20 minutes

I cut up the tomato, peppers and onion. Does anyone else find chopping therapeutic? I think it helps me  de-stress.

I warmed up a tbsp of butter and then threw the tuna on the stovetop along with some garlic at the end.

While the tuna was warming up, I threw some cilantro, jalapenos and lemon juice in the food processor to top the tacos with

Voila!

Fabulosity. I love the zing of the cilantro and jalapeno and of course, the freshness of the meal. I even had some tuna leftover to use for my lunch tomorrow!

I hung out with Lincoln then watched some tv and decided to get out for a run/walk. I covered almost 4 miles and had a pretty decent calorie burn…about 700 cals altogether (this picture is just on the way back since I took a water break at the pavilion)

I just wasn’t feeling it and really had to push myself. Again, the lungs were just not wanting to have me run so I walked a fair amount. I had a big water bottle with me and kept trying to hydrate but just not diggin the warm weather running so this may be a little issue since it’s going to be warm out for the next six months. Hmmmm.

My legs were jello my the time I got home and in excruciating pain. What could make me feel better? A green monster!! I made mine with Chocolate Almond Milk, Spinach, Vanilla Protein Powder and 2 tbsp Crazy Richards Creamy Peanut Butter.

I need to pass out soon. Hope everyone had a great Tuesday  :)

Nightime Napping

It’s 9P as I’m starting to write this and I just woke up an hour ago from a nap. Was I planning on napping? Hell no. Did it feel good? Hell yes. Will I have trouble going to bed tonight? Another hell yes. But I just feel gooooood right now so bring it on. And there’s only one more day to go! I stayed late at work today due to a problem that should have been fixed a month ago but never was and now that it’s month end, needed to be resolved.

I had greek yogurt soup for breakfast. I put in extra frozen berries and it’s juice along with the greek yogurt and it just got a little too liquidy so I added granola on top for a cereal like effect. I didn’t like it at all and will need to watch my juice next time.

I spent the morning training an associate on our process and had time to go to the library to see if there were any books or movies I wanted to get but found nothing. The library is now closed on Fridays due to budget cuts within the county which just sucks. I used to enjoy walking over there on Friday afternoons when it was slower at work. I didn’t enjoy sketchy homeless man following me around the library with his hands down his pants (I so wish I was making that up).I did get a chance to get on the reserve list for two books I’m looking forward to reading.

Quizno’s was for lunch today b/c I had a coupon for free chips and drink with the purchase of a regular sub. I got the Ranch Turkey and Swiss and had a bag of Baked Lay’s Barbeque Chips. When is someone going to make Baked Salt N Vinegar Chips?? Waiting…..

I walked over to Harris Teeter this afternoon and picked up some spinach, bananas, oranges, kiwis, carrots and Kashi Bars.

I didn’t have too busy of a day but was just beat by the time I got home. I took Lincoln for a 20 minute walk and then dinner was served. I had a BIG salad with spinach, red onions, mushrooms, carrots with Ken’s Lite Honey Mustard (which is amazing, it doesn’t taste “lite” at all)

But I had no tomatoes and a salad isn’t a salad in my book if it doesn’t include tomatoes.

I had leftover enchiladas that I made earlier this wk and a serving of Baked Tortilla Scoops

I swear, these get better the longer they sit. Thanks Aztecs for starting the trend. I love how the history says “There does not seem to be any reference to the term “enchilada” that dates back to the Aztecs.” Can you imagine a bunch of archaeologists finding ancient Aztec scripts and they mentioned enchiladas? That thought just amused me.

I got my Fitness magazine in the mail so I have something to read on the bus tomorrow!

And thank you Lord —Pay day is tomorrow! This is a pretty sweet paycheck for me since I had a lot of OT pay and am taking a $100 of that to spend on myself and get some new clothes. Since I have money readily available, I am sure I will find nothing. That’s the way the cookie crumbles.

I found out my friend Shalon who moved away from Charlotte back in February is going to be in town this wknd and that just made my day!! I was supposed to go see her this wknd but have to go into work on Saturday for hopefully a few hours to test a new system that’s launching. Sucks that I have to go in on a Saturday but I am just trying to see $$$$ and remind myself it’s time and a half pay. We are going to have dinner and drinks tomorrow and can’t wait!

Ok so all in all, pretty lame day. Nothing really interesting happened, no fun sightings, funny quips, etc. so apologies. I leave you with the random song of the day stuck in my head.

Durst Dunst

Happy Monday all! First things first—thanks for the nice wishes on my new pad. I can’t wait to move in and am soooo excited! Unfortunately, I am renting it because if I wanted to buy a house in that neighborhood it would cost a pretty penny but I am fine with that for now. I drove by yesterday to drop off my check and there is a bus stop right in front of there. And have I mentioned it is in walking distance to bars, restaurants and three coffee places? :) So yes, very excited!!! 

Today was a great day. I wasn’t covering anyone for the first day in over a week. I didn’t have any chest pains due to stress. And I got my camera back since I left it at my desk at work so let the food porn commence! 

This morning for breakfast I had strawberry Chobani greek yogurt, blueberries, blueberry flax and coconut granola. 

 

I always mix together in the break room and people tell me how good it looks. Funny since I am always staring at their bacon egg and cheese croissandwiches.  And I am not apologizing for thinking this looks good: 

 

Regardless it nice having people salivate over me something I made.
 

I had a big salad with orange and red peppers zucchini red onions shredded cheese topped with tuna and Trader Joes Feta Dressing for lunch. 

 

 

I love that fresh veggies are so cheap right now. I owe it all the hippies….which I was singing that to the tune of ” I did it all for the nookey” before b.c I’m a dork like that. Whatever happened to Fred Durst by the way?

 No? Ok my weirdness again.
One of the teams had leftover pizza today and very rarely do I meet a piece of pizza I don’t like, so I decided to help them out by taking a slice off their hands. And I was a semi good girl by choosing veggie and not the sausage slice. 

 

And then we had a organization wide mtng to announce the new manager that was hired to replace one who left. Yeah….my mngr took the role. Which sucks….hard. I’m happy for him but not happy about this since good mngrs are few and far between. His position is now open and they are taking applications. When I got back to my desk I got bombarded with ims asking me if I am going to apply for it and people urging me to do it. 

Do I want it? Career and money wise it would be a good move but I really cannot work with Stinkalicious yet manage them. I dislike Stinky so much that I am willing to take a hit on my career. And yall know how unhappy I am in my role so yeah…much dislike. I don’t wish them ill will or anything. I just don’t dig people with a bad work ethic. Example….one of my coworkers was drowning in work this afternoon. I stayed an hour past my normal time to help while Stinky left at normal time. Another example….very rarely do I take a full lunch break. Stinky takes a lunch break plus five smoke breaks (yes I count them and I can tell you what time they are taken) and then complains about not having enough time. I know this is petty crap but when I’ve had friends laid off b.c they don’t have seniority yet are hard workers but this slacker still has a job it gets my blood boiling.

For dinner I had split chicken breast and baked okra and mushrooms tossed in extra virgin olive oil, garlic salt and pepper

 


I also made pork enchiladas since I don’t eat enough Mexican food throughout the week.

I maybe got four hours of sleep last night. I was absolutely exhausted but kept tossing and turning so I would like to make it an early evening but don’t think that’s going to happen. 

I am enjoying a Skinny Cow sandwich as we speak….or as I type 

 I have been on yet another Arrested Development kick. And I am doing the Gob Chicken Dance because I am crazy and trying to scare Lincoln (he is NOT a fan)

I got the place I was looking at today! I met up with the owner this afternoon and he showed me the place and I instantly fell in love. It reminds me of a rowhome whereas when you walk in the front door, it’s a small storage room/office then the living room and then the bedroom with the kitchen in the back along with another entrance. It has hardwood floors (which I will have to train Lincoln to like since I love them), lots of windows and natural light and a side yard and backyard for Lincoln (and for me to grow veggies and herbs…..really herbs not the ghanja). And it has private parking and my neighbors are all doctors and surgeons….woot woot! There is a hospital two blocks away and it’s a convenient location for them. It may be convenient for me if one of them is single, straight and without mommy issues.

And it’s within walking distance to a number of things…..Starbucks, Caribou, Harris Teeter, Bank of America, a number of restaurants and bars and a beautiful park to take Lincoln and where I can go running. I am most excited about the convenience since I can walk to everything and there is a bus line across the street that takes me two to work. Hello convenience, it’s nice to meet you. My commute will be 15 mins top each day and it is in a younger, more alive area with easy accessibility to much more things that I have now.

 I don’t move in until July but it’s all good and I am happy to not have to look anymore. I just have to fill out the application and drop off tomorrow along with a security deposit. YAY for a new home :)

I started my day off with a bowl of Chobani Greek Yogurt, a smashed banana and Kashi Go Lean Cereal.

My friend and I went to Bark in the Park this morning and it was great. It started at 10A but we arrived at 945A and thinks were rocking. I got so much free stuff it’s sick!!! Four bottles of dog shampoo, over 20 kinds of treats and food samples, dog bowls, key chains and more! Plus Food Lion was sponsoring and got some reusable shopping bags-yay for green!

I came back home and had a quick bite to eat before heading out to see the house. I drove back just in time because it started downpouring and hasn’t stopped yet. I wanted to go out and celebrate but I just didn’t want to mess with the rain tonight. Besides I have a date with George Clooney.

And made an awesome dinner of split chicken breast, okra and a sweet potato.

A great end to a great day!
